This healthy pumpkin milkshake is like pumpkin pie in a glass! A yummy fall dessert made with frozen yogurt, pumpkin, and warm fall spices.

1/2 cup pumpkin puree (not pumpkin pie filling)
1/4 cup nonfat milk
1/2 medium ripe banana (cut into chunks and frozen (about 1/3 cup))
1 1/2 cups vanilla frozen yogurt (slightly softened)
1 teaspoon pumpkin pie spice (or 1/2 teaspoon cinnamon, plus a pinch each of ginger, nutmeg, and cloves)
1/4 teaspoon ground cinnamon
1 full sheet graham cracker (plus additional for topping)
Whipped cream (optional for topping)

Steps:

  • To a high-powered blender, add in order the pumpkin puree, milk, banana, frozen yogurt, pumpkin pie spice, and cinnamon. Break the sheet of graham cracker into a few pieces directly into the blender. Blend until smooth, adding more milk 1 tablespoon at a time as needed to reach your desired consistency.
  • Divide into glasses and top with additional crushed graham crackers and whipped cream. Sip immediately.

3 egg yolks
1 c sugar
1 c heavy cream
1 c milk
1 can(s) (15 oz) pumpkin puree
2 Tbsp vanilla extract
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg, plus more for garnish
4 jiggers dark rum or brandy (optional)
4 c vanilla ice cream
whipped cream for garnish, i use reddi whip

Steps:

  • 1. Add all the milk shake ingredients except the ice cream into a blender and blend until smooth. Add the ice cream and blend until smooth and thick. Pour into glasses, garnish with whipped cream, ground nutmeg.

1-1/2 cups reduced-fat no-sugar-added vanilla ice cream
1/2 cup fat-free milk
1/4 cup frozen whipped topping
1/8 teaspoon rum extract

Optional: Ground nutmeg and maraschino cherries

Steps:

  • In a blender, combine the first 5 ingredients; cover and process until smooth. Pour into chilled glasses; if desired, top with additional whipped topping, nutmeg and cherries.

Number Of Ingredients 8

One 14-ounce can sweetened condensed milk
1 1/2 cups heavy cream
1 cup pumpkin puree
Pinch ground cloves
8 large egg yolks
1 cup sugar
1/2 cup bourbon
8 ice cubes

Steps:

  • Prepare a bowl set into a large bowl filled with ice and water and set aside.
  • Combine the condensed milk, cream, pumpkin puree and cloves in a medium heavy-bottomed saucepan over medium heat. Cook, whisking, until just below simmering. Place the egg yolks in a bowl and whisk to combine. Slowly add some of the warm cream mixture (about 1/4 cup) to the yolks, whisking constantly (this is called tempering and will prevent the yolks from curdling). Then, whisk the tempered egg yolk mixture into the saucepan. Remove from the heat and cool down by pouring the mixture into the prepared bowl. Stir occasionally, until completely cooled down.
  • Place the mixture into a blender along with the sugar, bourbon and ice cubes. Blend until smooth. To serve, fill rocks glasses with ice and pour the eggnog over.
