Oeufs cocotte is a French way of baking eggs in a water bath in the oven - you can add other ingredients as well but ham and cheese is one of the easiest variations. Oeufs cocotte taste best served hot with toast or strips of bread to dip in the egg yolks.

1 tablespoon olive oil, or to taste
½ cup finely chopped ham
2 tablespoons grated Gruyere cheese, divided
½ cup heavy whipping cream
salt and ground black pepper to taste
2 eggs
¼ teaspoon chopped fresh chives

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Boil water in a kettle.
  • Grease a small lidded casserole dish with olive oil. Distribute diced ham over the bottom and sprinkle with 1 tablespoon Gruyere cheese. Pour cream on top and season with a little pepper.
  • Crack eggs into the casserole dish one at a time, making sure egg yolks remain intact. Sprinkle with remaining 1 tablespoon Gruyere cheese and fresh chives. Season with salt and pepper. Cover casserole dish and place into a roasting pan. Pour in enough boiling water so it reaches about halfway up the casserole dish.
  • Bake in the preheated oven for 9 minutes with the lid on. Uncover and continue baking until the egg whites are just set but the yolks are still runny, 3 to 6 additional minutes.

12 eggs, preferably organic
Gray salt or course sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Rub the inside of 6 ramekins with the butter and then season with the thyme, distributing both equally amongst the ramekins. Add 2 eggs to each, season with salt and pepper. Place the ramekins in a baking dish, and pour water into the baking dish until it is halfway up the sides of the ramekins. Carefully place the baking dish in the pre-heated oven. Bake eggs for 15 minutes, or until set and golden on top. Eat and enjoy!

2 pounds fresh spinach in bulk or 1 10-ounce package fresh spinach in plastic
5 tablespoons butter
3 tablespoons finely chopped shallots
1/4 cup chopped scallions or green onions
Salt to taste, if desired
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
3/4 cup heavy cream
2 tablespoons freshly grated Parmesan cheese
12 eggs
French bread or buttered toast

Steps:

  • Preheat oven to 400 degrees.
  • Pick over the spinach and remove all tough stems and blemished leaves. If necessary, rinse the spinach well and drain it. Pat dry. Chop the spinach leaves coarse- fine. There should be about eight cups loosely packed.
  • Heat two tablespoons of the butter in a saucepan, and add the shallots and scallions. Cook, stirring, briefly and add the chopped spinach. Add salt, pepper and nutmeg. Cook, stirring, until the mixture is wilted, about two minutes.
  • Add the cream and bring to the boil. Cook, stirring, about five minutes. Stir in the cheese and remove the mixture from the heat. There should be about two cups.
  • Lightly grease 12 ramekins, about 1 1/2 inches deep and 3 inches in diameter, with the remaining three tablespoons of butter. Sprinkle the bottoms with salt and pepper.
  • Spoon an equal portion of the spinach mixture into the bottom of each ramekin, but reserve a small portion to use as garnish. Keep it warm.
  • Break one egg into each ramekin and sprinkle lightly with salt and pepper. Arrange the ramekins in a baking dish and pour boiling water around them. This will keep them from baking too rapidly. Bake 10 to 12 minutes. When cooked, the whites should be firm and the yolks liquid or just starting to firm. Do not overcook.
  • Spoon a little of the remaining spinach mixture on top of each serving. Serve two to each guest along with French bread or buttered toast. The traditional method of serving dishes in ramekins is to cover a small plate with a napkin, then place the ramekin on the napkin. Provide each guest with a salad fork and a small spoon.

6 ounces hot maple flavored pork sausage (Southern style), crumbled
3 cups water
1 cup half-and-half
Kosher salt
1 cup stone-ground grits or course polenta
Freshly cracked black pepper
4 ounces grated Gruyere
4 farm fresh eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook the sausage in a skillet over medium-high heat until cooked through. Remove the sausage to a paper towel to drain. Use the rendered sausage fat to grease 4 large individual ramekins, (gratin dishes or individual cast iron pots work too) and arrange them on a rimmed sheet tray.
  • In a large saucepan, over medium heat, bring the water and half-and-half to a boil and season with salt, to taste. Rapidly whisk in the grits. Continue whisking while returning to a boil, about 5 to 7 minutes. Reduce the heat to a simmer and cook until thick and creamy, stirring frequently, about 20 minutes. Season with pepper and more salt, if needed.
  • Divide the cooked grits between the prepared baking dishes and top each with cooked sausage and grated cheese. Make a divot with the back of a spoon into the cheese and sausage topped grits. Crack the eggs, 1 at a time, into a small bowl and top the ramekins with the eggs. Bake until the egg whites are almost, but not fully set, about 10 to 15 minutes. For more well-done eggs, bake until the whites are set.

