EGGPLANT RICE DRESSING- CAJUN

This is a healthy and tasty alternative to dirty rice. Also a great way to get the kids to try and love eggplant! I usually make this with one pound of ground turkey to reduce the fat and calories. To add even more flavor you can increase the onion and garlic if you like but we find it well seasoned as is. Sometimes we will even add some celery in with the onion mixture. Use what you have and what you like. Any color bell peppers are fine too! Red and yellow peppers add a nice color addition. Likewise, you do not HAVE to peel the eggplant if you want to leave the skin on. Just dice them up small. Another great color addition to a simple meal! Also, you can make this vegetarian if you use vegetable broth and leave out the meat or substitute TVP. Enjoy!

2 lbs chicken or 2 lbs beef
1 large eggplant, peeled and chopped
1 onion, chopped
2 bell peppers, chopped
4 large garlic cloves, minced
1/2 cup green onion, chopped
2 cups chicken broth (or 1 can plus a little water)
1 teaspoon cayenne pepper, adjust to taste
1 tablespoon season salt, to taste (I use Tony Cachere's which is spicier but you can use Season All which has no heat or cayenne)
3 cups brown rice, cooked (measured after it's cooked) or 3 cups white rice, if preferred

Steps:

  • Brown ground meat and drain well. Rinse with water if desired. Reduce heat and add eggplant, onions, bell peppers, garlic and green onions. Cover and simmer for 15 minutes.
  • Add the broth and just a little water if needed so that it almost covers the mixture. Stir in seasoning and bring mixture to a boil. Simmer stirring occasionally for about 30 minutes or until it has reached a desirable consistency. I like to have some liquid left in the bottom when I add the rice.
  • Stir in cooked rice until well mixed and the remaining liquid has absorbed into the rice as much as you want. Serve hot as a side dish or a main dish.
  • Note: For those who like lots of heat this is great served with tabasco or other hot sauce or even a sauce piquant! Ces' si bon!

EGGPLANT DRESSING

A recipe my family grew up on that our mom made, simply ingredients and cooking. Great as a meal with sliced tomatoes or a side dish. **My mom would also slice bell peppers in half, remove seeds and rub a bit of oil on outside then mound this eggplant dressing inside, place stuffed bell pepper in 9 x 13 dish with a just enough water to cover bottom and bake at 350 for 25-30 minutes to be served as a side dish. ***You can also just cook your eggplant down with the seasonings S,P Garlic Powder, onion and bell pepper. Cool then freeze in smaller packages with a good seal. When ready to use take out defrost add cooked meat and rice and heat thoroughly.

2 eggplants
1 1/2 lbs hamburger meat
1 medium diced onion
1 medium diced bell pepper
1 teaspoon garlic powder
1 teaspoon salt and black pepper
1 cup rice

Steps:

  • 1. Cook ground hamburger meat-use a 92/8 mixture drain any fat, add garlic powder, S & P, and chopped bell pepper, and onion cook on low till onion wilted.
  • 2. Peel eggplant, slice and cut each slice into 1" cubes.
  • 3. Add eggplant to meat mixture, turn up heat, put lid on so eggplant will steam. Each time you check mash down eggplant with back of spoon. Continue until eggplant is tender and mixes in with meat mixture. This takes about 45 minutes.
  • 4. Cook rice according to package directions.
  • 5. Stir in cooked rice to mixture and heat so its hot through and through.
  • * Cooking time for recipe maybe a little bit more.

1/3 cup golden raisins
1/3 cup coarsely chopped fresh cilantro

Steps:

  • Preheat oven to 450°F. Coat rimmed baking sheet with nonstick spray. Place eggplant cubes on sheet; drizzle with 3 tablespoons oil and sprinkle with salt and pepper; toss to coat. Roast until tender, turning occasionally, about 40 minutes.
  • Meanwhile, cook couscous in boiling salted water until just tender, about 8 minutes. Drain. Rinse under cold water until cool; drain again. Place in large bowl.
  • Toast cumin seeds in small skillet over medium-high heat until slightly darkened, about 4 minutes. Grind seeds in spice mill; place in small bowl. Add vinegar, cinnamon, and 2 tablespoons oil. Whisk to blend; season with salt and pepper. Mix in onion.
  • Add raisins, cilantro, eggplant cubes, and dressing to couscous. Toss to coat.

