SIMPLE PERFECT ENCHILADAS
For a bit of Mexican comfort at home, make Ree Drummond's Simple Perfect Enchiladas recipe from Food Network. Canned enchilada sauce saves you time and energy.

- For the sauce: In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
- For the meat: In a large skillet over medium-high heat, add the oil. Brown the ground beef with the onions. Drain the fat, and then add the green chiles. Add the salt and stir to combine. Turn off the heat and set aside.
- For the rest: In a small skillet over medium heat, lightly fry the tortillas in canola oil just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
- Preheat the oven to 350 degrees F.
- Spread 1/2 cup of the sauce in the bottom of a 9 by 13-inch baking dish. Dip each tortilla into the sauce. Set the sauce-soaked tortillas on a cookie sheet. Onto each tortilla, place some of the meat mixture, black olives and green onions. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
- Place the tortilla seam-side down in the baking dish. Repeat with the rest of the tortillas. Stir the cilantro into the sauce and ladle a little sauce over the top. End with a generous sprinkling of cheese.
- Bake the enchiladas until bubbly, about 20 minutes. Sprinkle extra chopped cilantro over the top. Serve with beans and/or rice.

- 1. Fill a larger saucepan with about 1 1/2 inches of water. Add the chicken strips to the pan and cover. Cook over medium heat until done, checking occasionally to add a tiny bit of water, if it is all dried up before the chicken is done. Keep the water very low tho' as to ensure that the chicken is roasted, not boiled. The chicken will be white and falling apart, with some crispy brown pieces on it and the bottom of the pan. Shred the chicken in the saucepan, scraping the bottom of the pan as much as possible.
- 2. Saute the onions and garlic in the olive oil, in the bottom of a the same sauce pan, continueing to scrape the bottom of the pan. Add the chicken back in the saucepan and stir it up well.
- 3. In a separate sauce pan, pour in the soup, sour cream chilis and milk. Stir constantly as you heat well. Add 1 cup of grated cheese. Stir until melted. Add 2 cups of this sauce to the meat mixture, and mix well.
- 4. Spray the bottom and sides of a 9-13 inch baking dish with vegetable spray. Pour some of the soup mixture into the pan, spread evenly all over the bottom...just barely. Preheat the oven now, to 350 degrees.
- 5. Take one tortilla at a time, and immerse it in the sauce. Set partway in the baking dish, and ladle the chicken into the tortilla, spreading out a strip of filling just right or left of the center from one side to the other. Sprinkle cheese over the filling. Roll up the tortilla and push it to the end of the baking dish. Repeat with each tortilla, squeezing them all into the same baking dish. Pour remaining sauce onto the enchiladas and top with remaining cheese.
- 6. Bake for about 15-20 minutes or until good and hot. Garnish with a dollop of salsa, a dollop of sour cream and sliced black olives (optional). Remove each tortilla carefully from the pan, so as not to tear them up! Enjoy!
CHICKEN ENCHILADAS A LA CREMA
A light sour cream sauce over chicken stuffed tortillas!

- In sauce pan over medium high heat, add all ingredients for chicken. Cook for 20 minutes. Remove chicken to a cutting board and shred or chop.
- Preheat oven to 400degF.
- In another sauce pan over medium heat, add butter, garlic powder, and cumin. Once melted, whisk in flour and cook for 2 minutes. Then add chicken broth and cook for 2 minutes. Next whisk in sour cream. Once combined, add jalapenos and cook for 5 minutes, stirring occasionally.
- Ladle a thin layer of sauce into a 13x9 baking dish. Fill each tortilla with a portion of the cooked chicken and roll it up. Line tortillas up in the baking dish. Poor remaining sauce evenly over top of tortillas. Sprinkle with cheese. Bake in oven for 20 minutes. Sprinkle with scallions as soon as you remove from oven. Let sit at least 5 minutes before serving.
ENCHILADAS CON CREMA DE CHILE

- Sauce:.
- Wrap garlic cloves in foil. Add chiles and garlic into oven and set to broil. Roast the peppers for about 7 minutes, turn then roast an additional 7 minutes or until the skins blister. Watch carefully so they do not burn.
- Cover roasted chiles with cloth or place in a paper bag. Allow them to sweat for about 15 minutes. (While waiting chop up ingredients for enchiladas).
- Peel the chiles then remove the seeds and slice. Dice garlic. Melt butter in saucepan over medium heat add garlic and sauté for about 3 minutes, add peas, roasted chiles, tofutti and veggie granules and mix for 3 minutes.
- Stir in the soymilk and let it simmer for 5 minutes.
- Allow to cool for a bit then place mixture in a blender to puree or use emulsion blender. Add salt to taste.
- Enchiladas:.
- Mix diced avocados and ¼ of the diced onion in a bowl. Add salt to taste and refrigerate for later.
- In a skillet sauté the remaining diced onion with olive oil until transparent, add in bell peppers, tomato and meat substitute sauté for another 5 or 6 minutes.
- Add in ½ cup of sauce and let it simmer for 3 minutes.
- Heat canola oil in a small skillet. Add 1/2 cup of sauce in a bowl. Using tongs dip tortilla into hot oil and then drop into bowl with sauce. Repeat this until all tortillas are in the bowl with sauce.
- Assembly:.
- Add 1 spoonful of avocado mix and 2 spoonfuls of sautéed mixture, and then roll. Once done wrapping all enchiladas cover them with remaining sauce.
- Garnish with green onions, cilantro, minced bell pepeprs or whatever you have - Enjoy!

MEXICAN BRUNCH ENCHILADAS WITH CREAMY CHEESE SAUCE
If you want a spicy cheese sauce add in some cayenne pepper. I used the small pork breakfast sausages for this but really any kind will do, with the small sausages there is no need to remove the casings just crumble as you are cooking them, you will have to remove the casings if you are using the larger sausages. This recipe is also great for a dinner! The sauce from this recipe is wonderful, so you might want to consider using the sauce recipe alone for other recipe!

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- For the cheese sauce; melt butter in a heavy-bottomed saucepan over medium-low heat.
- Add in flour; whisk constantly for about 1 minute.
- Slowly add in the half and half cream; cook over medium heat whisking for about 5 minutes or until thickened; remove from heat.
- Add in the shredded cheese and chiles; mix until the cheese is melted and smooth.
- Season with salt and pepper if desired.
- For the enchiladas; cook the sausage in a large skillet crumbling with a spoon until cooked; remove the meat to a plate and drain fat.
- Melt butter in the skillet, add in the green onions; saute for 1 minute.
- In a bowl whisk the eggs with whipping cream then season with salt and pepper; add into the skillet that has the green onions in it; cook eggs without stirring until set on the bottom, then continue to cook stirring gently until the eggs are cooked but still moist; remove from heat and gently fold in the 1-1/2 cups shredded cheddar and the cooked sausage.
- Spoon about 1/3-cup of the egg mixture down the middle of each flour tortilla; roll and place seam side down into prepared baking dish.
- Pour the prepared cheese sauce evenly over the tortillas.
- Bake covered for about 25 minutes.
- Remove from oven and sprinkle with more shredded cheddar; return to oven and bake another 8 minutes, or until the casserole is hot and the cheese has melted (you can also bake it uncovered with the cheese added on top for 30 minutes, but I find that the cheese becomes too hard).
- Delicious!
