1 can (14 oz/398 mL) Old El PasoTM Refried Black Beans
1 jar (440 mL) Old El PasoTM Mild Thick N' Chunky Salsa
2 cups (500 mL) chicken stock
Sour cream and chopped green onions

Steps:

  • In a large saucepan, combine refried black beans, salsa and chicken stock. Bring to a boil over medium-high heat.
  • Reduce heat to low, cover and simmer for 10 minutes.
  • Garnish each serving with a dollop of sour cream and green onion.

3 cans (14 oz each) vegetable broth
1 jar (16 oz) Old El Paso™ Thick 'n Chunky salsa
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (11 oz) whole kernel corn, drained
1 package (5 oz) Japanese curly noodles or 5 oz uncooked spaghetti
1/3 cup chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon pepper
2 tablespoons shredded Parmesan cheese

Steps:

  • In 4-quart Dutch oven, heat broth to boiling. Stir in remaining ingredients except cheese; reduce heat to medium.
  • Cook 5 to 6 minutes, stirring occasionally, until noodles are tender. Sprinkle with cheese.

1 medium onion, chopped
1 medium carrot, chopped
2 garlic cloves, minced
2 tablespoons olive oil
4 cups reduced-sodium beef broth
16 fat-free refried beans
31 ounces great northern beans (rinsed and drained)
1 1/3 cups lean ham, fully cooked and cubed
1 teaspoon dried parsley flakes
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 teaspoon pepper
2 medium tomatoes, chopped

Steps:

  • In a large saucepan, saute onion, carrot, and garlic in oil until tender.
  • Stir in broth and refried beans and whisk until smooth.
  • Stir in the beans, ham, parsley, cumin, chili powder, and pepper.
  • Bring to a boil. Reduce heat and cover and simmer for 15 minutes.
  • Stir in the tomatoes and heat through.