1 medium bell pepper - chopped
3 cloves garlic - chopped
1 medium white onion
1 c rice - cooked
3 medium eggplants

Steps:

  • 1. Brown ground beef and add onion and bell pepper as you brown it. Season with salt and pepper to taste.
  • 2. Boil whole eggplants until tender.
  • 3. When eggplants are tender, peel and cut into bite size chunks. ( I like to remove the seeds but this is optional)
  • 4. Add eggplant to meat mixture and add rice. Simmer another 10 minutes. Add salt, pepper and red pepper to taste.
  • 5. *Hint - If you prefer using bread to rice, use 3 slices stale or toasted white bread. Wet bread and squeeze out water. Add bread to meat mixture and cook 10 minutes.

BAYOU EGGPLANT AND SHRIMP DRESSING

3 tablespoons olive oil
1 large onion, chopped
2 stalks celery, with leaves, chopped
1 medium red bell pepper, chopped
2 -3 garlic cloves, minced
1 1/2 lbs eggplants, cut into 1 inch cubes
1 lb medium shrimp, peeled, deveined, and coarsely chopped
1 tablespoon cajun seasoning
10 cups coarsely crumbled cornbread (dried overnight)
1/3 cup chopped fresh parsley
3 eggs, beaten
1 -1 1/2 cup chicken broth (or as needed) or 1 -1 1/2 cup turkey broth (or as needed)
3/4 teaspoon salt, to taste
1/4 teaspoon pepper, to taste

Steps:

  • Heat the oil (medium heat) in a large non-stick skillet.
  • Add in the onion, celery, bell pepper, and garlic.
  • Saute/stir for 5 minutes or until the onion is soft.
  • Add in the eggplant, stir to combine.
  • Cover and continue to cook for 8-10 minutes or until the eggplant is tender; stir frequently.
  • Add in the shrimp and Cajun seasoning; cook/stir for 2-3 minutes or until the shrimp are pink.
  • Put the shrimp mixture into a large mixing bowl; add in the crumbled cornbread and parsley.
  • Gradually stir in the eggs and approximately 1 cup broth, until the mixture is evenly moist but not soggy.
  • Season to with salt and pepper to taste.
  • Transfer mixture to a buttered casserole dish; drizzle with 1/2 cup broth.
  • Cover and bake in a 350° oven for about 30 minutes; uncover the last 15 minutes of cooking time if you want a crusty dressing.

Steps:

  • Prepare barbecue (medium-high heat). Combine first 3 ingredients; add Asian sesame oil and toss to coat. Sprinkle with salt and pepper. Grill vegetables until tender, turning often, about 7 minutes for eggplant and mushrooms and 5 minutes for green onions. Transfer mushrooms and onions to cutting board; cool slightly. Slice mushrooms and onions.
  • Meanwhile, cook noodles in large pot of boiling salted water until almost tender but still firm to bite, about 3 minutes. Add sugar snap peas to noodles; cook 1 minute longer. Drain well. Transfer noodle mixture to large serving bowl. Add grilled vegetables.
  • Whisk last 4 ingredients in small bowl to blend. Toss noodle salad with dressing; season with salt and pepper.
  • Test Kitchen Tip: The cooking time of Japanese-style chuka soba noodles varies by a minute or two depending on the brand of noodle. Test them after three minutes to avoid overcooking.

1/4 cup peanut and olive oil, combined
Sea salt
2 tsp whole fennel seeds
1 clove garlic
1/4 cup balsamic vinegar
1/4 cup honey
Juice of 1 lemon
1 Tbsp Dijon mustard
1/4 cup pomegranate molasses
1/4 cup extra virgin olive oil
4 large handfuls arugula leaves
1 small red onion, thinly sliced
2 cups cherry tomatoes, sliced
Salt and pepper
1/2 cup toasted pine nuts
1/2 cup fresh pomegranate seeds

Steps:

  • Preheat the oven to 400°F.
  • Peel and cut the eggplants into thick rounds of about 1 inch thick, brush both sides with oil, sprinkle with sea salt and place on a shallow baking sheet. Place in the oven to roast until golden and cooked through, about 15 minutes. Remove, cool completely and slice each round in half. Set aside.
  • Using a mortar and pestle, crush the fennel seeds and garlic to make a paste. Add the balsamic vinegar, honey, lemon juice, Dijon mustard, pomegranate molasses and olive oil. Whisk together to emulsify the dressing. Set aside.
  • In a shallow serving platter lay the arugula leaves. Sprinkle the onion, tomatoes, salt and pepper on top. Toss to combine. Scatter the eggplant slices on the salad.
  • Drizzle some dressing all over. Garnish with pine nuts and pomegranate seeds. Serve immediately, with crusty olive bread and olives on the side.