2 pounds medium asparagus
2 tablespoons extra-virgin olive oil
2 ounces thinly sliced pancetta, unrolled and cut into 1-inch lengths
1 cup thinly sliced leek, white and pale green parts only
Sea salt, preferably gray salt, and freshly ground black pepper

2 1/2 tablespoons butter
2 1/2 tablespoons freshly chopped thyme leaves
12 eggs, preferably organic

Steps:

  • Holding an asparagus spear in both hands, bend the spear until it breaks naturally at the point where the spear becomes tough. Discard the tough end and repeat with the remaining asparagus. Cut the asparagus into 1-inch lengths.
  • Bring a large pot of salted water to a boil.
  • While the water heats, heat the olive oil in a skillet over medium-low heat and cook the pancetta until the pancetta is almost crisp, about 5 minutes. Add the leek and saute until softened but not colored.
  • Add the asparagus to the boiling water and cook until just tender, 3 to 4 minutes. Drain and add to the skillet. Season mixture with salt and pepper and toss to coat. Transfer to a serving bowl and serve immediately.
  • Serve as a first course or as an entree with Eggs en Cocotte.

Juice of 1/2 lemon
1/4 cup heavy cream
4 tablespoons butter
3 tablespoons finely chopped shallots

  • Preheat oven to 400 degrees.
  • Thinly slice the mushrooms and sprinkle with lemon juice. Chop finely. Blend with the cream. This may be done in a food processor or electric blender.

2 tablespoons butter, softened
8 eggs
Salt and freshly ground black pepper
1/4 cup cream
1/4 cup freshly grated Parmesan
1 1/2 ounces prosciutto (about 4 slices), cut in 1/4-inch strips
2 tablespoons olive oil
1 small onion, finely diced
1 red pepper, seeds and ribs removed, cut in 1/4-inch strips
1 green pepper, seeds and ribs removed, cut in 1/4-inch strips
1 clove garlic, minced
1 (14 1/2-ounces) can diced, peeled tomatoes, drained
1/2 teaspoon red pepper flakes, optional
1 tablespoon chopped fresh basil leaves

Steps:

  • Special equipment: 4 (1-cup) capacity ramekins
  • Preheat the oven to 375 degrees F. In a small saucepan, bring 2 cups water to a boil.
  • Smear the bottom of each ramekin with the butter. For each serving, crack 2 eggs into a small bowl or dish, being careful not to break the yolks, then slide into a prepared ramekin. Season with the salt and pepper, drizzle with 1 tablespoon of the cream, and sprinkle with 1 tablespoon of the Parmesan. Set the ramekins into a medium-sized glass or ceramic baking pan, allowing at least 1 inch of space between dishes. Transfer to the bottom rack of the oven and pour the boiling water into the baking dish, being careful not to splash any hot water into the ramekins. Cover with a sheet of aluminum foil and bake 8 to 12 minutes, until the whites are set but the yolks are still soft and a bit runny. Prepare the piperade while the eggs are baking.
  • In a large skillet over medium heat, cook the prosciutto in the olive oil until beginning to crisp, then add the onion. Saute until lightly golden, then add the red and green pepper and cook until the strips just begin to soften. Add the garlic and cook 30 seconds to 1 minute, until fragrant, then add the tomatoes and red pepper flakes, if using. Allow the mixture to stew over medium-low heat until liquid has evaporated and the tomatoes are heated through. Check for seasoning and add salt and pepper. Off the heat, add the basil. Divide between the ramekins (you will have extra) and serve on a small plate, piping hot.

