I love making a vegetarian version of a traditional meat recipe. I love it even more when my family and my students go crazy for it. Meatballs are such a familiar and popular food, I was a little unsure about how everyone would react when I subbed eggplant for ground beef. But sure enough, these eggplant "meatballs" were a huge hit! I honestly think these eggplant meatballs taste incredibly similar to regular ones, especially when covered with your favorite warm marinara sauce. They are tender enough to cut with a fork and are the perfect match with spaghetti squash for a serious veggie meal.

Number Of Ingredients 11

2 tablespoons unrefined, cold-pressed extra-virgin olive oil
6 garlic cloves, minced
1 1/2 pounds eggplant, unpeeled, cut into 1-inch cubes (you should have about 8 cups)
1 cup grated Parmesan or pecorino cheese
1/2 cup fresh flat-leaf parsley leaves and tender stems, chopped
1/4 cup fresh basil leaves, chopped
4 large eggs, beaten (you can use 2 to 4 eggs, but I like to use 4 for extra protein and to hold the meatballs together better)
1 1/2 cups regular or GF dried breadcrumbs or panko breadcrumbs (you can use as little as 1 cup, but the meatballs will be much softer)
1/8 teaspoon sea salt
A few grinds of black pepper
3 cups marinara sauce

Steps:

  • Heat a large high-sided skillet over medium heat. Add the olive oil and saute the garlic in the hot oil until just fragrant and barely starting to lightly brown, about 30 seconds. Add the eggplant and 1/4 cup of water. Lower the heat to low and cover the skillet. Allow the eggplant to steam until soft, about 20 minutes. Allow to cool slightly, if you have time.
  • Meanwhile, preheat the oven to 350 degrees F. Line a baking sheet with unbleached parchment paper.
  • Place the eggplant mixture in a food processor and pulse until well chopped, but not pureed. Or just do this on a cutting board with a knife.
  • Transfer the eggplant mixture to a large mixing bowl and add the cheese, parsley, basil, eggs, breadcrumbs, salt, and pepper. Stir the mixture well to combine, using your hands or a wooden spoon. The mixture can be refrigerated at this point, covered for up to a day. It is easier to roll into meatballs when the mixture is cooled down. (If doing so, preheat the oven 30 minutes before baking the meatballs.)
  • Roll or scoop the mixture using a 1- to 1 1/2-ounce ice cream scoop into 1 1/2-inch balls and place on the prepared baking sheet. Bake for 25 minutes, or until firm on the outside and light brown underneath.
  • Meanwhile, heat the marinara sauce in a large saucepan over low heat until simmering. Transfer the meatballs to the saucepan with marinara sauce. Toss with the sauce and serve.

1 eggplant, cubed
2 tablespoons olive oil
salt and freshly ground black pepper to taste
⅓ cup finely minced onion
1 pinch crushed red pepper flakes, or to taste
1 ½ cups chicken broth
1 cup marinara sauce
¼ cup plain dry bread crumbs
1 large egg
1 ½ tablespoons Greek yogurt
¼ cup finely minced onion
4 cloves garlic, finely minced
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin
½ teaspoon ground cinnamon
¼ teaspoon ground coriander
1 pound ground lamb
cayenne pepper to taste
1 tablespoon chopped fresh mint

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Line a baking sheet with parchment paper or silicone baking mats.
  • Combine eggplant, olive oil, salt and black pepper in a large skillet over medium-high heat. Cook and stir until eggplant begins to soften, about 5 minutes.
  • Mix in minced onion and red pepper flakes. Reduce heat to medium; cook and stir until onion softens, 4 minutes.
  • Stir in chicken broth and marinara sauce. Reduce heat to medium-low and simmer until sauce mixture has reduced by half, about 30 minutes.
  • Whisk bread crumbs, egg, and Greek yogurt in a large bowl until the bread crumbs absorb all the liquid, about 3 minutes.
  • Mix onions, garlic, Kosher salt, black pepper, cumin, cinnamon, and coriander into the bread crumb mixture.
  • Crumble lamb into bread crumb spice mixture; stir in cayenne pepper.
  • Form lamb mixture into small meatballs and transfer to prepared baking sheet. Place baking sheet into the preheated oven and bake until browned, but still pink inside, about 10 minutes.
  • Remove meatballs from the oven and stir into simmering sauce. Simmer over low heat until sauce begins to thicken, 30 to 45 minutes.
  • Garnish with chopped fresh mint.