1/3 cup white or other miso, or to taste
1 tablespoon soy sauce, or to taste

Steps:

  • Bring a large pot of water to a boil and salt it. Trim the eggplant and cut it into 1-inch cubes. Boil the eggplant until tender, 5 to 10 minutes. Drain and cool in a colander. (You can refrigerate the eggplant, covered, for several hours before proceeding, but bring it back to room temperature before proceeding.)
  • Whisk together the miso, soy sauce and mustard in a serving bowl. Add the eggplant along with salt and cayenne to taste, then toss. Taste and adjust seasoning if necessary, and serve with the lemon wedges.

Roasted Eggplant and Tomato Napoleons with Black Olive Dressing image

2/3 cup extra virgin olive oil
3 tablespoons seeded and diced tomato
3 tablespoons rinsed and finely diced black olives, such as Nicoise or Kalamata
2 teaspoons finely minced lemon zest
Sea salt and freshly ground pepper, to taste
3 tablespoons chopped poached garlic
1 quart packed basil leaves
3 tablespoons extra virgin olive oil
1/4 cup toasted pine nuts or blanched almonds
Rich vegetable or chicken stock
2 pounds Roma tomatoes, halved, seeded and oven dried (procedure follows)
2 (1 pound) eggplants each about 4-inches in diameter
Olive oil
Sea salt and freshly ground pepper
4 medium zucchini halved and cut length wise into 16 slices
2 medium peeled red onions cut into 8 rounds
4 small red bell peppers, stemmed and seeded and cut into quarters
2 large Portobello mushrooms, black gills removed and cut into 16 thick slices
11/4 pounds fresh or smoked mozzarella, cut into 16 slices
4 branches of rosemary made into spears
Drops of reduced balsamic vinegar
Black olive dressing
Fresh basil puree
Herb sprigs

Steps:

  • For the black olive dressing, combine all ingredients and allow to sit for at least 2 hours, covered and refrigerated, for flavors to develop. For the poached garlic in the basil puree, place unpeeled garlic cloves in a small saucepan and cover by 1-inch of cold water. Bring to a boil, drain and repeat process 2 more times. Remove husk from garlic, chop. For the basil puree, blanch the basil in lightly salted boiling water for about 5 seconds. Remove and immediately plunge into ice water to stop the cooking and set the color. Drain well, squeeze dry and chop. Add to a blender along with poached garlic, olive oil, pine nuts and enough stock to make a smooth puree. Store in refrigerator.;
  • To oven dry tomatoes for napoleons, cut tomatoes in half and remove stems. With your fingers gently squeeze and remove the seeds. Lightly oil a baking sheet, place tomatoes and season lightly with sea salt and freshly ground pepper. Place in a preheated 225 degree oven for 3 to 4 hours or until tomatoes are somewhat shriveled and have the faintest bit of color on them. For the napoleons, slice the eggplants into 12 (1/2-inch) thick rounds and generously paint both sides with olive oil and season with salt and pepper. Place in a single layer on a baking sheet and roast in a preheated 400 degree oven until cooked through and lightly browned, about 10 minutes. Set aside. Oil, season and roast remaining vegetables in the same manner and set aside. Be sure not to overcook, vegetables should still have some texture. To assemble the napoleons, on a lightly oiled baking sheet start with a round of eggplant and top with slices of zucchini, onions, peppers, mushrooms and oven dried tomatoes and cheese. Repeat the layers, ending with an eggplant slice for each napoleon. Place a rosemary spear in the center of each napoleon to hold it together. To serve, Place baking sheet with napoleons in a preheated 375 degree oven for a few minutes to warm through and barely melt cheese. Place on warm plates and spoon the black olive dressing around. Top with drops of the reduced Balsamic vinegar, fresh basil puree and garnish with herb sprigs. Serve immediately.;

COLD STEAMED EGGPLANT WITH SESAME SOY DRESSING



Cold Steamed Eggplant with Sesame Soy Dressing image

Steamed eggplant has a delicate, silky texture. You may have tasted similar light, refreshing eggplant dishes in Asian restaurants. Dress the eggplant while it's still hot; it will drink up the sauce so that flavor runs through and through. Then refrigerate and serve the salad cold.

