Salt and pepper
1/2 pound large or jumbo shrimp, peeled and deveined (tails left on)
1/2 loaf rustic bread, crusts removed, cut into 3/4-inch cubes
1 tablespoon olive oil
1/4 cup mayonnaise
2 tablespoon chopped fresh chives
3 to 4 teaspoons lemon juice
4 slices cooked bacon (4 ounces), crumbled
1 romaine lettuce heart, chopped
1 pint large cherry tomatoes, quartered or halved

Steps:

  • Preheat oven to 400 degrees. In a medium pot of boiling salted water, cook shrimp until opaque throughout, 3 to 5 minutes. Drain, then transfer to a paper-towel-lined plate, cover, and chill until ready to serve. On a rimmed baking sheet, toss bread with oil. Bake until golden, about 8 minutes, tossing halfway through.
  • Stir together mayonnaise, chives, and lemon juice to taste; season with salt and pepper. Toss together shrimp, croutons, bacon, lettuce, and tomatoes and serve with dressing.

3 tablespoons butter, softened
3 slices rustic Italian bread
3 slices cheddar or provolone cheese
2 pieces leaf lettuce
3 slices tomato
7 thin slices deli smoked peppered turkey breast
1/2 medium ripe avocado, peeled and sliced
3 tablespoons blue cheese spread
7 thin slices deli oven-roasted chicken
7 thin slices deli ham
5 crisp cooked bacon strips
1 hard-boiled large egg, sliced

Steps:

  • Spread butter over 1 side of each bread slice. Place 1 slice cheese on each unbuttered side of bread. Toast bread slices, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 4-5 minutes., Layer 1 toast with lettuce, tomato, turkey and avocado. Top with another toast and spread with blue cheese spread. Top with chicken, ham, bacon and egg. Top with remaining toast, cheese side down. Cut sandwich in half, secure with toothpicks and serve.

This has always been one of my favorite sandwiches. Growing up on a farm gave me all the riches of good eating.

6 slice(s) bread, any type you like, toasted
1/3 cup(s) mayonnaise
4 slice(s) tomato, cut thick
4 - eggs, hard boiled and chopped
1 tablespoon(s) pickle relish, sweet
6 slice(s) bacon, cooked crisp
1/4 teaspoon(s) paprika, sweet mild
1 bunch(es) watercress

Steps:

  • In a bowl, combine chopped eggs, pickle relish, mayonnaise, crumbled bacon, and paprika
  • Butter toast,
  • Stack sandwich starting with a slice of buttered toast, top with egg mixture, another slice of toast, tomato, and water cress, then top with another slice of toast.
  • This sandwich is delicious served with a half cup of cottage chees on the side and a slice of cantaloupe.

DEVILED EGG SALAD CLUB SANDWICH

8 slices thick-cut bacon
8 large eggs
1/2 cup mayonnaise
1/4 cup finely chopped sweet onion
3 tablespoons sweet relish
1 tablespoon Dijon mustard
1/2 teaspoon paprika
1 celery stalk, very finely chopped
Kosher salt and freshly ground black pepper
12 slices white bread, lightly toasted
About 4 leaves green-leaf lettuce, torn in half
2 medium tomatoes, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a rimmed baking sheet with foil and place a rack on top. Arrange the bacon on the rack in a single layer. Bake until browned and crisp, 20 to 25 minutes. Let cool, then break the bacon in half.
  • Meanwhile place the eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Boil for about 30 seconds, then turn off the heat, cover the pan and let stand 20 minutes. Drain, add cold water and let stand in the cold water for 5 minutes. Drain, peel the eggs and chop.
  • Combine the eggs with the mayonnaise, onion, relish, Dijon, paprika, celery, 1/2 teaspoon salt and pepper to taste in a bowl. Stir, mashing the eggs slightly, until very well combined. Season with additional salt and pepper.
  • Lay out 4 slices of toast and top evenly with half of the egg salad, bacon, lettuce and tomato. Sprinkle the tomato with salt. Add another piece of toast to each and top with the remaining ingredients. Close the sandwiches with the last 4 pieces of toast. Use a sharp knife to trim the crusts from the sandwiches; cut in half diagonally.

1 Tbsp. GREY POUPON Dijon Mustard
1/4 tsp. black pepper
1/4 tsp. dill weed
1/4 tsp. paprika
3 Tbsp. KRAFT Mexican Style Finely Shredded Four Cheese
1/3 cup KRAFT Real Mayo Mayonnaise
1/4 cup KRAFT Real Mayo Mayonnaise
12 slices OSCAR MAYER Bacon, cooked
2 tomatoes, sliced
1 head green leaf lettuce
12 slices white bread, toasted

Steps:

  • In a large bowl, mix together first 11 ingredients. Add mayonnaise.
  • For each sandwich, arrange 3 bread slices in a row. Spread remaining mayonnaise over one side of each bread slice. Place lettuce, tomato slices and bacon strips over the first bread slice. On second bread slice, spoon a layer of ham and egg salad. Top with lettuce and tomato slices. Cover with the third bread slice, mayonnaise side down. Repeat with remaining three sandwiches.
  • Secure the layers with four sandwich picks in a diamond-shaped pattern, and gently cut each sandwich into fourths with a serrated knife.