1 large eggplant
2 beaten eggs
1/3 cup parmesan cheese or 1/3 cup romano cheese
1 teaspoon mixed Italian herbs
1 teaspoon garlic powder
1 teaspoon onion powder
black pepper, to taste
sea salt, to taste
1 cup breadcrumbs

Steps:

  • Slice eggplant and sprinkle with salt.
  • Let sit 10 minutes to draw out water.
  • Rinse and pat dry.
  • Saute on stovetop with a splash of olive oil and about 1/4 cup water until eggplant is soft.
  • Remove and chop finely.
  • Mix everything but the breadcrumbs when eggplant is cool.
  • Then add breadcrumbs and mix until you get the consistency you want to form the balls.
  • Place in a generously olive oiled pan about l inch apart and bake at 400 degrees until golden brown, about 40 60 minutes.
  • Turn halfway through baking to ensure even browning.

I've made these for a long time. These Italian eggplant balls are a great substitute for meatballs. Use them just like meatballs, in sauces, in recipes, as a side dish, etc. They can be a vegetarian substitution for many dishes. I like these best fried because I like them crispy. You could bake them instead. They go great "parmesan style" too, in a casserole dish, topped with sauce, parmesan & mozzarella cheese then baked...

3 tablespoons extra virgin olive oil
6 -8 garlic cloves, minced (I use food processor & finely mince garlic, onion & eggplant)
1 very large eggplant (or 2 Medium Sized Eggplants, peel 1st then dice in food processor)
1 tablespoon water
1 1/2-2 cups Italian seasoned breadcrumbs
1/2 cup fresh parsley, chopped (I mince this in food processor too)
2 eggs, beaten
1/2 cup grated mozzarella cheese
1/3 cup grated cheese

Steps:

  • In food processor, prepare the ingredients that need to be minced or diced mentioned above.
  • In a large saucepan, heat oil & gently sauté garlic until golden brown.
  • Add diced eggplant & water - then cover & simmer under low heat until eggplant is VERY soft. Drain if watery when done then transfer to large bowl.
  • Combine eggplant, breadcrumbs, parsley, eggs and cheese in large bowl. Let stand for 20 minutes.
  • Form into balls (same size as you prefer your meatballs to be) and fry in olive oil in large pan or bake in over for 30-35 minute at 325º or until brown.

1 large eggplant (1 pound), cut into 1/2-inch-thick rounds
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 teaspoon minced garlic
1 1/2 teaspoons minced fresh oregano
1 cup white beans, such as cannellini (from a 15.5-ounce can), drained and rinsed
1 large egg, lightly beaten
1/2 cup panko breadcrumbs
1 ounce Parmigiano-Reggiano, grated (1/4 cup), plus more for serving
1/4 teaspoon red-pepper flakes, plus more for serving
Kosher salt
3 1/2 cups All-Purpose Tomato Sauce
12 ounces spaghetti

Steps:

