ENGLISH TOFFEE APPLE BREAD AND BUTTER PUDDING



English Toffee Apple Bread and Butter Pudding image

Just in time for autumn and Halloween - this delicious pudding is a real winner, with the subtle taste of toffee and apples all cooked together in a bread and butter pudding! I found this recipe in a cookery leaflet promoting English apples, and it is now one of our favourite puddings for the cooler months. I have given a variety of breads/yeast cakes to use; although I have made this with all of the choices on offer, my favourite still remains the brioche - I am sure croissants would work very well too.

6 ounces unsalted butter
6 tablespoons golden syrup
6 ounces dark muscovado sugar
4 apples, peeled, cored and cut into small pieces
2 eggs, beaten
7 ounces milk
7 ounces double cream
1 lb sliced white bread, crusts removed or 1 lb panettone, cut into thick slices

Steps:

  • Preheat the oven to 190 C (gas mark 5, 375 F).
  • Melt the butter in a pan with the golden syrup and muscovado sugar. Let it bubble for 5 to 10 minutes, stirring all the time. Add the apple pieces and cook for a further 5 to 10 minutes more, until softened.
  • In a bowl, mix together the beaten eggs, milk and cream. Cut the brioche, bread or panettone slices into strips (like bread "soldiers") and dip each one in the egg, milk and cream mixture.
  • Arrange half of them in a 1.2 litre (2 pint) buttered ovenproof dish, then pour over half the apple mixture.
  • Repeat with the remaining brioche, bread or panettone strips and apple mixture.
  • Bake for 20 to 30 minutes until the top is golden and the pudding is puffed up and bubbling.
  • Leave to rest in a low oven until ready to serve.
  • Serve in slices with cream or custard.

10 slices bread
1 ¼ cups milk
¼ cup butter, melted
⅓ cup brown sugar
2 teaspoons mixed spice
1 egg, beaten
1 cup chopped dried mixed fruit
1 ½ teaspoons grated orange zest
½ teaspoon freshly grated nutmeg

Steps:

  • Cut the crusts from the bread, tear bread into pieces, place in a bowl and cover with milk. Let rest 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 1 1/2 quart baking dish.
  • Beat melted butter, sugar, mixed spice and egg together until smooth. Combine with soaked bread and milk. Stir in dried fruit and orange zest. Pour into prepared dish and sprinkle with nutmeg
  • Bake in the preheated oven for 45 minutes, or until set.

ENGLISH -STYLE BREAD PUDDING

This is an ultra rich version on the classic English dessert. Make certain to use day-old bread for this. I used dark raisins and soaked them in a bit of cognac for this recipe, which really kicked the taste way! Although the recipe does not say to add in cinnamon, I sprinkled some on top of the bread layers, but this is only optional.

1 1/2 cups full-fat milk (or half and half cream)
1 1/2 cups whipping cream
2 teaspoons vanilla
8 large egg yolks
1 cup sugar (or to taste)
1/4 cup butter, softened (no subs)
1 loaf white bread (1 pound loaf, sliced into about 1/2-inch, crusts removed, use day-old bread)
1 cup raisins (can use more or less)

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Prepare a 9-inch baking dish.
  • For the cream custard: combine the milk and whipping cream in a large heavy-bottomed saucepan; bring to a simmer; remove from heat.
  • In a bowl whisk together vanilla, egg yolks and 1 cup sugar (can use less sugar if desired) and blend well.
  • Gradually whisk in hot cream mixture into yolk mixture until well combined; set aside.
  • Spread 1/4 cup soft butter on bottom and sides of baking dish.
  • Arrange about 1/3 of the bread slices in a single layer over bottom of prepared dish (trimming to fit).
  • Sprinkle half of the raisins over bread.
  • Cover with another single layer of bread slices.
  • Sprinkle the remaining raisins over the bread.
  • Layer with remaining bread slices (you should have three layers of bread with 2 layers of raisins).
  • Pour the cream custard over the bread and let stand for about 5 minutes until custard is absorbed (about 5-6 minutes).
  • Position rack to second-lowest position.
  • Bake for about 20 minutes, or until custard thickens and begins to set.
  • Remove from oven and set to broil.
  • Sprinkle 2 tablespoons sugar over hot pudding.
  • Place under broiler heat for 2 minutes, or until sugar browns (rotating dish for even browning, watch closely as sugar will burn).
  • Serve warm.

16 slice day old, firm textered white bread
2 1/4 c milk
1 pkg mixed dried fruits or mix of dried apricots, cranberries & raisins
1/2 c chopped nuts (walnuts or pecans)
1 medium apple, cored, peeled and chopped into pieces
1/4 c melted butter
1/3 c brown sugar
1 egg slightly beaten
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves (optional)

Steps:

  • 1. Tear bread into 1" pieces. Place in a well greased crock pot or baking dish. Pour milk over the bread and let soak for 30 mins.
  • 2. Stir in dried fruits, nuts and apple pieces.
  • 3. Combine melted butter, brown sugar, egg and spices in a small bowl. Pour over the bread & fruit mixture. Stir to blend.
  • 4. Cover and cook on low for 3-4 hours in the crock pot or 300 degrees for 2-3 hours. Just watch and check periodically.

1 ounce salt pork, minced

1/4 teaspoon dried summer savory

2 tablespoons butter
1 cup thinly sliced leeks, white and light green parts
1/3 cup chopped dried pear halves, preferably unsulfured
1/4 cup water
3 large eggs
2 cups milk
4 cups cubed day-old baguette or other artisanal country-style bread with crust (1-inch cubes)
1 teaspoon kosher salt
3/4 teaspoon freshly ground black or white pepper

Steps:

  • To make the sausage, place all the ingredients except the salt in a medium bowl, and knead with your hands until thoroughly blended. Cook and taste a small sample, then add salt if needed. Use right away, or cover and refrigerate for up to 2 days.
  • To make the pudding, preheat the oven to 350°F. Lightly butter a 3-quart baking dish.
  • In a medium sauté pan, melt the butter over medium-high heat. Add the leeks and pears and stir to mix. Add the water, decrease the heat, and cook gently until the leeks wilt but remain bright green, 3 to 5 minutes. Remove from the heat and let cool slightly.
  • In a large bowl, whisk together the eggs and milk. Add the bread, leek-pear mixture, salt, and pepper, and then add the sausage, breaking it into small clumps. Stir to mix and pour into the prepared dish.
  • Bake until toasted on the top and a knife inserted in the center comes out clean, 50 to 55 minutes. Let rest for at least 10 minutes or up to 30 minutes before serving. Serve warm.