2 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
1 tablespoon freshly squeezed lime juice
1/2 teaspoon sugar (omit if using seasoned rice wine vinegar, which is sweet)
Salt to taste
2 tablespoons sesame oil or walnut oil
2 tablespoons canola oil
Pinch of cayenne
2 pounds eggplant, preferably Japanese eggplants
Salt
1 tablespoon chopped chives
1 bag baby arugula, washed and dried, for serving
1 small garlic clove, minced
1/2 teaspoon grated or finely minced fresh ginger (more to taste)

Steps:

  • Whisk together the soy sauce, vinegar, lime juice, sugar, sesame or walnut oil, and canola oil. Add the optional ginger and/or garlic. Set aside.
  • If you can find Japanese eggplant, cut them in half lengthwise. If using large globe eggplants, cut them lengthwise into quarters. Place in a steamer and steam 10 to 15 minutes, until thoroughly tender. Remove from the heat and cut in 3/4-inch wide slices. Season with salt. Toss gently with the dressing (it's okay if the eggplant falls apart a little) and half the chives while warm, and chill for 1 hour. Toss again and serve on a bed of baby arugula. Sprinkle the remaining chives over the top.

4 to 6 small to medium eggplants, or 1 large one, about 1 1/2 pounds
Salt
1 tablespoon sesame seeds
2 tablespoons soy sauce, or to taste
2 tablespoons lemon juice
1/2 teaspoon sugar

Steps:

  • Trim eggplant, and cut into cubes of 1/2 to 1 inch. If using large eggplant, sprinkle with salt, put in a colander, and let sit at least 30 minutes, preferably an hour. Rinse.
  • Boil large pot of water. Blanch eggplant in boiling water 2 minutes, no more. It will become just tender. Drain in colander as you would pasta.
  • Toast sesame seeds in small dry skillet over medium heat, shaking frequently until they color slightly. Dry eggplant with paper towels. Combine remaining ingredients, and toss with eggplant and sesame seeds in bowl. Serve at room temperature, or refrigerate until ready to serve. Covered well, the salad will remain flavorful for a day.

1 tablespoon chopped fresh basil
2 teaspoons minced fresh ginger
1 large garlic clove, minced
1/4 teaspoon dried crushed red pepper
2/3 cup vegetable oil
2 large Japanese eggplants, each cut lengthwise into 6 slices
1 tablespoon olive oil
8 cups mixed baby greens
*Fermented soybean paste is sold at Asian markets, specialty food stores and some supermarkets.

Steps:

  • Whisk first 6 ingredients in medium bowl to blend. Gradually whisk in vegetable oil. Season with salt and pepper.
  • Prepare barbecue (medium-high heat) or preheat broiler. Brush eggplant with olive oil. Season with salt and pepper. Grill or broil until golden and just tender, about 3 minutes per side.
  • Toss greens with enough dressing to coat. Divide among plates. Top with eggplant. Drizzle with remaining dressing.

3 cups water
1 1/2 teaspoons kosher salt
1 1/2 cups white rice (short, medium, or long grain)
7 tablespoons olive oil
1 1/4 lb eggplant, trimmed and sliced crosswise 1/2 inch thick
1 cup chopped onion
1 cup chopped green bell pepper
1 teaspoon minced garlic
24 shucked oysters, including liquor (1 pint total)
1 cup thinly sliced scallion greens
1/4 teaspoon cayenne, or to taste

Steps:

  • Bring water and salt to a boil in a 3-quart saucepan. Add rice and cook, covered, over low heat until water is absorbed and rice is just cooked through, 18 to 20 minutes. Transfer to a large bowl and fluff with a fork.
  • Heat 2 tablespoons oil in a large heavy skillet over moderately high heat until hot but not smoking, then cook eggplant in batches, turning it and adding up to 4 tablespoons of remaining oil as necessary, until tender and browned, about 5 minutes. Transfer to paper towels to drain. When cool enough to handle, cut eggplant into 1/2-inch pieces.
  • Preheat oven to 325°F.
  • Heat remaining oil in skillet over moderately high heat until hot but not smoking, then sauté onion and bell pepper, stirring, until softened and edges are browned. Add garlic, oysters (without liquor), and eggplant and sauté, stirring occasionally, 1 minute.
  • Gently toss eggplant mixture, oyster liquor, 1/2 cup scallions, cayenne, and salt to taste with rice in bowl and transfer to a buttered 3-quart shallow baking dish. Cover with foil and bake in middle of oven 1 1/2 hours. Remove foil and stir in remaining 1/2 cup scallions.