  • Preheat broiler with a rack about 6 inches from heating element. Arrange eggplant in a single layer on a rimmed baking sheet. Broil until blackened on top, 5 to 7 minutes. Flip and continue broiling until blackened on second side, 3 to 4 minutes more.
  • Immediately transfer to a bowl with oil, garlic, and oregano, tossing to combine. Cover bowl with a plate or plastic wrap; let steam until eggplant softens and cools slightly, about 5 minutes.
  • Transfer eggplant mixture to a food processor. Add beans, egg, breadcrumbs, cheese, red-pepper flakes, and 1 1/2 teaspoons salt. Pulse just to a chunky paste, 10 to 12 times (do not overmix). Form mixture into 16 meatballs, each approximately 1 1/4 inches in diameter; transfer to a rimmed baking sheet lightly drizzled with oil.
  • Drizzle with more oil, shaking sheet until meatballs are lightly and evenly coated. Broil, undisturbed, until browned on top and firm, 5 to 7 minutes.
  • Meanwhile, bring 3 cups tomato sauce to a simmer over medium-high heat in a large straight-sided skillet. Gently transfer broiled meatballs to sauce, turning to coat (meatballs are delicate and can fall apart if handled aggressively). Reduce heat to medium-low; simmer 10 minutes.
  • Meanwhile, cook pasta in a large pot of generously salted boiling water until al dente, about 2 minutes less than package instructions. Drain, reserving 1 cup pasta water. Return pasta to pot; stir in remaining 1/2 cup tomato sauce and 1/2 cup pasta water.
  • Toss in more pasta water as necessary, a little at a time, until sauce evenly clings to noodles. Serve meatballs with sauce over pasta, topped with more cheese and red-pepper flakes, and a drizzle of oil.

1 small eggplant (about 12 ounces)
1 large egg, lightly beaten
1/2 cup cooked white beans, such as cannellini or navy (rinsed, if canned), smashed with a fork
1 large clove garlic, very finely chopped or pressed through a garlic press
1/2 cup finely chopped fresh basil leaves or flat-leaf parsley
1/2 cup finely grated parmesan cheese, plus extra for sprinkling (optional)
Kosher salt and freshly ground pepper
1 cup whole-wheat panko-stylebreadcrumbs
Olive oil mister or nonstick pan spray
2 cups marinara sauce (homemade or store-bought)

Steps:

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with foil and place the eggplant on top. Use a fork to prick the eggplant 4 times, then place the eggplant in the oven and roast it until it has completely collapsed and a paring knife easily slips into the center, 40 to 50 minutes. Cool the eggplant 20 minutes. Leave the oven on.
  • Slice the eggplant in half lengthwise and use a spoon to scoop out the flesh (discard the skin). Place the roasted eggplant in a medium bowl and stir in the egg and beans. Add the garlic, basil, parmesan, 3/4 teaspoon salt and 1/2 teaspoon pepper and stir to combine, then mix in the breadcrumbs.
  • Again, line the rimmed baking sheet with a clean sheet of foil and lightly mist it with spray. Shape the eggplant mixture into balls about the size of a golf ball (2 tablespoons per ball; you should get about 16). Place them on the prepared baking sheet and lightly mist the top of the balls with spray. Bake the eggplant balls until they are golden brown and firm, about 20 minutes.
  • While the meatballs cook, warm the marinara sauce in a small saucepan. Remove the meatballs from the oven, sprinkle with a little extra parmesan and serve with the marinara sauce.

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir onion and garlic until tender, 5 to 10 minutes. 1 large eggplant, chopped
2 slices stale bread, crust removed
1 cup (250 ml) milk
2 eggs
1 cup/250 ml freshly grated Pecorino cheese
1 cup/250 ml freshly grated Parmigiano cheese

1/2 cup/125 ml bread crumbs
1/2 cup/125 ml flour, plus extra for dredging
1/2 cup/125 ml extra-virgin olive oil
Red onion, chopped
1 1/2 pounds/700 g tomato puree
Salt
Freshly grated Parmigiano cheese, for sprinkling

Steps:

  • For the meatballs: Boil the chopped eggplant in salted boiling water for 4 minutes. Drain well and let cool. Squeeze out any excess water from the eggplant.
  • In a bowl, add the bread and milk. Allow the bread to sit and absorb the milk for a few minutes. Squeeze out as much of the milk from the bread as possible.
  • In another mixing bowl, add the eggplant and break up the bread into the bowl. Add the eggs, Pecorino, Parmigiano cheese, and salt. Then add the bread crumbs and flour. Cook's Note: If your mixture has a lot of moisture you may need to add more bread crumbs and flour. Mix well until all the ingredients are evenly distributed. With your hands, shape the meatballs into the size of golf balls. Dredge the meatballs in the flour.
  • For the tomato sauce: In a large saucepan heat up olive oil. Saute the onions and add the tomato puree and salt. Bring the mixture to a light boil, then turn the heat to medium. Add the meatballs to the sauce and allow to cook for approximately 15 minutes. Plate and add the Parmigiano cheese.

