Time 1h30m

Number Of Ingredients 18

1 tablespoon olive oil
1 tablespoon butter
1 small onion, finely chopped
2 garlic cloves, minced
2 tomatoes, chopped
21 ounces (1 1/2 cans) hearts of palm, diced
1/3 cups chopped green olives
1 tablespoon flour (or cornstarch)
1/3 cup milk
4 ounces cream cheese, softened
Salt and pepper, to taste
1/3 cup chopped parsley
2 cups flour
1 teaspoon salt
10 tablespoons butter, softened
1 large egg
1 egg yolk
Egg wash for brushing the hand pies

Steps:

  • In a large bowl, combine the flour and salt. Add the butter and, using your fingertips, work it into the flour until the mixture resembles coarse sand.
  • Add the egg and egg yolk and mix with your hands until the dough comes together. Do not overwork the dough as we do not want to develop gluten. If needed, you can add a little bit of cold water, about a teaspoon at a time.
  • Wrap your dough in plastic and refrigerate for 40 minutes.
  • Heat the olive oil and butter in a large skillet, over medium heat. Add the onions and garlic and sauté until softened and fragrant, about 2 minutes.
  • Add the tomatoes and cook until they soften, 2-3 minutes.
  • Add the hearts of palm and olives and mix to combine.
  • Stir in the flour, cooking for about a minute to get rid of the raw flour taste. Then, add the milk and cream cheese, stirring until the cream cheese melts and the mixture is thick and creamy, about 5 minutes. Season with salt and pepper.
  • Add the chopped parsley and reserve until cooled to room temperature so you can assemble the hand pies.
  • Preheat oven to 350 degrees F.
  • Using your hands, cut a small portion of the dough (about 2 tablespoons) and press it into the bottom of an egg tart mold, making sure there is a little extra hanging off the edges.
  • Using a spoon, top the bottom crust with as much filling as you can fit. I pile it up high as I like my empadinhas very plump.
  • Grab another portion of dough and press it into a disk. Place the disk on top of the assembled pie, pinching to seal edges together. You can then run your fingers across the circumference of the mold to "cut" the excess dough.
  • Repeat with the remaining dough and filling, forming about 10 small hand pies. Place them on a baking sheet.
  • Brush the pies with egg wash and bake for 45-50 minutes or until golden brown.
  • Serve warm or at room temperature.

BRAZILIAN CHICKEN POT PIE (EMPADãO DE FRANGO)

Brazilian Chicken Pot Pie (Empadão de Frango) image

Provided by Olivia's Cuisine

Time 1h25m

Number Of Ingredients 21

2 tablespoons olive oil
2 medium onions, finely chopped
2 garlic cloves, minced
2 tomatoes, chopped
2 pounds chicken breast, cooked and shredded
1/2 cup chopped green olives
1 cup corn (optional)
1 cup green peas (optional)
1 cup hearts of palm, chopped (optional)
1 cup tomato sauce
A couple dashes of hot sauce
2 cups chicken broth
1 tablespoon flour dissolved in 1/3 cup milk
1/2 cup chopped parsley
Salt and pepper to taste
5 cups flour
1 teaspoon salt
3 egg yolks
1/4 cup to 1/2 cup cold water
3 sticks butter (12 ounces), cut into smaller pieces
1 egg yolk, lightly beaten, for brushing

Steps:

  • In a large sauté pan, over medium heat, add the olive oil and, once hot, sauté the onions and garlic until translucent, about 2 minutes.
  • Add the tomatoes and cook them with the onions and garlic for a couple of minutes, until softened.
  • Add the shredded chicken, olives, corn (if using), peas (if using), hearts of palm (if using), tomato sauce, hot sauce and stir to combine. Then, add the chicken broth and the flour dissolved in milk. Lower the heat to medium low and cook, stirring often, until most of the liquid is gone and the filling is creamy and lightly thickened, about 10 minutes.
  • Add the chopped parsley and stir to incorporate.
  • Taste for seasoning and season with salt and pepper to taste.
  • Cool completely before assembling the pie.
  • Combine the flour and the salt in a large bowl.
  • Add the egg yolks and stir using a wooden spoon.
  • Then add the butter and use your fingers to work the butter into the flour, until the mixture resembles coarse sand. Add the water, a few tablespoons of a time, and continue working with your fingers until the dough comes together. You might not need all the water!
  • Wrap the dough and chill for 20 minutes.
  • Preheat oven to 350F degrees.
  • When the dough is chill, cut 1/3 of the dough and reserve. Roll out the remaining dough to about 12" round. Place the pastry in a 9-inch spring form pan, making sure the dough also covers the sides (since we have lots of filling!), and prick it all over with a fork.
  • Add the cold filling, smoothing it out so its evenly distributed.
  • Then, roll out the remaining dough and place it on top of the filling, sealing the pie and tucking the edges.
  • Using a knife, make two cuts in the center of the top crust, so that steam can escape while baking.
  • Brush the pie with the lightly beaten egg yolk.
  • Bake in the preheated oven for 25 to 35 minutes or until golden brown and the filling piping hot.
  • Remove from oven and allow to cool slightly before serving.

