EGG NOG MUFFINS
These are always well recieved by family and guests...great way to use up the egg nog. Note: Other items can be added to the batter, like mini chocolate chips, ground macadamian nuts,,etc..

Steps:
- 1. Heat oven to 350^. Line a 12- cup tin with foil inserts and spray the insides. In a small bowl add the egg nog ,rum, and whisk in the self-rising flour. Use a cookie scoop to portion into each cup. Set aside.
- 2. Strusel topping: Combine the flour, sugar and nutmeg. Cut in the cold butter until small pea size crumbs are formed.
- 3. Sprinkle evenly on top of each muffin cup. Bake 18-20 minutes, or until tested done with a tooth pick.

- Preheat oven to 350°F. Fill a 12-cup muffin tin with paper inserts. In a glass measuring container, measure 2 cups of egg nog and whisk in 1 1/2 cups of self-rising flour.
