The downfall of most baked chicken breast recipes is the long time in the oven that dries out the lean meat before it can fully cook through. We've solved that problem with a couple of secret weapons. The first is white wine added to the baking dish, which creates steam. (While we think it's worth using wine, you could substitute stock or even water.) The second is a piece of parchment paper placed directly on top of the chicken to lock in the moisture during baking. The result is the best boneless, skinless chicken breasts that are plump and juicy, with a minimum of hands-on time. A bunch of parsley and lemon slices infuse the dish with fresh flavor and the seasoning is neutral enough that the chicken can be used for a variety of different meals. Serve it alongside vegetables and grains, shredded into soup, spiced up for tacos or chopped on top of salad. Feel free to switch up the herbs and citrus if you have leftovers in the fridge to use up.

1 small bunch parsley
1 lemon, sliced 1/4 inch thick
1 cup dry white wine, such as Sauvignon Blanc
Four 6-ounce boneless, skinless chicken breasts
1 tablespoon olive oil
1/4 teaspoon paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the parsley in the center of a 9-by-13-inch baking dish and top with the lemon slices. Pour the wine around the parsley. Brush the tops of the chicken with the olive oil and season with the paprika, 1 teaspoon salt and a few grinds of black pepper. Arrange the chicken breasts on top of the lemon slices. Cut an 8-by-10-inch piece of parchment and place it on top of the chicken.
  • Bake until the chicken registers 165 degrees F on a digital thermometer, 40 to 45 minutes. Let sit for 5 minutes before serving. The chicken can be refrigerated in an airtight container for up to 5 days.

2 whole boneless skinless chicken breasts, halved
2 garlic cloves, finely sliced
1/4 cup whole wheat flour
1/4 cup fat free butter substitute
4 slices low-fat ham, deli sliced, very thin
1/2 cup sharp cheddar cheese, coarsely shredded
1/4 cup green onion, thinly chopped
4 black olives, sliced thin
1/2 cup sweet white wine
1 teaspoon italian seasoning
1/3 cup skim milk
1/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne

Steps:

  • Slice chicken breasts in half and roll in whole wheat flour. Lightly brown in butter substitute.
  • Place in a baking dish and cover with sliced ham and cheese. Set aside.
  • Saute onion and garlic until clear, add olives, herbs, and wine.
  • Bring to a boil and cook for approximately 8 minutes.
  • Add in 1 tablespoon of remaining flour [from breading the chicken] and stir until completely disolved. Add milk. Stir until thoroughly blended.
  • Ladle over chicken and bake at 375°F for approximately 20-25 minutes.

4 (6 ounce) skinless, boneless chicken breast halves
¼ teaspoon salt
¼ teaspoon lemon pepper seasoning
1 tablespoon vegetable oil
8 strips bacon
1 onion, sliced
¼ cup packed brown sugar
½ cup shredded Colby-Monterey Jack cheese

Steps:

  • Sprinkle chicken with salt and lemon-pepper.
  • Heat oil in a large skillet over medium heat; cook the chicken breasts in hot oil until no longer pink in the center and the juices run clear, 13 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove and keep warm.
  • Place bacon in large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve 2 tablespoons drippings. Cook and stir onion and brown sugar in reserved drippings until onion is golden, about 5 minutes.

4 skinless, boneless chicken breast halves
2 tablespoons olive oil
1 tablespoon coarse sea salt
1 pinch Creole seasoning (such as Tony Chachere's®), or to taste
1 tablespoon water, or as needed

Steps:

  • Preheat convection oven to 400 degrees F (200 degrees C).
  • Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.

4 -6 large boneless skinless chicken breasts
garlic powder
salt
pepper
1 (10 3/4 ounce) can cream of mushroom soup
0.5 (10 3/4 ounce) can cream of chicken soup
1 (1 ounce) envelope Lipton Onion Soup Mix
2 tablespoons butter or 2 tablespoons margarine
1 cup fresh carrot (sliced or cubed)
1 cup fresh new potato

1 tablespoon unsalted butter, plus more for serving
8 slices (8 ounces) Canadian bacon
4 English muffins, split

1 recipe Blender Hollandaise Sauce, kept warm
Watercress, for serving
Cayenne pepper, for serving

Steps:

  • Crack eggs into a bowl. Fill a large pot with 3 inches of water. Bring to a boil over high heat; reduce to medium. When water is barely simmering, tilt pan slightly to create a wave and add eggs all at once. After 30 seconds, gently release eggs from bottom of pan with a rubber spatula.
  • Cook eggs until white is set and yolk is still soft, 3 to 3 1/2 minutes. Using a slotted spoon, gently transfer eggs to a bowl filled with room temperature water.
