SUN-DRIED TOMATO AND PEAS ON ENDIVE SPEARS



Sun-dried Tomato and Peas on Endive Spears image

1 pound frozen peas, thawed
8 ounces sun-dried tomatoes, drained (about 3/4 cup)
2 cloves garlic, chopped
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 heads endive, ends trimmed and leaves separated

Steps:

  • Combine the peas, sun-dried tomatoes, and garlic in a food processor. Pulse the machine until the peas and tomatoes are finely chopped. Add the olive oil and pulse until the olive oil is incorporated and the mixture is minced but not yet pureed. Transfer to a small bowl and stir in the salt and pepper.
  • Serve as a dip with the endive spears alongside.

3 cups all-purpose flour, plus more as needed
1 1/2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup vegetable shortening
2 tablespoons pickle juice, optional
2 pounds ground beef
6 sprigs fresh parsley, minced
2 green onions, sliced
2 small tomatoes, chopped
1 large clove garlic, minced
1 small onion, diced
1 hot pepper, diced
1 small sweet pepper, diced
1/2 small bell pepper (any color), diced
2 tablespoons thyme
1 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1/3 cup tomato paste
Vegetable oil, for frying

Steps:

  • For the dough: Combine flour, sugar, baking powder, salt and vegetable shortening together in a bowl using your hands or a pastry blender. Add up to 1 cup water, a little at a time, until dough pulls away from the bowl. Let dough rest in the refrigerator for at least 15 minutes or up to overnight (see Cook's Note).
  • For the filling: Meanwhile, add pickle juice, if using, to a 6-quart pot on medium-high heat. Add ground beef. Cook, using a wooden spoon or spatula to crumble ground beef until fine. As meat is browning, add parsley, green onions, tomatoes, garlic, onions, hot pepper, sweet pepper, bell pepper, thyme, salt and black pepper. Cook until all meat is brown, approximately 5 minutes.
  • Remove meat mixture to a colander to drain excess oil. Let sit approximately 5 minutes.
  • Return pot to medium heat. Add tomato paste and 1/4 cup water. Stir to thin tomato paste. Add drained meat mixture back to the pot. Mix in tomato paste mixture. Reduce heat to low and let simmer for 5 minutes. Remove from heat, and let cool until meat is room temperature.
  • Heat oil to 350 degrees F in a 6-quart cast-iron Dutch oven.
  • Cut a 2 1/2-inch piece of dough from the rested dough. Flatten into an approximate 3 1/2-inch disc using your fingers. On a lightly floured surface, use a rolling pin to flatten the dough to 1/8- to 3/16-inch-thick by 7 inches in diameter.
  • Fill the dough with 1/3 cup to 1/2 cup filling. Fold over and press with a 6-inch bowl or empanada press to seal the edges. Dust off excess flour, and gently place in the hot oil. Wait for pate to rise to the top of the oil, then flip it over. Let cook for about 1 minute, then flip again.
  • Continue cooking and flipping every minute until the pate is golden brown on both sides, 5 to 6 minutes. Remove from oil and drain on a paper towel on a cooling rack. Repeat with remaining dough and filling.

3 (8-ounce) cans of pitted black olives, drained
3/4 cup sun-dried tomatoes packed in olive oil
Extra-virgin olive oil
3 heads endive (about 1/2 pound)

Steps:

  • In the bowl of a food processor, add the olives, sun-dried tomatoes and the olive oil it was packed in. Pulse until smooth, but still chunky. Add more extra-virgin olive oil if mixture is too dry. Spoon into a serving bowl. If not serving immediately, cover tightly with plastic wrap and refrigerate up to 2 days. Be sure to bring it to room temperature and to mix it thoroughly before serving.
  • Gently pull off the leaves from the endive, being carefully not to tear the leaves. Wash thoroughly with cold water and dry completely.
  • Place the bowl of tapenade in the center of a large platter. Decoratively circle the tapenade bowl with the endive leaves working your way to the rim of the platter.

HOMEMADE SUN-DRIED TOMATO PASTE



Homemade Sun-dried Tomato Paste image

This is a wonderful paste that enhances many preparations. Small jars of puree can cost quite a lot and pureeing small amounts yourself is not practical. Instead, purchase a large jar of sun-dried tomatoes and make a big batch. You can add a TBS or two of this to purchased spaghetti or pizza sauce, or smear it as it is on pizza crusts. It's also great on sandwiches, chicken and eggs. It also freezes well. I freeze mine on cookie sheets in dollops, then when frozen drop into a zip lock baggie. That way I can take out and use what I want, when I want.

1 (28 ounce) jar sun-dried tomatoes packed in oil, drained
10 cloves garlic
1/2-1 cup olive oil
salt & freshly ground black pepper

Steps:

  • Put the tomatoes in a medium bowl.
  • Add some very hot water to cover.
  • Stir for a few minutes, then drain.
  • (this softens the tomatoes and gets rid of some of the packing oil).
  • In a food processor, combine the tomatoes, garlic, olive oil and seasonings.
  • Puree until smooth.
  • Refrigerate for up to 2 weeks.