CRISPY LAMB MEATBALLS WITH CHICKPEAS AND EGGPLANT

This dish does not shy away from fat in the best way possible. From the lamb to the olive oil to the yogurt used as a sauce at the end, this is a one-skillet meal that feels worthy of a weekend spread. Since these meatballs aren't made with binders like eggs or bread, they're truly best made with a fatty meat like lamb. If you decide to use pork or beef instead, make sure it's a mixture with a higher fat content or the meatballs could turn out dry. Since eggplant can really soak up oil when pan-frying, feel free to add more to the skillet as the slices cook.

1 1/2 pounds ground lamb, pork or beef
1 1/2 teaspoons fennel seeds
2 garlic cloves, finely grated
1 teaspoon red-pepper flakes, plus more as needed
Kosher salt and freshly ground black pepper
8 tablespoons olive oil, plus more as needed
1 medium eggplant, sliced about 1/4-inch thick
2 (15-ounce) cans chickpeas, drained and rinsed
1 cup full-fat Greek yogurt, labneh or sour cream
3 cups mixed greens (the more peppery, the better)
1 cup cilantro, leaves and tender stems
1 lemon, halved

Steps:

  • Combine lamb, fennel seeds, garlic and 1 teaspoon red-pepper flakes in a medium bowl. Season with 1 1/2 teaspoons kosher salt, and black pepper to taste, and mix until everything is well combined and the spices are evenly distributed.
  • Using your hands, roll lamb mixture into balls about 1 1/2 to 2 inches in diameter, placing them on a parchment-lined baking sheet or plate. You should have about 12 meatballs.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add meatballs - work in batches if your skillet can't comfortably fit them all without crowding - and cook, gently rotating them occasionally so they more or less brown on all sides while keeping a vaguely round shape, 8 to 10 minutes. (Do not stress about this part; they will be delicious no matter what shape they are.) After they are evenly browned and cooked through, transfer them to a plate, leaving the fat and any browned bits behind.
  • Add 4 tablespoons oil to the skillet and, working in batches, if needed, add eggplant slices in an even layer, seasoning with salt and pepper. Cook the slices, flipping them once, until they are browned on both sides, about 6 to 8 minutes. Add more oil as needed. After eggplant slices are cooked and browned, transfer them to the plate with the meatballs.
  • Add remaining 3 tablespoons oil to the skillet, along with chickpeas. Season with salt and pepper, and cook, shaking the skillet and stirring occasionally, until chickpeas are nicely browned, 3 to 5 minutes. (They won't exactly crisp; you're just looking to take the edge off and get them nicely seasoned.)
  • Season yogurt with salt and pepper and smear onto the bottom of a large plate or serving platter. Top with meatballs, eggplant and chickpeas. Scatter with greens and cilantro, and then squeeze lemon halves over everything before serving.

14 oz marinara sauce, 1 jar
1 spaghetti squash

Steps:

  • Preheat oven to 375ºF (190ºC).
  • Combine eggplant, onion, garlic, oil, salt, pepper, and oregano on a baking sheet. Bake for 30 minutes, mixing halfway.
  • In the bowl of a food processor, combine eggplant mixture, basil, parsley, Parmesan, bread crumbs, ricotta, oregano, and egg, and blend until smooth.
  • Roll the mixture into golf ball-sized balls. Transfer to a cast iron pan spacing them about 2 inches apart from each other. Bake for 20 minutes.
  • On a baking sheet, cover spaghetti squash with oil, salt, and pepper, add to oven and bake for 40 minutes.
  • Remove meatballs, add marinara sauce, and return to oven for 10 minutes.
  • Remove spaghetti squash from the oven and with a fork pull at the edges to produce that stringy "spaghetti" quality.
  • On a plate combine spaghetti with meatballs and garnish with parmesan and basil.

