3 cups water
1-3/4 cups sliced carrots
1/2 cup chopped onion
2 celery ribs, sliced
1 package (12 ounces) frozen egg noodles
3 cups chopped cooked turkey
1 package (10 ounces) frozen peas
2 envelopes chicken gravy mix
1/2 cup cold water

Steps:

  • In a large saucepan, bring the broth, water, carrots, onion and celery to a boil. Reduce heat; cover and simmer for 4-6 minutes or until vegetables are crisp-tender. Add the noodles. Simmer, uncovered, for 20 minutes or until noodles are tender., Stir in turkey and peas. Combine gravy mixes and cold water until smooth; stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

1 (10 ounce) package fresh Baby Spinach
3 tablespoons butter or 3 tablespoons margarine
2 cups onions, chopped
3 tablespoons all-purpose flour
2 1/4 teaspoons curry powder
2 (14 1/2 ounce) cans chicken broth
1 1/2 cups red potatoes, unpeeled and diced
3/4 cup carrot, peeled and diagonally sliced
3/4 cup celery, chopped
2 1/2 teaspoons fresh parsley, chopped
3/4 teaspoon rubbed sage
3 cups cooked turkey, chopped
2 cups half-and-half
1/2 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste

Steps:

  • Remove stems from spinach; wash leaves thoroughly, pat dry. Set aside.
  • In a large Dutch oven, melt butter or margarine over medium heat. Add onion and cook, stirring frequently, until tender. Add flour and curry powder, stirring until smooth. Cook 3 minutes, stirring constantly. Gradually add broth, stirring until blended.
  • Add potato, carrots, celery, parsley, and sage; bring to a boil over medium-high heat, stirring frequently. Cook, stirring constantly, until mixture thickens slightly. Cover, reduce heat, and simmer 15 minutes.
  • Stir in spinach, turkey, half and half, salt, and pepper; cover and simmer 10 minutes, stirring occasionally. Adjust spices to taste before serving.

1 tbsp olive oil
1 large onion, halved and sliced into thin strips
1 red pepper, seeded and sliced into thin strips
2 tsp ground coriander
¼ - ½ tsp chilli flakes
3 tbsp basmati rice or long grain rice
1½ l hot turkey or chicken stock
250g/9oz turkey meat, cut into thin strips (leg meat will have the most flavour)
410g can chickpea, drained and rinsed
a handful of fresh coriander or flatleaf parsley, roughly chopped (optional)

Steps:

  • Heat the oil in a large pan, add the onion and fry for 5 minutes or so, stirring every now and then until it starts to soften.
  • To make the soup, add the red pepper, ground coriander, chilli and rice and stir round the pan for about a minute. Pour in the hot stock, stir in the turkey and chickpeas and season well. Bring to the boil, cover and simmer for 8-10 minutes, until the vegetables and rice are tender. Stir in the coriander or parsley and it's ready. (The soup may now be cooled and frozen for up to 1 month.)

2 (32 ounce) cartons chicken broth
2 lbs turkey breast, cut into 1/2 inch cubes
1/2 medium onion, diced
2 cups diced celery
5 ounces matchstick carrots (1/2 pack)
2 cups cooked rice (avoid quick types of rice, they will get too soggy)
spices (I recommend rosemary and other poultry seasonings)

Steps:

  • Bring the two cartons of broth to a boil and then reduce to med-high heat.
  • Add the cubed turkey and let it cook, stirring often. Add the spices now so it can infuse the broth better.
  • Prepare your rice in a separate pot and time it so it will be ready when the soup is ready.
  • Let the turkey cook for about 20-30 minutes until fully cooked.
  • Add vegetables and cook another 10 minuted until they are tender.
  • Remove from heat.
  • Place 1/2 cup rice in each bowl and then add soup, about 1-2 cups depending on how much you would like.

2 cups of your favorite mushrooms (suggestions ( porcini, shitake, button)
1 stalk celery
1 medium carrot
1 small onion (I love using the pre-chopped frozen stuff for ease of use and no crying)
1 tablespoon margarine or 1 tablespoon butter
4 1/2 cups water
1 tablespoon instant chicken bouillon
1/8 teaspoon pepper
1/2 cup dry orzo pasta (or other small)
1 1/2 cups cooked turkey (you could even use canned chicken or turkey for speedier recipe)
2 tablespoons fresh parsley (or dried if you're indifferent to parsley like I am)
1 teaspoon fresh thyme (see parsley re ( use dried)

Steps:

  • In a large saucepan cook the mushrooms, carrot, celery and onion in the margarine/butter until crisp-tender. Add 4.5 cups of water, the buillon, and 1/8 teaspoon pepper.
  • Bring to a boil and stir in the pasta. After returning to a boil, reduce heat and simmer uncovered for 5-8 minutes. You want the pasta to be still a little firm. Add the turkey, parsley and thyme. EAT! Yummy!