EMPADAS DE GALINHA - CHICKEN PIES

Empadas De Galinha - Chicken Pies image

A recipe from the book Traditional Portugese Cooking, which I bought in Lisbon. I have not tried this but am posting it by request. Appologies for the vague directions but they are all I can offer as the book is not precise. I think some details were lost in translation! Servings and cooking time are guesses on my part. I can however offer this from someone who has made the recipe and liked it: "I've grated my onions and my carrots before cooking them. I haven't used muffin pans, but rolled the pastry into circles, put some filling in the center and put another circle on top and pressing the edges together. I've alse painted the tops with a little milk for a browner appearance."

Yield 12 pieces, 4-6 serving(s)

Number Of Ingredients 13

cooking oil, for frying
1 1/2 kg chicken cutlets
1 -2 cup water
1 small onion, chopped
2 garlic cloves, minced
salt and pepper
1 cup breadcrumbs, or as needed
1 cup rice flour
2 1/2 cups milk
1/2 cup butter
3 egg yolks
1/4 teaspoon chili sauce
chili salsa (optional if you want it hot or not)

Steps:

  • Heat cooking oil on a pan and when hot enough, add and brown the chicken at both sides.
  • Add 1-2 cups of water enough to boil chicken for 20 mins or until tender. Don't forget to cover it. Drain and set aside liquid.
  • When chicken is cool enough, separate the meat from the bones. Cut the breast into12 long strips and set aside.
  • Mince the rest of the meat and combine with onion, cloves, salt and pepper. You can use a food processor to make the mincing and mixing quick just by pulsing it. Set aside. You can also set aside the thin bones to serve as a sticks for the chicken later on.
  • For the dough: mix rice flour with milk, add enough chicken juices that was set aside to make a firm dough. Then, add butter and egg yolks to soften it. Add and mix the minced chicken. Add chili sauce and mix.
  • Divide dough in 12 equal parts. Flatten it a bit with palm, add a piece of chicken breast from near the edge. Roll to cover then shape it like a bulb or teardrop with a tapered end. You can push in the thin bones at the thin part of the shaped dough so they looks like chicken drumsticks.
  • Roll in breadcrumbs and fry in hot oil until golden brown putting it on strainer or napkins to help drain excess oil.
  • Serve with chili salsa.

BRAZILIAN STYLE CHICKEN POT PIE.(EMPADAO DE FRANGO) RECIPE - (4/5)

Brazilian style chicken pot pie.(Empadao de Frango) Recipe - (4/5) image

Provided by Mom_s

Number Of Ingredients 24

Ingredients for dough:
3 sticks of butter at room temperature
3 1/2 cups all-purpose flour, plus 1 cup for top
2 egg yolks
1 teaspoon baking powder
1/2 teaspoon salt
Ingredients for filling:
1 1/2 pound bone-in chicken breast
1 pound bone-in chicken thighs
5 to 6 cups of water
1 large garlic clove, roughly chopped
2 bay leaves
Salt
2 tablespoons canola oil
1 medium onion, finely chopped
3 rosemary sprigs, chopped
3 tablespoons corn starch
4 tablespoons tomato paste
Freshly ground black pepper
1 cup frozen sweet corn (optional)*
1 cup frozen sweet peas (optional)*
1 cup black olives, chopped (optional)*
1 cup hearts- of-palm (optional)*
1 cup scallions, chopped

Steps:

  • Filling - Add chicken breast and chicken thighs to a large pan; cover with the water and add the garlic, and bay leaves. Season with salt and bring to a boil. Reduce heat to medium and cook partially covered until the chicken is cooked through, about 1 hour. Remove chicken from pan and let it cool down completely. Strain the broth and save it; you should have about 4 cups of broth left. Discard any skin and bones from chicken; shred into small pieces. Do not use a food processor. In a large sauce pan, heat the canola oil. Add the onion and cook until translucent, 3 minutes. Add the rosemary and chicken and cook for about 4 minutes, stirring occasionally. Add 3 cups of the reserved broth to the pan. Dissolve the corn starch in the remaining cup of broth. Reduce heat to medium and slowly add the corn starch to the pan, constantly stirring. Add the tomato paste and cook for about 3 more minutes, stirring. Season with black pepper. Turn off the heat and fold in the frozen corn, peas, olives, and hearts-of-palm. Finish with scallions and add more salt if necessary. Directions: Dough - Place butter, all-purpose flour, egg yolks, baking powder, and salt in a bowl and mix it well until all ingredients are well-incorporated. Do not knead the dough; it is not supposed to be really smooth. Cover and let it rest for 30 minutes. Cover the bottom and sides of a 10-inch cheesecake pan. Start pressing the dough on the bottom slowly moving it up and to the sides. Press the dough until really thin, about 1/8-inch thick. Remove the excess and save it. Make tiny holes all over the surface with the help of a fork Pre-heat oven to 375 degrees F. Slowly add 1/2 or up to 1 cup of all-purpose flour to the remaining dough and crumble it. The more flour you add the less moist the top will become, so it depends on personal preference. Place chicken filling in the pan, leaving about 3/4-inch room on top. Cover it with the dough crumbles and bake for about 40 minutes, until the top is golden brown. Remove from oven and let it cool down for 10 minutes before serving. Serve it warm or at room temperature. For convection oven bake at 350 degrees F for about 20 minutes, or until the top is golden brown.
