ITALIAN FUDGE-FILLED COOKIES

3/4 cup vegetable shortening
1 cup firmly packed light brown sugar
1/2 cup milk
1 egg
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon vanilla extract
3 cups all-purpose flour
One 1-pound bag chocolate chips
2 cups chopped walnuts
2 cups sweetened condensed milk
1 teaspoon vanilla extract
Two 1-ounce squares unsweetened chocolate, melted
1 teaspoon butter
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F.
  • For the dough: in a mixer, beat together the shortening and brown sugar. Add the milk and the egg, and beat until combined. Add the salt, baking powder, vanilla and flour. Mix until everything is thoroughly combined.
  • Remove dough from bowl, cut in half. Roll each half of dough between 2 sheets of waxed paper. Peel waxed paper off the bottom of 1 of the layers and place it in a greased 9 by 13-inch baking pan. Press dough with hands into the corners of the pan, trimming any pieces that come over the sides. Peel off the waxed paper from the other side.
  • Meanwhile, stir all the filling ingredients together. Evenly pour fudge filling on top of first layer in pan. Remove waxed paper from 1 side of top dough layer and place that side over filling. Then remove waxed paper from the top side. Bake until top is brown, about 30 to 35 minutes. Let cool on a rack for 4 to 5 hours or even overnight. Sprinkle with powdered sugar and cut into serving pieces

EASY CLOTTED CREAM FUDGE



Easy Clotted Cream Fudge image

This soft fudge recipe is quick and easy to make and has the best sweet and salty toffee flavor.

1 1/8 cup 225g sugar
1/3 cup 100g golden syrup
1 cup 220g clotted cream
1 tsp vanilla
Pinch of salt
fleur-de-sel (for sprinkling, optional)

Steps:

  • Line an 8x8 (20x20cm) baking pan with parchment.
  • Add sugar, golden syrup, clotted cream, and salt to a medium sized saucepan.
  • Set heat to medium and whisk mixture until everything dissolves and is well combined. Bring to a boil over medium-high heat. If it looks like it will boil over, turn down heat a bit. Cover and let boil for about 3 minutes.
  • Take lid off and let boil until it reaches the soft ball stage (234F/112C). It needs to reach this temperature so the fudge will set.
  • Take pan off heat, add vanilla, and whisk until the fudge goes from shiny to matte and thickens as it cools. This will take about 10 minutes.
  • Pour fudge into the baking dish, cover with plastic wrap, and let chill until set (at least 60 minutes).
  • Take fudge out of baking dish, sprinkle fleur-de-sel on top (optional), and cut into 16 squares. Serve on a plate or wrap each piece in parchment, wax paper or plastic wrap. Store in an airtight container in the fridge.

CREAMY VANILLA FUDGE

Make your own homemade version of the sweet shop classic with just 6 ingredients. Once you see how easy it is to put together you'll be making it at every opportunity - it's perfect to stash away in the cupboard as a little treat because it lasts for so long! This recipe makes 36 pieces of fudge.

450g (1lb) granulated sugar
85g (3oz) butter
150ml (¼ pt) milk
175g (6oz) evaporated milk
Few drops of vanilla extract
A little vegetable oil

Steps:

  • Tip the sugar, butter, milk and evaporated milk into a heavy based pan and heat gently, stirring frequently, until the sugar has dissolved.
  • Bring to the boil and as the temperature rises, stir the fudge occasionally (be careful as the mixture is very hot) so that the sugar doesn't stick and burn.
  • Continue boiling until a temperature of 116C is reached on a sugar thermometer. If you don't have one of these, you can test if the fudge is at this temperature by spooning a small amount of the syrup into some iced water, it should form a soft ball.
  • Remove the pan from the heat and stir in the vanilla extract.
  • Pour into an 18cm shallow square tin brushed with a little vegetable oil, and leave for 10-15 mins or until almost set. It will set quicker in the fridge.
  • Mark the fudge into 36 squares with a sharp knife and leave to cool completely.

1 (5 ounce) can Carnation Evaporated Milk
1/2 lb butter
1 cup icing sugar, sifted
1/4 cup walnuts, chopped (optional)

Steps:

  • Combine first 3 ingredients.
  • Bring to a boil over medium heat.
  • Boil 8 to 9 minutes, stirring constantly.
  • Remove from heat, add icing sugar and nuts and stir until well mixed.
  • Pour into 9" X 9" pan.
  • Cool about 15 minutes in refrigerator and cut into small squares.
  • Let cool completly and remove from pan.

450g golden caster sugar
400g double cream
50g butter
1 tbsp glucose syrup
1 tbsp vanilla bean paste

Steps:

  • Line a 20 x 20cm cake tin with baking parchment. Tip the sugar, cream, butter and glucose syrup into a medium to large saucepan. Heat to dissolve the sugar and melt the butter, stirring now and again.
  • Once dissolved, put a sugar thermometer in the pan, making sure the end is completely covered by the syrup - if not, transfer the mixture to a smaller pan (with enough space for the syrup to bubble up). Increase the heat and bring the syrup to a steady boil. Keep bubbling, stirring occasionally to stop the sugar from catching, until the mixture reaches 116C - this is known as the soft ball stage.
  • Remove the pan from the heat and leave to sit, undisturbed, for 5 mins, until the temperature drops to 110C. Stir in the vanilla and a good pinch of salt.
  • Keep the sugar thermometer in the pan and begin beating the mixture with a wooden spoon, quite vigorously, until the temperature cools to about 60C. By this time the fudge will be really thick and will have lost it glossy shine. Remove the thermometer and continue beating for a few mins more. This process is very important when making fudge, as it creates small sugar crystals, which give the fudge its lovely smooth and creamy texture (see 'fudge know-how', below).
  • Before it sets completely, quickly pour the fudge into your prepared tin and smooth over the surface. Leave to cool at room temperature overnight - don't put the fudge in the fridge as it will become sticky and won't set properly. Cut into bite-sized pieces and pop in a box to give as a present. Will keep, in a sealed container, for up to 2 months.

THE ORIGINAL FANTASY FUDGE

This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

⅔ cup evaporated milk
1 (12 ounce) package semisweet chocolate chips
1 (7 ounce) jar marshmallow creme

  • Grease a 9x13-inch pan.
  • Mix sugar, margarine, and evaporated milk in a large, heavy saucepan over medium heat, stirring to dissolve sugar. Bring mixture to a full boil for 5 minutes, stirring constantly.
  • Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow creme, walnuts, and vanilla extract. Transfer fudge to the prepared pan and let cool before cutting into squares.