1 1/2 pound eggplant, diced
1 cup diced yellow onion
2 tablespoons chopped garlic
2 teaspoons kosher salt

1 1/2 cups cooked white beans
3 tablespoons fresh parsley, chopped
2 cups old-fashioned rolled oats, plus more if necessary
1 spaghetti squash
2 tablespoons grapeseed oil
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
One 28-ounce can whole peeled tomatoes
1/2 cup diced yellow onion
1/4 cup fresh basil, chopped
1/4 cup extra-virgin olive oil

One 8-ounce can diced tomatoes
2 tablespoons tomato paste

Steps:

  • For the vegan meatballs: Preheat the oven to 400 degrees F.
  • Heat a large saute pan over high heat. Add the grapeseed oil and then the eggplant, onions and garlic and saute until the eggplant and onions are tender, 8 to 10 minutes.
  • Add the salt, pepper and chili flakes and cook for another 1 to 2 minutes. Remove the sauteed vegetables from the pan and let cool.
  • Combine the cooled sauteed vegetables, white beans and parsley in a bowl and mix well. Transfer the mixture to a food processor and pulse until the mixture is mostly pureed with some small chunks.
  • Grind the oats in a spice grinder until a fine flour. Mix the oat flour into the pureed mixture. The mixture should hold together in a ball, if it is too wet add more oat flour.
  • Form the mixture into 2 1/2- to 3-ounce balls and place on a parchment-lined baking sheet. Bake until browned and hot in the center, 20 to 25 minutes.
  • For the spaghetti squash: Cut the squash in half lengthwise and scoop out the seeds. Drizzle the flesh with the grapeseed oil and season with the salt and pepper.
  • Place the squash halves cut-side down in a casserole dish. Add 1/2 cup water to the dish and cover with foil. Bake until the flesh is tender, 20 to 25 minutes.
  • Remove the squash from the oven and, while it is still hot, scoop the flesh out with a fork. Season with salt and pepper and hold for plating.
  • For the tomato sauce: Combine the whole tomatoes, onion, basil, olive oil, garlic and oregano in a large pot. Puree with an immersion blender. Add the diced tomatoes and bring the sauce to a simmer over high heat. Stir in the tomato paste, season with the salt and pepper and simmer for 15 minutes.

18 ounces eggplants
2 tablespoons olive oil
1/2 cup pine nuts
20 kalamata olives (pitted and chopped)
4 tablespoons dry breadcrumbs
8 tablespoons freshly grated parmesan cheese
2 tablespoons chopped fresh parsley
1 garlic clove, pressed
1 egg, beaten (organic is best)
butter, for greasing

Steps:

  • preheat oven to 450*F.
  • cut the eggplant in half lengthwise and brush with olive oil.
  • roast in the preheated oven for about 30 min, until golden and completely soft.
  • let cool.
  • peel off the skin (you can discard this) and chop the rest of the eggplant finely.
  • reduce oven temp to 400*F.
  • mix the eggplant, pine nuts, olives, bread crumbs, parsley, garlic, egg, and 6tbs of the parmesan cheese together in a bowl.
  • let rest for 10-15 minutes.
  • grease a large cookie sheet.
  • form the mixture into bite sized balls and put on cookie sheet.
  • top each one with a pinch of the remaining parmesan cheese.
  • bake for 15-20 min until golden and puffed up.
  • serve hot.

This is awesome, easy, and healthy! You can make easy adjustments like browning some ground turkey or chicken to add to the sauce if you don't have healthy frozen meatballs or omitting meat altogether for vegetarians.

