¼ cup packed brown sugar
1 (15 ounce) can pineapple chunks, drained
2 tablespoons chopped pecans
1 ½ cups biscuit baking mix (such as Bisquick®)
½ cup white sugar
½ cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 egg

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt butter in a 9-inch baking pan in the preheating oven. Remove pan.
  • Sprinkle brown sugar evenly over butter.
  • Arrange pineapple chunks in a single layer over the butter and brown sugar, then sprinkle with pecans; set aside.
  • Beat biscuit baking mix, white sugar, milk, vegetable oil, vanilla extract, and egg together in a large bowl on low speed for 30 seconds, scraping bowl constantly.
  • Increase mixer speed to medium and continue beating until batter is smooth, about 4 minutes more.
  • Slowly pour batter over the pineapple mixture.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes.
  • Run a paring knife between the cake and the edge of the pan to loosen cake. Cover the cake pan with a plate, and invert it to flip the cake out of the pan and onto the plate. Cool at least 10 minutes before serving.

1 1/3 cups cake flour (not self-rising)

Steps:

  • Preheat oven to 350 degrees. Place 4 tablespoons butter in an 8-inch square cake pan. Heat in oven until butter melts, about 4 minutes. Remove from oven; sprinkle brown sugar evenly over butter. Arrange the plum slices like rooftop shingles. Start at one end of the pan, then stagger and overlap the slices so the bottom of the pan is covered.
  • In a large bowl, cream remaining 8 tablespoons butter with sugar and lemon zest. Add eggs, one at a time, beating until combined after each.
  • In a medium bowl, whisk together cake flour, baking powder, salt, and allspice. Add flour mixture to butter mixture in 3 batches, alternating with the milk and starting and ending with the flour.

1 lemon
2 (10-ounce) bags frozen sweet cherries or blueberries (no need to thaw)
2 tablespoons plus 1 cup sugar; plus more for serving
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
3 large eggs, room temperature
2 cups sour cream or whole plain yogurt, room temperature, divided
Special Equipment
1 (9-inch) round cake pan with sides that measure at least 1 1/2-inches high

Steps:

  • Arrange a rack in center of oven; preheat to 425°F. Take this time to assemble all your ingredients and do your prep. Melt 1/2 cup (1 stick) butter in small bowl in a microwave or in a small saucepan over medium heat and let cool. Finely grate zest of whole lemon, then squeeze 2 Tbsp. juice; set aside.
  • Brush 1 Tbsp. melted butter around bottom and sides of cake pan (if you don't have a pastry brush, use your fingertips). Line bottom of pan with a circle of parchment paper, smoothing to eliminate air bubbles between parchment and pan. Making a parchment circle is easy: just place your pan on a piece of parchment, trace the circumference with a pencil, then cut it out.
  • Toss cherries, 2 Tbsp. sugar, 2 Tbsp. lemon juice, and 2 Tbsp. melted butter in cake pan (fruit will clump up when it hits the melted butter, which is fine). It'll all melt together as it bakes.
  • Bake cherries, gently shaking pan once halfway through, until fruit juices are thick and bubbling around sides of pan, 40-50 minutes. Let cool. Reduce oven temperature to 350°F.
  • Whisk 2 cups flour, 2 tsp. baking powder, 1/2 tsp. salt, 1/4 tsp. baking soda, and 1 cup sugar in a large bowl.
  • Make a well in the center of dry ingredients. Beat 3 eggs to blend and pour into center of well along with 1 cup sour cream, 2 tsp. lemon zest, and remaining 5 Tbsp. melted butter (it's okay if butter has re-solidified; go ahead and scrape it in there).
  • Starting in the center, whisk to blend egg mixture, then make larger circles outward to incorporate dry ingredients. Whisk several more times until batter is smooth.
  • Carefully dollop large spoonfuls of batter over fruit (it's okay if pan is still warm and some fruit juices pool around batter); gently smooth surface.
  • Bake cake until top is golden brown and a tester or toothpick inserted into the center comes out clean, 45-55 minutes.
  • Let cake cool in pan 10 minutes, then use a paring knife to loosen cake from edge of pan.
  • Place a wire rack over pan, then swiftly invert rack and pan; cake should release from pan on its own. Lift cake pan off cake, peel off parchment, and marvel at your creation. If some of the cherries cling to the parchment, tuck them back into place. Let cake cool completely.
  • Whisk remaining 1 cup sour cream with 1-2 Tbsp. sugar in a large bowl. Dollop on each slice before serving.

