EMERALD CITY SALAD

2 1/4 c water or stock
1 Tb butter
1 tsp sea salt
1 cup wild rice (black)
1/4 cup lemon juice
1/4 cup olive oil
1 clove garlic, minced
1/2 cup chopped fennel bulb, core removed
1/2 red or yellow bell pepper, chopped
1/2 cup red cabbage, chopped
1/2 cup flat leaf parsley, chopped
2 cups finely chopped dark leafy greens, kale, chard, collard
salt and pepper to taste

Steps:

  • Bring water or stock to a boil, add butter, 1/2 tsp salt and rice. Bring back to a boil, cover, lower heat and simmer 60-65 minutes or until all liquid is absorbed. While rice is cooking, in a large serving bowl, combine lemon juice, olive oil, garlic, and remaining 1/2 tsp salt. Add fennel, bell pepper, red cabbage, parsley and then the greens. Once rice is fully cooked, cool until it no longer is steaming, but is still warm, and then spread it like a blanket over the greens. When the rice cools to room temperature, toss the rice with the vegetables and dressing. Taste and adjust seasonings, add more salt or lemon juice if desired.

1 cup uncooked wild rice
1/2 cup olive oil
1/2 cup lemon juice
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon black pepper
1/2 bunch kale
1/2 bunch swiss chard (or spinach)
1/2 diced red bell pepper
1/2 diced yellow bell pepper
1/2 thinly sliced fennel bulb
1 bunch green onion, chopped
1/2 cup chopped parsley
toasted almonds (optional) or walnuts (optional)

Steps:

  • Bring 3 cups of water to a boil. Salt the water (if desired) and add rice. Bring back to a boil, cover, reduce heat to simmer and cook for 60 to 65 minutes. When the water is absorbed, remove from heat and let cool.
  • Meanwhile, make the dressing by whisking together olive oil, lemon juice, garlic, salt and pepper. When the rice is cool, toss with dressing.
  • Remove tough stems and ribs from greens and chiffonade. Combine with peppers, fennel and green onion. Just before serving, toss veggies with dressed rice.

1/2 loaf sliced rustic bread
2 tablespoons pesto
1 pint cherry tomatoes, halved
8 ounces cheese curds (recommended: Mt. Townsend)
1/2 cup mixed greens (basil, arugula, watercress, herbs)
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 small shallot
1 clove garlic
1/2 teaspoon chopped fresh thyme leaves
1/2 teaspoon chopped fresh marjoram leaves
1/2 teaspoon fresh oregano
1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat a grill to medium.
  • Brush the sliced bread with pesto and grill until slightly charred. Remove the bread from the grill, cut it into 1-inch cubes and add it to a serving bowl. Gently stir in the tomatoes, cheese curds, and the mixed greens.
  • Vinaigrette: Add the vinegar, mustard, shallot, garlic, thyme, marjoram, oregano, olive oil and salt and pepper, to taste, to a food processor. Pulse to combine. Pour the vinaigrette over the salad let it soak into the bread for 20 minutes before serving.

Emerald City Artichoke Olive Oil Cake with Kiwi Filling and Whipped Cream Frosting image

About 2 cups canned artichokes
4 large eggs, at room temperature
2 cups sugar
1 1/3 cups extra-virgin olive oil
1 tablespoon lemon zest
1/2 teaspoon lemon bakery emulsion
2 2/3 cups all-purpose flour
1 1/3 teaspoons fine salt
3/4 teaspoon baking powder
3/4 teaspoon baking soda
3 large kiwis, peeled
1/2 cup sugar
2 tablespoons instant pectin
2 cups sugar
8 egg whites
2 cups (4 sticks) chilled unsalted butter
1 teaspoon vanilla bean paste

Steps:

  • Preheat the oven to 350 degrees F. Line cupcake pans with cupcake liners (for a total of 28 cupcakes).
  • For the artichoke cake batter: In a food processor, puree the artichokes. Measure out the artichoke puree--you should have about 1 1/3 cups; if not, process more artichokes until you have 1 1/3 cups total. Put the artichokes back in the food processor, add the eggs and process until smooth.
  • Add the artichoke mixture, sugar, olive oil, lemon zest and lemon emulsion to a large bowl and mix for 1 minute until well blended. Mix in the flour, salt, baking powder and baking soda until well blended and smooth.
  • Fill the cupcake liners about two-thirds full with the batter. Bake until an inserted toothpick comes out clean, 16 to 19 minutes. Allow the cupcakes to cool completely before frosting.
  • For the kiwi filling: Put the kiwis in a food processor and pulse until there are still small chunks and the mixture is not completely smooth. Transfer to a bowl, mix in the sugar and instant pectin with a whisk and continue mixing for 3 minutes. Refrigerate until thickened, about 30 minutes.
  • For the frosting: Whisk the sugar and egg whites in a double boiler until the mixture is slippery. In an electric mixer, beat the sugar mixture on high until stiff peaks form, about 5 minutes. Mix in the butter one tablespoon at a time until fully incorporated. Mix in the vanilla bean paste.
  • Use a cupcake corer to remove the centers of the cupcakes. Using a spoon or piping bag, fill the center of each cupcake with some kiwi filling. Using a piping bag, pipe some frosting onto each cupcake.

2 oz. white cranberry juice
2 oz. Midori melon liqueur
Juice of half a lime (freshly squeezed and strained)
Splash Blue Curacao (for color)
Cocktail cherries (for garnish)
Ice

Steps:

  • Fill a mixing glass with ice. Pour over vodka, white cranberry juice, lime, and Midori. Add just enough Blue Curacao to turn the drink a deep, vibrant emerald green. Shake until icy cold. Place a cocktail cherry in the bowl of two cocktail glasses. Strain into glasses and serve.