½ (1 pound) package frozen chicken meatballs
2 tablespoons skim milk
½ cup Italian-seasoned bread crumbs
1 large eggplant
cooking spray
2 cups light spaghetti sauce
4 ounces fresh mozzarella cheese, cubed
2 tablespoons grated Parmesan cheese

Steps:

  • Thaw meatballs and cut into pieces.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour milk into a shallow bowl and bread crumbs onto an 8x10-inch piece of waxed paper. Set both next to a cutting board.
  • Peel and slice eggplant into 1/2-inch slices. Coat each slice of eggplant by dipping both sides in milk and then in bread crumbs.
  • Heat skillet over medium heat until hot. Spray with cooking spray, then place eggplant slices into the pan; you may need to work in batches so you don't overcrowd the pan. Brown on each side and cook until eggplant becomes tender, 8 to 10 minutes. You can set aside the cooked pieces as you work, it doesn't matter if they get cold while you put more in the pan to brown.
  • Spread a thin layer of pasta sauce in the bottom of a casserole pan (size will depend on how big your eggplant is.) Place one layer of eggplant rounds on top of sauce. Top with about 1/3 of the mozzarella and 1/3 of the meatballs. Repeat with another layer of pasta sauce, eggplant, mozzarella, and chicken. Repeat if you still have eggplant left. Finish with a thin layer of pasta sauce, cheese, and sprinkle with Parmesan cheese.
  • Cover and bake in the preheated oven until golden and bubbly, 20 to 30 minutes.

1 1/4 cups basmati rice
2 tablespoons finely minced ginger
1 teaspoon brown mustard seeds
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1/2 to 1 teaspoon crushed chile flakes, to taste
4 tablespoons ghee or vegetable oil
1 medium onion, finely chopped
1 medium eggplant, about 1 pound, quartered lengthwise, cut in 1/2-inch slices
1 pound ground lamb or beef
1 large egg, lightly beaten
2 tablespoon minced fresh mint
Salt
1 poblano chile, seeded and slivered
2 teaspoons garam masala
2 medium tomatoes, chopped

Steps:

  • Rinse the rice twice, drain, then place in a saucepan and mix in half the ginger. Add 2 cups water, bring to a boil, reduce heat to very low, cover and cook 15 minutes. Set aside, covered. Heat a large sauté pan and add mustard seeds, cumin seeds and coriander seeds. Cook on medium-high until seeds start to dance and smell fragrant. Turn off heat. Remove to a mortar. Add chile flakes and pulverize.
  • Add 1 tablespoon of the ghee or oil to the pan. Add onion and sauté on low until very lightly browned. Remove. Add remaining ghee or oil and sauté eggplant on medium until lightly browned. Remove.
  • Mix ground meat with half the onions, half the ground spices, 6 tablespoons of the rice, the egg, half the mint and salt to taste. Form into 1-inch meatballs. Sauté meatballs in pan on medium until lightly browned. Don't worry if a few of them break up. Remove. Add poblano, remaining ground spice mixture, garam masala and remaining ginger to pan. Sauté on medium until poblano wilts.
  • Add tomatoes, simmer on low 5 minutes, scrape bottom of pan, add 1 cup water, then return eggplant, remaining onion and meatballs to pan. Cover and simmer 15 minutes. Taste for seasoning, adding more salt and chile if needed. Reheat rice on low. Dust curry with remaining mint and serve with rice.

Asian-Style Eggplant

6 cups small cubed eggplant, peel left on (from 1 medium eggplant)
2 tablespoons plus 1 teaspoon olive oil
Kosher salt and freshly ground black pepper
8 ounces cremini mushrooms, quartered
1/2 cup unsalted raw cashews
1/2 cup panko breadcrumbs
2 tablespoons grated fresh ginger
2 tablespoons minced fresh cilantro
2 tablespoons minced fresh mint
2 cloves garlic, grated
1 large egg, lightly whisked

Steps:

