INDIAN BREAD OMELET

2 tablespoon unsalted butter
4 large eggs, beaten
Splash whole milk
Kosher salt and freshly ground black pepper
1 tablespoon canned green chiles, optional
1 tablespoon jarred diced pimientos, optional
2 slices regular white bread
2 slices pepper jack cheese, optional
Ketchup or spicy mustard, for serving, as desired

Steps:

  • Place a large (about 12-inch) nonstick skillet over medium heat, then add the butter and allow it to melt. Meanwhile, mix the eggs, milk, a pinch of salt and pepper, plus the green chiles and pimientos, if using, in a small pitcher. Pour into the skillet. Add the bread to the eggs, quickly coating the first side of the bread in the eggs (as you would French toast), then turn it over, placing it back in the eggs.
  • Allow the eggs to almost set completely, about 2 minutes. Using a spatula, flip the whole omelet over in one motion. Top each piece of bread with the cheese, if using. Fold the side edges of the omelet over the bread, then flip one piece of the bread onto the other, creating a sandwich. Allow the bottom of the sandwich to become toasted and golden, about a minute, then flip the sandwich over and cook until the other side is nice and golden, an additional minute.
  • Remove from the skillet and cut in half. Serve with ketchup or spicy mustard if desired.

1 tablespoon milk
Salt, if desired
Pepper, if desired
1 tablespoon Land O Lakes® Butter
1/2 cup (2 ounces) Land O Lakes® Shredded Mild Cheddar Cheese
Chopped fresh parsley, if desired

Steps:

  • Combine eggs and milk in bowl; beat with fork or whisk until well mixed. Season with salt and pepper, if desired.
  • Melt butter in 8-inch nonstick skillet over medium-high heat until sizzling; pour egg mixture into hot skillet. Cook 30 seconds or until bottom is set. Run heat proof spatula around edge of pan, lifting edges of eggs and allowing uncooked portions to flow underneath. Tilt pan, if necessary. Continue cooking, lifting eggs as needed, 1-2 minutes or until almost set.
  • Remove from heat. Sprinkle cheese over half of omelet. Carefully fold other side of omelet over cheese. Carefully slide omelet onto serving plate. Sprinkle with parsley, if desired.

12 eggs, lightly beaten
3 slices cooked ham, chopped
3 slices cooked turkey meat, chopped
3 green onions, sliced
1 tomato, diced
1 sprig fresh parsley, chopped
½ medium green bell pepper, diced
1 (8 ounce) package shredded Cheddar cheese

Steps:

  • Spray or lightly grease a large skillet and heat over medium heat.
  • Crack 3 eggs into a glass measuring cup and beat with a fork or whisk until scrambled. Pour eggs into heated skillet, swirling the pan to coat the bottom. Cover and let cook until eggs are firm, about 2 minutes.
  • Top with 1/4 each of the chopped ham, turkey, green onions, tomato, parsley, green bell pepper, and Cheddar cheese. Fold egg in half over fillings, and serve warm. Repeat with remaining ingredients for 4 omelets.

½ (1 pound) loaf white bread, cut into cubes
1 ½ pounds Cheddar cheese, shredded
1 cup cubed cooked ham
8 eggs
2 cups milk
1 pinch salt
1 dash hot pepper sauce, or to taste
¼ cup chopped green onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  • Place half of the bread cubes on bottom of baking pan. Sprinkle with half of the ham and then half of the cheese; repeat.
  • In a large bowl, beat together eggs, milk, salt, hot sauce and green onions. Pour egg mixture into pan.
  • Place pan on top of a baking sheet with a rim and place in oven. Pour water into baking sheet and bake for 60 minutes, or until eggs have set.

1 ounce shredded cheddar cheese
1 ounce real butter
1 pinch dill
1 pinch salt and pepper

Steps:

  • In a saucepan melt cheese with 2 eggs until creamy
  • Set aside the egg and cheese mixture.
  • Beat 1 egg with heavy cream and pour into clean pan
  • Add salt and pepper
  • Flip omelet over in pan and add cheese mixture to the omelet
  • Roll up the omelet and set on a plate.