3/4 pound butter
3 medium-large onions, finely chopped
2 green peppers, finely chopped
1 stalk celery, finely chopped
4 large eggplants
3/4 teaspoon cayenne

3/4 teaspoon black pepper
Salt to taste
3 dashes hot pepper sauce
1/4 teaspoon dried thyme
1/4 teaspoon dried basil

Steps:

  • Peel shrimp; set aside. Cover shells with 2 cups water; boil to reduce to 1 cup. Strain; set stock aside.
  • Heat butter in large skillet; add onion, peppers and celery. Cook slowly, 15 minutes, until mixture is very soft.
  • Peel and cut two eggplants into 3/4-inch cubes; place in saucepan with water to cover half way up eggplant. Cook until eggplant is tender, about 7 minutes; drain to remove as much water as possible; puree.
  • Add eggplant, stock and seasonings to sauteed vegetables; cook over medium-low heat about 20 minutes.
  • Add shrimp; cook 7 to 10 minutes over moderately high heat until shrimp are pink. Add crab meat; heat through.
  • Stir in green onion and parsley.
  • Peel and slice remaining eggplant into 12 1/2-inch-thick slices. Brown in hot oil. Repeat until all slices are done. Drain.
  • Serve dressing over slices of fried eggplant.

3 small eggplants (about 2 1/4 pounds) cut lengthwise into 3/4-inch-thick wedges
1 1/3 cups extra-virgin olive oil
3 teaspoons coarse salt
3 tablespoons pomegranate molasses
1/3 cup fresh lemon juice
2 garlic cloves, minced
1/3 cup shredded fresh mint
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat grill to medium-low. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 7 seconds.) Brush eggplant wedges on all sides with 2/3 cup oil, and season with 1 teaspoon salt.
  • Place eggplant on grill rack in a single layer. Cover grill, and cook, turning occasionally, until softened and lightly charred, about 8 minutes total.
  • Meanwhile, whisk together molasses, lemon juice, garlic, mint, remaining 2 teaspoons salt, the pepper, and remaining 2/3 cup oil. Add warm eggplant, and toss.

EGGPLANT DIRTY RICE DRESSING

This recipe was on the table throughout summer when I was growing up. Eggplant grew all summer and my Mom made this almost weekly. This with a side of fresh green beans from our garden seasoned with salt pork was a favorite summertime meal at my childhood home. And to tell the truth, it still is!

2 large eggplants, peeled, and cut in cubes
3 c cooked rice
2 medium onions
3 clove garlic, minced
2 Tbsp vegetable oil
1 large green bell pepper
2 lb ground round
2 large celery stalks
salt and pepper to taste
1 tsp louisiana hot sauce
1 large bunch green onions, chopped (white and green part)
1/2 c fresh parsely, chopped

Steps:

  • 1. Soak cut eggplant in salt water for 10 minutes (this will keep eggplant from turning dark).
  • 2. Put oil in bottom of heavy bottomed pot. Saute onions, bell pepper, celery and garlic in oil until the vegetables are tender. Season with salt and pepper. Add Ground Round and cook until meat begins to brown.
  • 3. Drain eggplant, and add to meat mixture. Smother down covered until eggplant is well cooked. (Eggplant will be completely mashed up when done). Stir often and scrape the bottom of pot with your spoon to lift off any that may be starting to stick. Add 1 teaspoon of Louisiana Hot sauce Taste, adjust seasoning to your taste. Stir in Chopped green onions and parsley. Cook for only a few minutes longer. Remove from heat.
  • 4. Add the cooked rice, stir to mix completely. Serve hot. Note: at anytime if the mixture becomes to dry to finish cooking the eggplant down, then add a small amount of water.

4 small Japanese eggplants or 2 medium eggplants, about 6 inches long (about 10 oz)
4 teaspoons peanut butter, chunky or smooth
4 teaspoons soy sauce
4 teaspoons rice vinegar
2 teaspoons dry sherry or 2 teaspoons mirin
1 tablespoon sesame oil
2 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon garlic and red chile paste (or more, to taste)
1/2 teaspoon ginger, minced
4 tablespoons cilantro, chopped

Steps:

  • Quarter the eggplants and cut them crosswise into 3-inch sections.
  • Steam over high heat until tender, 10-15 minutes, using a bamboo steamer or steamer basket.
  • Meanwhile, combine all other ingredients for the sauce, except the cilantro, and mix well.
  • When eggplants are tender, gently mix into the sauce in a serving dish. Sprinkle with the cilantro. Serve at room temperature or chilled.

