Steps:
- Fold two 18-in.-long pieces of foil into two 18x4-in. strips. Line the sides around the perimeter of a 5-qt. slow cooker with foil strips; spray with cooking spray., In a large skillet, cook and crumble sausage over medium heat; drain. Add sage and fennel., Place waffles in slow cooker; top with sausage. In a bowl, mix eggs, cream, syrup and seasonings. Pour over sausage and waffles. Top with cheese. Cook, covered, on low 5-6 hours or until set. Remove insert and let stand, uncovered, 15 minutes. Serve with additional maple syrup.

- In a small bowl, whisk the eggs, milk and pepper. In a large skillet, heat oil. Add egg mixture; cook and stir over medium heat until eggs are completely set. Stir in cheese and ham. , Spoon egg mixture down the center of each tortilla; roll up. Freeze option: Wrap cooled egg wrap in foil and freeze in a freezer container. To use, thaw in refrigerator overnight. Remove foil; wrap tortilla in a moist paper towel. Microwave on high until heated through, 30-60 seconds. Serve immediately.

A great item to have at any brunch setting. These also work well for breakfast when you have overnight guests. Then reheat well to so you can make a batch on the weekend for the hectic mornings during the work week.

Steps:
- In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. Set aside.
- In same skillet brown and crumble the sausage. Drain well on paper towels.
- In a large bowl, combine the flour, baking powder and salt.
- In another bowl, combine eggs and cheeses.
- Melt remaining butter; add to egg mixture.
- Stir into dry ingredients along with, sausage crumbles, and mushroom mixture.
- Fill greased muffin cups three-fourths full.
- Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean.
- Carefully run a knife around the edge of each muffin cup before removing.
SAUSAGE AND EGG WAFFLE SANDWICH
McDonald's has McGriddles and Burger King has their breakfast sandwiches, so I thought "Why shouldn't I have my own creation?" This is what I came up with. If you try it, I hope you enjoy it. Please feel free to change the type of meat, if desired. Submitted to "ZAAR" on August 16th, 2006.

- Toast waffles (butter if desired).
- Fry sausage patties until desired doneness is reached.
- Scramble eggs until slightly "dry".
- Assemble "sandwich" in this order: waffle butter side up (if buttered), half of the scrambled egg, sausage patty (or other meat), second waffle, buttered side (if buttered) on sausage patty.