  • Bake as directed on the cake mix package.
  • When done, immediately place a dish on top of baking dish and flip to remove your cake.
  • Tip: When you oil the pan, use a little of the dry cake mix to"flour" the bottom and sides and then return excess to the mix for batter.
  • This way you don't get the white on the outside of your finished cake.

Steps:

  • Pre heat oven to 350° Melt the butter in a cast iron skillet, then add the brown sugar and dissolve. Take off heat and place the chunks on the brown sugar. Sprinkle about 1/2 cup over the top. Put aside
  • Now in a strainer over a bowl, drain the pineapple chunks and save the juice
  • Next, in a large bowl, add the cake mix, eggs, oil and mix until smooth.
  • Then take the pineapple juice you saved and measure in a measuring cup up to a cup and use that instead of water. If not enough juice add enough water to equal 1 cup.
  • Add juice (or water) to the mix and then add the coconut. Mix well . Feel free to up the quantity of the coconut up to scant 2 cups. I usued add an overflowing cup. Mix well until coconut is incorporated.
  • Slowly pour the mix over the brown sugar and pineapple in the pan. Carefully place in the oven. Bake about 40-45 minutes or until a toothpick comes out clean
  • When done, loosen the cake and place a large plate over the cake and flip cake onto the pan. Allow it to remain for a few minutes then remove the pan. Serve warm or room temp

1 c brown sugar, packed
1 can(s) (20-oues) sliced pineapple, drained
mauricio cherries
1-1/2 box super moist yellow cake mix

Steps:

  • 1. Put butter in a 12-inch cast iron skillet. Turn oven to 350° and put skillet with butter in oven while oven heats.
  • 2. While oven is heating, mix cake mixes according to package directions. Set aside.
  • 3. When oven reaches 350° and butter is melted remove skillet from oven and mix in the brown sugar.
  • 4. Add as many pineapple slices as will fit into the bottom of the skillet. Add a Mauricio cherry to the center of each pineapple slice, I like to add extra cherries in spaces between the pineapple slices.
  • 5. Carefully add the cake batter to the skillet, return skillet to 350° oven, and bake for 50 to 60 minutes until a tooth pick inserted into the center of the cake comes out clean.
  • 6. Remove cake from the oven and immediately invert cake on a serving platter.

1 can (20 oz.) DOLE® Pineapple Slices
1/4 cup butter or margarine, melted
2/3 cup packed brown sugar
10 maraschino cherries
1 package (18.25 oz.) yellow or pineapple-flavored
cake mix

Steps:

  • Drain pineapple; reserve 3/4 cup juice.
  • Stir together melted butter and brown sugar in 12-inch skillet with heat-proof handle. Arrange pineapple slices in sugar mixture. Place cherry in center of each pineapple slice.
  • Prepare cake mix according to package directions, replacing water with reserved 3/4 cup juice. Pour batter evenly over pineapple.
  • Bake at 350 degrees F., 40 to 45 minutes or until toothpick inserted in center comes out clean.
  • Cool 5 minutes. Loosen edges and invert onto serving platter.
  • Note: Cake can be baked in 13x9-inch baking pan instead of skillet. Prepare and assemble cake as above except cut two pineapple slices in half and place whole slices along edges of pan and halved slices in center. Place cherries in center of slices. Bake and cool as above.
  • Mini Upside Down Cakes:
  • Drain 1 can (20 oz.) DOLE® Crushed Pineapple, reserve juice.
  • Grease 24 muffin cups. Stir 1/3 cup melted butter with 2/3 cup packed brown sugar.
  • Evenly spoon mixture into bottom of cups; spoon about 1 tablespoon crushed pineapple over sugar mixture.
  • Prepare cake mix as above. Evenly pour batter into cups.
  • Bake 20 to 25 minutes.
  • Invert onto serving platter. Makes 24.
