eggplant (aubergine) - 2 large
potato - 3 medium-sized
panch phoran spice mix - 2 tsp
turmeric - 1 tsp
chilli powder - 1 tsp
cooking oil (ghee / peanut oil / olive oil)
salt to taste
coriander for garnishing

Steps:

  • Cut the eggplant in large cubes and soak in salty water for 10 minutes.
  • Peel and cut the potatoes in cubes.
  • Heat cooking oil in a pan, add 2 tsp of panch phoran, and cook for about a minute, until mustard seeds start "jumping". When the mustard seeds start popping, add potatoes, mix it well, so that potatoes are covered in spice. Add eggplants and mix everything again. Cover with the lid and cook for about 15-20 minutes. Stir the vegetables from time to time and check that they do not burn - if necessary, you can add a bit of water.
  • Add turmeric, chilli powder and salt. Mix everything nicely to make sure that the spice is equally spread. Cook for a few more minutes. Your dish is ready to serve - just garnish it with some fresh coriander at the end and enjoy as a side dish or on its own.

2 1/2 cups peeled diced potatoes
3/4 cup vegetable broth
1 tablespoon unsalted butter
1 medium onion, minced
1 tablespoon olive oil
4 cups peeled diced eggplants
1 garlic clove, minced
1 tablespoon flour
3/4 cup milk
1/4 cup grated parmesan cheese

Steps:

  • In a large skillet, combine potatoes and broth: if necessary, season lightly with salt, to taste.
  • Bring to a boil over medium-high heat, cover partially and reduce heat to medium.
  • Cook until potatoes are almost tender and most of liquid has evaporated, about 6 minutes.
  • Transfer to separate bowl and set aside.
  • In same skillet, melt butter over medium heat.
  • Add onion and cook, stirring often, until softened, about 5 minutes.
  • Stir in oil, eggplant, and 2 tablespoons plus 2 teaspoons water: season lightly with salt to taste.
  • Cover, reduce heat to medium-low and cook until eggplant is tender, stirring occasionally, about 5 minutes.
  • Add garlic and flour and cook, stirring, 1 minute.
  • Reduce heat to low, stir in milk and cook uncovered, stirring, 2 minutes.
  • Stir in reserved potato mixture.
  • Cover and cook, stirring occasionally, until hash is thick and saucy, 5-7 minutes.
  • During last minute of cooking, sprinkle cheese over hash.

1 medium eggplant
1 garlic clove, minced
2 tablespoons extra virgin olive oil
3 lbs potatoes
salt
1/3 cup plain yogurt
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 425.
  • Pierce skin of eggplant in multiple places. Place on a baking sheet covered with foil and bake until the skin becomes wrinkled and the flesh becomes tender, around 45 minutes.
  • Cool the eggplant then cut in half lengthwise. Scoop out the flesh and mash in a large bowl with garlic and olive oil.
  • Meanwhile, quarter potatoes and peel them if desired. Boil potatoes with salt until tender, around 40 minutes. Drain and mash them in a large bowl.
  • Add eggplant mixture, yogurt, salt and pepper to potatoes.

ROASTED EGGPLANT (AUBERGINE) AND POTATO SOUP



Roasted Eggplant (Aubergine) and Potato Soup image

This is a nice soothing but robust pureed soup. Its' a perfect "warm me up" dish. I have never measured all the ingredients exactly, but this is how I make it.

1 large eggplant
3 tablespoons butter
1 medium onion, chopped
4 cups sodium-free chicken stock or 4 cups vegetable stock
1 1/2 lbs boiling potatoes, unpeeled and chopped*
1 tablespoon garlic, minced
1 1/2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
salt, to taste
1/2 cup plain yogurt (optional)

Steps:

  • Place oven rack about 10 inches from broiler.
  • Broil eggplant until charred all over, turning as needed. This will take anywhere from 25 to 40 minutes depending on size of eggplant.
  • Let cool, remove skin and coarsely chop.
  • In medium large stockpot, melt butter over medium heat.
  • Saute onions and garlic until soft. DO NOT LET GARLIC BURN.
  • Stir in paprika,pepper,cumin,salt and eggplant.
  • Turn heat to high, and stirring constantly, cook about 2 minutes.
  • Pour in stock and potatoes.
  • Bring to a boil, and reduce to a simmer.
  • Cook until potatoes are fork-tender.
  • Puree in food processor in batches.
  • Re-warm as needed. Serve with some yogurt swirled on top.
  • * If using a blender instead of food processor, make sure you peel the potatoes first and puree in small batches as this is very hot.
