This easy egg drop soup recipe will taste just like your favorite Chinese restaurant's egg drop soup (maybe a little better). It's delicious, and can be made in minutes.

4 cups chicken stock ((about 1 liter, organic or homemade preferred!))
1/2 teaspoon sesame oil
3/4 teaspoon salt
1/8 teaspoon sugar
1/8 teaspoon white pepper
1/2 teaspoon turmeric
3 tablespoons cornstarch ((mixed with 1/3 cup water))
3 eggs ((lightly beaten))
1 scallion ((chopped))

Steps:

  • Bring the chicken stock to a simmer in a medium soup pot. Stir in the sesame oil, salt, sugar, and white pepper. Add in the turmeric or 5 drops of yellow food coloring, if using. This will give the soup that rich restaurant-style yellow color, but it is optional. Taste the soup, and adjust the seasoning if needed.
  • Next add the cornstarch and water mixture. Make sure the cornstarch and water is mixed well, as the cornstarch settles very quickly. Stir the soup continuously as you drizzle in the slurry, or you'll get clumps of cooked starch in your soup. Use more or less starch if you like a thicker or thinner soup. You can also add the starch in a couple small batches, let the soup simmer for a couple of minutes, then check to see if the consistency is to your liking.
  • Now we're ready for the most exciting part: the egg. This recipe calls for the egg to be lightly beaten, which results in both white and yellow egg swirls. The speed at which you stir the soup when adding the egg also determines whether you get large "egg flowers" or small egg flowers (i.e. swirly bits of egg). Use a ladle to stir the soup in a circular motion, and slowly drizzle in the egg until you have added it all.
  • Ladle the soup into bowls, top with scallions, and serve!

After many many trips to different Chinese restaurants looking for a good bowl of egg drop soup, I decided to take it upon myself to create what I feel is the ultimate in egg drop soup. I hope you enjoy it as much as I do!

1 cup chicken broth
¼ teaspoon soy sauce
¼ teaspoon sesame oil
1 teaspoon cornstarch
2 teaspoons water
1 egg, beaten
1 drop yellow food coloring
1 teaspoon chopped fresh chives
⅛ teaspoon salt
½ teaspoon ground white pepper

Steps:

  • In a small saucepan, combine the chicken broth, soy sauce and sesame oil. Bring to a boil. Stir together the cornstarch and water to dissolve cornstarch; pour into the boiling broth. Stir gently while you pour in the egg and yellow food coloring if using. Season with chives, salt and pepper before serving.

CHINESE EGG DROP SOUP WITH NOODLES

Number Of Ingredients 9

5 cups chicken stock, or 4 cups chicken broth plus 1 cup water
1 teaspoon soy sauce
2 tablespoons medium-dry Sherry
1 (2-inch) piece fresh ginger, thinly sliced
1 garlic clove, smashed
1 cup dried fine egg noodles (1 oz)
2 large eggs, lightly beaten
1 to 2 scallions, thinly sliced
1 1/2 teaspoons Asian sesame oil, or to taste

Steps:

  • Bring stock, soy sauce, Sherry, ginger, and garlic to a boil in a 2-quart heavy saucepan. Remove ginger and garlic with a slotted spoon and discard. Stir in noodles and simmer, uncovered, until tender, about 4 minutes. Stirring soup in a circular motion, add eggs in a slow, steady stream. Simmer, undisturbed, until strands of egg are cooked, about 1 minute. Remove from heat and stir in scallions (to taste) and sesame oil. Season with salt.

POTATO/DROP NOODLE SOUP

This is my Mom's recipe, and it's been a family favorite for decades!!

8 - potatoes, medium (cubed)
1/2 - onion (chopped)
2 teaspoon(s) salt
1/2 gallon milk
1 1/2 cup(s) flour
3 - eggs
2 tablespoon(s) butter
- salt and pepper to taste

Steps:

  • put potatoes and onion and 1 tsp salt in pot and cover with water. bring to a boil
  • while potatoes are cooking, mix flour, eggs and 1 tsp salt together. (noodle mixture)
  • when potatoes are half done, drop noodle mixture by 1/2 spoonfuls into boiling potatoes. cover and cook approx 8 minutes, or until noodles are lumpy and solid.
  • drain all water. add butter to pot. add milk to cover all.
  • salt and pepper to taste. simmer until milk is hot.
  • you can also add ham to the soup, but use less salt as the ham will add some.

EGG DROP RAMEN NOODLE SOUP

So easy and great on a cold day. For a heartier soup, you can add cabbage, carrots and chicken.

6 cups chicken stock
3 cups water
1 tablespoon cornstarch
2 teaspoons Thai-style seasoning blend
1 teaspoon freshly ground white pepper
3 large eggs, lightly beaten
3 (3 ounce) packages chicken-flavored ramen noodles

Steps:

  • Pour chicken stock and water into a large pot and bring to a boil.
  • Remove about 1 cup of the boiling liquid and stir in the cornstarch until dissolved. Add back into the pot and season with Thai seasoning and white pepper.
  • While the liquid is boiling, start stirring it in one direction quickly. When the liquid is moving in one direction, without you stirring it, pour in the eggs.
  • Reduce temperature so liquid is simmering and add ramen noodles (discard flavor packets unless you want extra seasoning. In that case, use as much of the flavor package as you like). Cook until noodles are soft and eggs have cooked through, 2 to 3 minutes.

1/4 cup milk
4 eggs
1/2 tsp cider vinegar
flour
1 tsp salt
1/2 tsp pepper

Steps:

  • Beat eggs and add milk and vinegar. Add just enough flour to make batter a little thicker than pancake batter. Stir in salt and pepper. Dribble batter in small amounts from a spoon into hot potato soup. Do not stir; noodles will form like little dumplings to make a thicker soup base.