1 lb wild caught american gulf shrimp, peeled, deveined, and chopped (Reserve the shells)
1 bay leaf
1 bunch fresh thyme, tied with butchers twine
water, enough to cover the eggplant by 1 inch
1 splash liquid crab boil
4 -5 small eggplants, peeled, enough to yield about 2 1/2-3 Cups Cooked
3 tablespoons unsalted butter
1 large brown onion, finely diced
1 medium green bell pepper, finely diced
4 garlic cloves, minced
2 green onions, sliced thin, keep the green and white parts separate
1 egg, beaten
2 tablespoons fresh thyme, chopped
1 tablespoon Italian parsley, chopped
1 tablespoon fresh basil, chopped
1 cup breadcrumbs (preferably homemade from leftover French bread)
1 cup panko breadcrumbs
1/4 cup parmesan cheese, grated
3 tablespoons butter, melted
1 tablespoon Italian parsley, chopped
1 pinch of salt and a few grinds black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring the water to boil in a Dutch Oven. Add the Bay Leaf, bundled Thyme, reserved Shrimp shells, crab boil, any trim from the diced onion, and a handful of Kosher salt. Boil for about 15-20 minutes, skim off the scum from the shrimp shells.
  • Add the Eggplant and reduce to a simmer. Cook until tender about 20 minutes.
  • In the meantime, melt the 3 Tbsp butter in a saute pan. Add the onion, bell pepper, garlic, and a pinch of salt, saute until the onions are translucent, add the chopped Thyme and the chopped shrimp, cook until the shrimp are just cooked through; set aside to cool.
  • When the eggplant is very tender remove with tongs to a colander to cool. When cool, squeeze some of the liquid from it and chop.
  • In a large bowl combine the eggplant, onion & pepper mixture, egg, fresh basil, and parsley, mix ingredients together well. Add the bread crumbs a little at a time until the right consistency is achieved; it should be not too wet, not too dry. Check the seasoning; season to taste with Kosher salt, Cayenne, and black pepper.
  • Add the mixture to a buttered gratin or baking dish. Mix together the topping ingredients, top the shrimp and eggplant dressing with it.
  • Bake in the preheated oven until bubbly and the topping is a nice golden brown.

1 tablespoon olive oil
8 cups mixed baby greens

Steps:

  • Preheat broiler or barbecue (medium-high heat).
  • Whisk rice vinegar, miso paste, basil, ginger, garlic, red pepper together. Gradually add in vegetable oil. Season with salt and pepper and set aside.
  • Brush eggplant with olive oil and season with salt and pepper. Grill or broil until golden and just tender, about 3 minutes per side.
  • Toss the greens with just enough dressing to coat. Divide among 4 plates, top with eggplant and drizzle remaining dressing.

FRAN'S EGGPLANT CORNBREAD DRESSING

My mother got this recipe out of the newspaper in the '80's. It became a family favorite, beating out traditional cornbread stuffing at Thanksgiving and Christmas. If you just *have to have* traditional dressing, incorporate eggplant or squash into it to keep the stuffing from drying out. The eggplant provides moisture, but not much taste. This casserole is all about the cheese and cornbread!

1 eggplant, peeled, cubed, and cooked until soft
2 cups cornbread, cooked and crumbled to coarse crumbs
1/2 cup butter, softened
1 1/2 cups shredded cheddar cheese
1 medium onion, chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup

Steps:

  • Grease a 2 quart casserole dish and set aside.
  • Microwave eggplant until soft. Perhaps 6 minutes. When done, mash to a pulp.
  • Fry the onion in a little butter until soft and translucent.
  • Crumble the cornbread into coarse crumbs.
  • Combine eggplant, onion, butter and cornbread.
  • Stir in the remaining ingredients and pour into a greased casserole dish. Bake at 350F for 45 minutes or until the casserole is "set:" in the middle. ("Set" means a knife inserted in the middle of the casserole comes out clean, but not so well done that the casserole is dry.).
  • This is a very forgiving recipe. Instead of measuring out 2 cups of cornbread crumbs, I usually just crumble up an 8x8 pan of fresh cornbread. You want the mixture to be wet enough to wet all the cornbread crumbs, but not so wet that it won't "set up." If it seems a little dry before baking, add just a little chicken broth or water.
  • I have also used yellow squash or zucchini in place of the eggplant. The prep time can be reduced by using frozen onions in place of fresh. Also, I am just really slow at prep!