8 ounces lump or backfin crabmeat
Unsalted butter, for greasing
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
3 teaspoons Dijon mustard
2 to 3 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, such as Tabasco
1/2 cup panko breadcrumbs
2 tablespoons chopped herbs, such as parsley, dill or chives, plus more for serving
2 to 4 eggs (1 for each ramekin)
2 tablespoons creme fraiche or heavy cream
Boiling water
2 teaspoons olive oil
Toasted bread and salad, for serving (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Pick through the crabmeat and remove and discard any shells; set aside. Grease the insides of the ramekins with butter. Lightly sprinkle the bottom of each ramekin with salt.
  • Whisk together the mayonnaise, 2 teaspoons of the Dijon, 2 teaspoons of the lemon juice, the Worcestershire and hot sauce and 1/4 cup of the panko in a medium bowl. Gently fold in the crabmeat and 2 tablespoon of the herbs. Season to taste with salt and pepper. Add up to 1 more teaspoon of the remaining lemon juice, if desired.
  • Divide the crab mixture evenly among the ramekins. Using the back of a spoon, create a small well in the center of the mixture.
  • Gently crack or slide 1 egg into each well and season with salt and pepper. Spoon the creme fraiche or drizzle the heavy cream around the eggs, evenly dividing it among the ramekins.
  • Place the ramekins inside a baking dish and transfer to the oven. (You may also want to place the baking dish on a baking sheet to catch any spills.) Carefully pour enough boiling water into the baking dish to come 3/4 of the way up the sides of the ramekins.
  • Bake until the egg whites are just set, but the yolks still jiggle when you move the baking dish, 15 minutes to 30 minutes, depending on the size of the ramekins.
  • Meanwhile, heat the oil over medium heat in a small nonstick skillet, and stir in the remaining 1/4 cup panko. Cook, stirring, until toasted, 2 to 3 minutes. Stir in the remaining 1 teaspoon Dijon. Remove from the heat and season with salt and pepper.
  • When the eggs are done baking, carefully remove the baking dish from the oven. Using a thin spatula and oven mitts and/or tongs, carefully remove the ramekins from the water and set on a kitchen towel to dry the bottoms. Transfer each ramekin to a plate, top with the toasted panko, and sprinkle with herbs. Serve with toasted bread and salad.

5 1/2 ounces/150 grams creme fraiche
Salt and freshly ground black pepper
Pinch nutmeg
Handful of chopped dill, plus some small sprigs, for garnish, optional
4 free-range eggs
Red lumpfish roe, for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C/Gas 4.
  • Season the creme fraiche with salt, freshly ground pepper and a pinch of nutmeg.
  • Place a heaped tablespoon of creme fraiche in the bottom of a ramekin, followed by a little chopped dill. Crack an egg on top, add a second tablespoon of creme fraiche and sprinkle with a pinch each of salt, pepper and nutmeg. Repeat with 3 more ramekins.

1 cup baby spinach, chopped
1 roma tomato, thinly sliced
¼ cup coconut milk
1½ teaspoons tomato paste (here's an SCD legal one )
1 heaping teaspoon almond meal (I prefer the coarse meal to the flour for this recipe)
¼ teaspoon dried oregano
¼ teaspoon sea salt
4 eggs
Ghee or olive oil for greasing

Steps:

  • Preheat oven to 350 degrees F. Grease 4 ramekins or individual sized baking dishes (do not try to do this in one large dish, the eggs will not cook properly). Layer individual baking dishes with crumbled sausage, spinach, and tomatoes, dividing the ingredients equally among the four dishes. In a small bowl, whisk together the coconut milk with the tomato paste, almond meal, oregano and salt. Drizzle the sauce over the layered ingredients, dividing evenly among the four dishes. Place the dishes on a baking sheet and bake for 15 minutes then remove from oven and raise the temperature to 400 degrees F. Crack an egg in each dish, being careful not to break the yolk. Bake for 5-7 minutes longer, until the whites are cooked but the yolk is still soft.

TRUFFLED EGGS EN COCOTTE



Truffled Eggs En Cocotte image

An expensive but quite wonderful indulgence. You need to plan in advance because the eggs must infuse for at least 24, but preferably 48 hours.

2 extra-large eggs
1 ounce fresh black truffle
3 tablespoons heavy cream
1 tablespoon unsalted butter, softened
salt & freshly ground black pepper
1 ounce emmenthaler cheese, grated (or Comte or Gruyere)

Steps:

  • Put the eggs in an airtight container with the truffles and keep in the refrigerator for at least 24 hours or 48 hours if possible, to allow the aroma of the truffles to permeate the eggs.
  • Slice the truffles as thinly as possible (There are actually special tools for this but a vegetable peeler works just fine). Bring the cream just to a boil in a small pan, then immediately remove from heat and drop in the truffles,cover the pan and set aside until cool.
  • Preheat the oven to 325 degrees.
  • Brush the insides of 2 cocottes or ramekins, about 3 1/4 inches in diameter and 1 1/2 inches deep, with the softened butter and season with salt and pepper.
  • Coat the bottom and sides of the ramekins with the grated cheese, tipping any excess out of the ramekins (just as you would flour a buttered cake tin).
  • Strain the cooled cream-and-truffle mixture, reserve the truffles, and divide the infused cream between the cocottes.
  • Carefully crack the eggs in a bowl and tip it gently into each cocotte so the top of the yolk appears through the cream. Sprinkle on the remaining cheese.
  • Line a shallow roasting pan with waxed paper.
  • Put in the cocottes and gently pour boiling water around them until the water comes halfway up the sides.
  • Place in the oven and bake, checking after 10 minutes; the cream should be just set but the yolk should still be runny.
  • If you prefer your egg a little more cooked, bake for another 2 to 5 minutes.
  • Put a cocotte on each plate, garnish with the slices of the reserved truffles and serve.
  • Note: You can be generous and eat all the truffle with your breakfast companion, or you can save some and use it to garnish a salad or a dish of pasta--so wonderful!

SHIRRED EGGS (OEUFS EN COCOTTE)

Shirred eggs are essentially baked eggs with some cream, some herbs and some cheese. They are deceptively easy to make... Not much more than frying the egg in a pan. But once you try this, you may never pan fry an egg again. Serve this with thin slices of toast, and you have the perfect savory breakfast. Serve this with a side salad, and you have a wonderful light evening meal. I picked this dish up at Cordon Bleu many years ago; where they are called "oeufs en cocotte". So, you ready...   • Break one egg into each ramekin and sprinkle lightly with salt and pepper. Arrange the ramekins in a baking dish and pour boiling water around them. This will keep them from baking too rapidly. Bake 10 to 12 minutes. When cooked, the whites should be firm and the yolks liquid or just starting to firm. Do not overcook.
  • Spoon a little of the reserved ratatouille mixture on top of each serving. Serve two to each guest along with French bread or buttered toast. The traditional method of serving dishes in ramekins is to cover a small plate with a napkin, then place the ramekin on the napkin. Provide each guest with a salad fork and a small spoon.

I watched Clair Robinson from TV's "5 Ingredient Fix" make this today and decided I needed to try it. I totally LOVED it. It is so creamy and so good! I couldn't wait and dove right in..... burned my tongue, but soooo worth it! This would be a huge hit at a brunch.

8 ounces pork sausage (I used a pound)
3 cups water
1 cup half-and-half
1 cup stone ground corn grits
4 ounces gruyere, grated
4 eggs
kosher salt & freshly ground black pepper, to taste

Steps:

  • Preheat oven to 400 degrees.
  • Brown sausage in a pan. Drain on paper towel and reserve the grease.
  • While the sausage is browning, bring three cups of water and one cup of half and half to a boil.
  • Pour one cup of grits into a bowl of water and then simply tilt the bowl and pour the water and floating bits off into the sink. Scoop drained grits into the boiling milk/water mixture.
  • Whisk boiling grits for 5 minutes and then reduce to a simmer for 20 minutes, continue whisking. Season with salt if you'd like and a few cranks of the pepper mill.
  • In between whisks, use the rendered sausage fat to grease 4 large individual ramekins, (gratin dishes or individual cast iron pots work too) and arrange them on a rimmed sheet tray.
  • Divide creamy grits between the prepared baking dishes and top each with sausage and grated Gruyere. Make a divot in the mixture to nest the egg.
  • Crack an egg into a small bowl and slide into the divot you made. Repeat with remaining eggs.
  • Bake until the egg whites are almost, but not fully set, about 10 to 15 minutes. For more well-done eggs, bake until the whites are set.

Eggs and creme fraiche are all you need for this super-simple yet very tasty dish. You can also throw in almost anything savoury you find in your fridge. Try serving it with plenty of crusty bread.

5 1/2 ounces/150 grams creme fraiche
Salt and freshly ground black pepper
Pinch nutmeg
Handful of chopped dill, plus some small sprigs, for garnish, optional
4 free-range eggs
Red lumpfish roe, for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C/Gas 4.
  • Season the creme fraiche with salt, freshly ground pepper and a pinch of nutmeg.
  • Place a heaped tablespoon of creme fraiche in the bottom of a ramekin, followed by a little chopped dill. Crack an egg on top, add a second tablespoon of creme fraiche and sprinkle with a pinch each of salt, pepper and nutmeg. Repeat with 3 more ramekins.
  • Place the ramekins in a baking dish and pour enough lukewarm water into the dish to come halfway up the sides of the ramekins. Bake for 15 minutes, or until the egg yolks are set to your liking.
  • If you like, finish each serving with a teaspoon of red lumpfish roe and a sprig or two of dill.