2 -3 cups chopped cooked turkey
2 (3 7/8 ounce) boxes Chicken & Herb Classico Rice-A-Roni, savory whole grain blend
1 (14 1/2 ounce) can chicken broth
1 (10 1/2 ounce) can cream of chicken soup, condensed
1 -1 1/2 cup frozen corn (any variety)
1 cup milk, depending on consistency you like
1 -2 teaspoon dried parsley

Steps:

  • In a large stock pot.
  • Prepare Rice a Roni as instructed on the box (add water as called for, I add a tiny bit of olive oil, not the entire amount that it calls for, you can do either).
  • Once the water has started to boil, and rice is half cooked, I add the rest of my ingredients except the milk and parsley.
  • Let everything come to a low boil and turn on low to simmer for 10-15 minutes or until the rice is completely cooked.
  • The rice will continue to absorb your liquids as it cooks, so right before I'm ready to serve I stir in enough milk to make it the consistency I like for soup (I prefer a thick soup!) and stir in the parsley for some color.
  • Great with warm rolls or crackers!

So, it's four days after Thanksgiving and my leftover turkey is threatening to revolt and turn on me and my mother's in my ear "Make some stock, make some stock!" BAH! So. Soup. It's pretty darn easy, doesn't need much seasoning and is perfect for the After-Thanksgiving Cold that everyone seems to get at the same time. I just made a pot of this and started doling it out.

1 (15 -20 lb) turkey carcass
1/4 cup butter
1/4 cup flour
6 cups roughly chopped pre- cooked turkey
1 lb corkscrew macaroni
1 teaspoon olive oil
2 small onions
2 garlic cloves
1/2 cup white wine

Steps:

  • For the base of your soup, arrange the turkey bones (break them off from the carcass if you need to) in a really big pot, about 8 quart pot ought to do just fine. Cover this with water and bring to a boil. Turn down to a simmer and cook for one hour. By then, the stock should be nice and golden with cooked bits of meat floating hither and yon.
  • Strain, catching all the stock in another pot or bowl big enough to hold it all. Feed bones and leftover meat bits to the ravenous pet doggies staring at you through the glass door.
  • In a smaller pot, melt butter. Slowly add flour, whisking quickly until the creamy mixture starts to bubble. Continue whisking, add some of the turkey stock to the flour/butter mixture until it looks good and cloudy (about 2 or 3 cups). Add this mixture back to the main pot of stock and set aside.
  • Cook pasta according to package directions, strain and set aside.
  • Add olive oil to a big pot. Make sure this pot can hold the stock, turkey and pasta because this is the pot that will be holding it all. About 8 to 10 quarts should do just fine.
  • Chop up the onion roughly and add to olive oil. Cook onion for a few minutes until it's mostly soft, then add the garlic. Cook these two together for another couple minutes then add the white wine (substitute turkey stock). Stand back when you add this because the pan is going to be hot and will probably steam up real big. Since I have a tendency to hover over my pots, I usually get an eyeful of vaporized alcohol and spend the next five minutes cursing my existence and the bottle of cheap wine I used.
  • Stir up all the yummy bits at the bottom of the pan and then add the chopped up turkey. It's not necessary to cook the turkey a second time but I like to warm up the turkey and cook off some of the butter left on the breast or oil in the dark meat and allow the turkey to combine with the onion.
  • Add all of the turkey stock and warm thoroughly, do not boil. Add the cooked pasta.
  • If you like more tender meat in your soup, omit the pasta at the end, throw the whole kit'n kaboodle into a crockpot on low for at least 4 hours, no more than 8. Add the pasta and serve.

1 gal chicken stock

1 Tbsp fresh or dried parsley
1/2 c diced onion

  • 1. In a large stockpot, add butter and melt. Add the onions, carrots, and celery. Saute until almost tender.
  • 2. Add the flour.
  • 3. Brown for a few minutes (like making gravy).
  • 4. Add the stock and stir until the flour is dissolved and the mixture is creamy.
  • 5. Add the salt, pepper, Ramen noodle packs, and seasoning. Cook for a few minutes.
  • 6. Then add the chicken or turkey.
  • 7. Let simmer until the veggies are tender.
