6 large eggs
1/2 cup low-fat mayonnaise
2 tablespoons whole-grain mustard
Kosher salt and freshly ground black pepper
2 scallions (white and green), thinly sliced,
1 rib celery, minced, scant 1/2 cup
2 radishes, grated on the large holes of a box grater
8 romaine lettuce leaves
1 cup pea or other sprouts

Steps:

  • Put the eggs in a saucepan with enough cold water to cover. Bring to a boil, cover, and remove from the heat. Set aside for 12 minutes. Drain the eggs and roll them between your palm and the counter to crack the shell, then peel under cool running water.
  • Dice the eggs. Combine the eggs with mayonnaise, mustard and season with the salt and pepper. Stir in the scallions, celery, and radish.
  • Divide the egg salad among the lettuce leaves, top with the sprouts and roll up. Serve 2 rolls per serving.

This is a salad perfect for a light meal on summer evenings when turning on your oven is not a consideration....you can even buy the croutons if you don't want to turn it on at all.

3 slices bread
7 tablespoons olive oil
1 clove garlic
1/2 lb cooked ham
1 head romaine lettuce
4 hardboiled egg, quartered
1/2 pint cherry tomatoes
2 tablespoons lemon juice
1 teaspoon anchovy paste
1/8 teaspoon pepper
2 tablespoons parmesan cheese

Steps:

  • Brush both sides of bread with oil.
  • Toast in 350F oven about 5 minutes a side.
  • Cut garlic in half and rub over both sides.
  • cut toast into 1/2" croutons.
  • Cut ham into matchsticks.
  • Tear lettuce into pieces and put in salad bowl.
  • Top salad with quartered eggs, ham, tomatoes and croutons.
  • Shake lemon juice, anchovy paste, salt and pepper to taste in a small jar.
  • Add 6 Tbs oil and shake again.
  • Pour dressing over salad, toss gently and sprinkle with parmesan Serve.

2 large eggs
4 ounces bacon, cut crosswise into 1/2 inch wide strips (4 to 5 slices)
1 head romaine lettuce, trimmed and cut into bite size pieces (1 1/4 pounds)
2 tablespoons olive oil
1/4 cup finely chopped shallots or 1/4 cup green onion
2 tablespoons red wine vinegar
1/4 teaspoon salt, to taste

Steps:

  • Hard-Boil EGGS: Cover eggs with cold water by 1 inchin a small heavy saucepan and bring to boil, partially cover with lid.
  • Reduce heat to low and cook eggs, cover completely, 10 minutes.
  • Transfer eggs with a slotted spoon to a bowl of cold water to stoping the cooking.
  • Let stand until cool enough to handle.
  • Cook Bacon: While eggs are simmering, Cook bacon in a heavy 10-inch skillet over moderate heat, stirring,until crisp,about 8 minutes.
  • Transfer bacon to paper towels to drain.
  • Leaving rendered fat in skillet.
  • Make Salad: Peel eggs and finely chop.
  • Put Romaine and Eggs in a serving bowl.
  • Add oil and shallots to fat in skillet and cook over moderate heat,stirring,until shallots is softened,about 2 minutes.
  • Add vinegar and salt and boil, swirling skillet,10 seconds.
  • Pour hot dressing over romaine and egg and toss to combine.
  • Add bacon and toss salad, then season with salt and pepper.
  • Serve HOT.

'FANCY' EGG SALAD



'Fancy' Egg Salad image

This recipe dresses up basic egg salad with parsley, capers, shallots and bacon. The writer, David Latt, cooks his eggs on a low, gentle boil for 30 minutes and finds they come out perfectly done, with the yolk flaky, but feel free to use whatever method you like, as long as the eggs are hard-boiled. (We give instructions for boiling and steaming in our guide to cooking eggs.) You can also add other spices: mustard, ground mustard seed, cumin or rosemary. The parsley can be replaced with cilantro, and the mayonnaise can be flavored.