  • Preheat oven to 450 degrees F. Line two baking sheets with parchment paper.
  • Place eggplant in a large mixing bowl and slowly drizzle with 1 tablespoon olive oil. Stir and drizzle in an additional tablespoon of oil. Sprinkle generously with salt and pepper and toss to combine. Spread on a prepared baking sheet.
  • Combine mushrooms and remaining teaspoon oil and spread on remaining baking sheet.
  • Bake eggplant and mushrooms 10 minutes, then stir and bake an additional 10 minutes. (Reserve one baking sheet with parchment paper to use again.)
  • Reduce oven heat to 400 degrees F.
  • Pulse eggplant a few times in a food processor until coarse in texture. Transfer to a large mixing bowl. Pulse mushrooms until coarse and add to the same bowl. Pulse cashews until coarse and transfer to bowl. (Processing everything together will make the mixture too mushy; be sure to take the time to process the eggplants, mushrooms and cashews one by one). Add panko, ginger, cilantro, mint, garlic, egg and salt and pepper to the mixture and stir to combine.
  • Use a small ice cream scoop or yours hands to scoop eggplant mixture into 12 balls and arrange on reserved lined baking sheet. Bake until crispy and browned, about 20 minutes.

3 large eggplants, approximately 3½ to 4 pounds
2 tablespoons plus ½ teaspoon salt
2 slices Italian bread (½- inch- thick slices of a rustic, artisan- baked loaf or similar bread), crusts removed
1 cup freshly grated Parmigiano- Reggiano or Grana Padano cheese
2 cloves garlic, finely minced
¼ cup chopped fresh Italian flat- leaf parsley
2 large eggs, slightly beaten
½ teaspoon freshly ground black pepper
1 cup plain dried bread crumbs, plus a little more if needed
Sunflower oil to fry in (your favorite frying oil may be substituted)

Steps:

  • 1. Peel the eggplant, slice into ½- inch rounds and then cut into ½- inch cubes. Place the cubed eggplant in a large 6- quart pot. Add the 2 tablespoons of salt and stir to coat all the eggplant. Pour in enough water to cover the eggplant by 2 inches. Let the eggplant soak in the salted water for an hour, stirring every 15 minutes. 2. After the eggplant has soaked, place the pot over medium- high heat and bring to a boil. Boil the eggplant until thoroughly cooked, 10 minutes. Drain into a colander and remove the excess liquid by placing a plate on top of the eggplant and adding a weight to the plate. Let the eggplant drain until cool. 3. Meanwhile, place the bread slices in a bowl and cover with water. Place a teacup saucer on the bread slices to help keep the bread under water. Set aside to soak for 5 to 10 minutes. 4. Place the drained and cooled eggplant in a large bowl. Remove the soaking bread from the water and, using your hands, squeeze out the excess water. Tear the bread into small pieces and add to the eggplant, along with the Parmigiano- Reggiano, garlic, parsley, eggs, salt, and pepper. If the mixture is too soft, add a tablespoon of dry bread crumbs. Form the eggplant mixture between the palms of your hands into 1- inch- diameter balls, and roll each "meatball" ( polpetta ) in the bread crumbs to coat. 5. Heat half an inch of oil in a heavy medium- size frying pan over medium heat and, in batches, brown the polpette on all sides, about 4 to 6 minutes. Place on paper towels to drain. While still warm, sprinkle with salt to taste. 6. May be served alone as an antipasto or covered with a simple sauce ( I love using a tomato cream sauce) and served as a second course.

1 1/2 cups mixed fresh herbs (such as cilantro, parsley and mint)
1 pound ground lamb
1/2 cup breadcrumbs
1/4 cup toasted pine nuts
3 tablespoons plus 2 teaspoons extra-virgin olive oil
2 cloves garlic, minced
1 large egg, lightly beaten
Finely grated zest of 1 lemon plus 2 teaspoons lemon juice, plus lemon wedges for serving
Kosher salt and freshly ground pepper
1/3 cup plain Greek yogurt
1/3 cup pomegranate seeds

Steps:

  • Preheat the broiler. Place the eggplants on a foil-lined baking sheet and broil, turning once, until blackened and tender, about 20 minutes. Let cool slightly.
  • Meanwhile, chop 1/2 cup herbs. Mix with the lamb, breadcrumbs, pine nuts, 1 tablespoon olive oil, the garlic, egg, lemon zest, 1 teaspoon salt and a few grinds of pepper in a large bowl. Shape the mixture into 12 large meatballs and place on a plate.
  • Peel off the eggplant skin; discard. Transfer the flesh to a colander and let drain 5 minutes, then transfer to a food processor and pulse until chopped. Scrape into a bowl and stir in 2 tablespoons olive oil and the yogurt; season with salt and pepper.
  • Line the baking sheet with a clean sheet of foil. Arrange the meatballs on the pan and broil until golden brown and cooked through, 6 to 8 minutes, turning once halfway through.
  • Toss the pomegranate seeds, remaining 1 cup herbs and 2 teaspoons olive oil, and the lemon juice in a bowl; season with salt and pepper. Spoon the eggplant mash into shallow bowls and top with the meatballs and pomegranate mixture; serve with lemon wedges.

1 medium eggplant
4 cloves of garlic, minced
2 tablespoons of water
1 3/4 cups of gluten free or old fashioned oats
1 organic egg
1 cup of loosely packed basil
1 tablespoon of parmesan cheese (*optional)
1/2 teaspoon of red pepper flakes
1/2 teaspoon of dried parsley
Sea salt and pepper
Extra virgin olive oil
4 zucchinis/yellow squash
Marinara sauce (we used Rao's Roasted Eggplant Sauce)

Steps:

  • Preheat the oven to 350 degrees F. Using a peeler, peel the skin off of the eggplant. Cut the eggplant into thick rounds (about an inch) and then into chunks. In a medium/large pan, add a drizzle of olive oil over medium heat. Add 2 teaspoons of minced garlic to the pan (leave the rest for later), and sauté for about a minute. Add the chopped up eggplant to the pan and mix through the garlic and oil. Add two tablespoons of water to the pan, cover, and reduce heat to low. Steam the eggplant for 10 minutes. In a food processor or high speech blender, add the oats and blend into flour-like consistency. When the eggplant is fork tender, drain and excess water from the pan and add the eggplant to the processor, along with the egg, basil, parmesan cheese, red pepper flakes, dried parsley, sea salt, and pepper. Process until a sticky mixture is formed. *If you used a really large eggplant, you may need to add more oats until the mixture sticks together. It's ok if the remaining oats do not get blended finely. Evenly coat a baking sheet with olive oil. With slightly damp hands, scoop out the eggplant mixture, roll into balls and place them on a baking sheet. I found I needed to rinse my hands multiple times in-between; however make sure you're hands aren't too wet. Bake for the eggplant 'meatballs' for 10 minutes, then flip the meatballs over and bake for an additional 15 minutes (25 total). While the meatballs are baking, spiralize your zucchini/yellow squash. Squeeze any excess liquid from your zucchini pasta with a paper towel. Flash fry the zucchini pasta over medium heat, by adding a teaspoon of olive oil to your pan and sautéing until heated through. (*You can cook for longer, I just don't like them to get soggy). Warm your sauce. Place the zucchini pasta on a plate, top with meatballs your favorite sauce, and additional fresh chopped basil.

1 -2 cup spaghetti sauce

3/4 lb muenster cheese, thickly sliced

Steps:

  • Place the diced, peeled eggplant in a saucepan with enough water to cover.
  • Bring to a boil, reduce the heat and simmer for 10 minutes, or until eggplant is tender.
  • Meanwhile, mix together the turkey, 1/2 cup parmesan, garlic, bread crumbs, basil, red pepper, pepper, salt for the meatballs.
  • Drain the eggplant. Allow to cool for a few minutes.
  • Mash the eggplant, salt lightly, and sop up additional water with paper towel. Mix it into the turkey mixture.
  • Form into 18 meatballs. The meatballs will be large.
  • Heat oil in large frying pan, and brown the meatballs in batches. Turn heat down, cover, and cook the meatballs through.
  • Place the sauce in the bottom of a large baking dish.
  • Set the meatballs in the sauce. To with the grated cheese and finally with the thickly sliced cheese.
  • Bake in an oven at 375 degrees for 20 minutes or until hot and bubbly.
  • Serve as is, or with noodles cooked in eggplant water.
