EASY TURKEY AND MUSHROOM MEATLOAF

I'm not a big fan of red meat, but I grew up in an Italian home where meatball style meatloaf was a BIG part of my mom's repertoire. She switched to turkey in the early 90's and it's the only thing I cook with now. This recipe combines my love of turkey meatloaf with my lifestyle as a single city-girl who doesn't want to spend a ton of time in the kitchen. This is soooo yummy, half made-up and half from the ground turkey and stuffing packages.

1 1/2 lbs fresh ground turkey
1 (6 ounce) package stove top monterey style prepared stuffing
1 tablespoon dijon mushroom
1/2 cup onion, chopped (I prefer sweet variety)
1 tablespoon garlic
1/4 cup Italian seasoned breadcrumbs
1 (12 ounce) jar mushroom gravy
3/4 cup of shredded cheese (your choice)
2 eggs, lightly beaten (I also use "fake" eggs)

Steps:

  • Mix all the ingredients together, except 1/2 the jar of gravy and the cheese (put those aside for later).
  • Once all the ingredients are well mixed, spray the bottom of a glass baking dish with Pam or olive oil cooking spray.
  • Put just over half the meat mixture in the bottom of the baking dish and spread out into an even round patty (should look like a really large hamburger patty).
  • Then take a Tablespoon or so of the remaining gravy and spread evenly on top of the patty, with about a half inch perimeter.
  • Take the shredded or sliced cheese and dump onto the patty and"smoosh" it into the meat mixture with the back of a spoon or your hands.
  • Get it in as even a layer as possible, again leaving about a half inch perimeter.
  • Then roll the remaining meat mixture into a ball and lay on top of the patty/cheese/gravy.
  • Smoosh the sides of the bottom layer up to form one solid "dome" of meatloaf and seal in the cheese layer.
  • Cook at 400 degrees Fahrenheit for 30 minutes; add the remaining gravy to the top and put back in the oven for another 15 minutes (or until a fork or toothpick stuck in the center comes out clean).
  • Yummy!

I found this in the RedBook magazine, Feb.2006. It's easy and very tasty. I used 1 lb ground turkey and 1 lb ground chicken. I like the thyme in it.

2 small zucchini, grated
2 lbs ground turkey
1 (6 ounce) can tomato paste
1/2 cup plain breadcrumbs
1 large egg
1 (1/4 ounce) packet onion soup mix
1 tablespoon chopped fresh thyme or 2 teaspoons dried thyme
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350 degree. Spray 9x5x3" glass pan with cooking spray.
  • Combine all ingredients gently until incorporated. Press mixture into dish and shape into a loaf.
  • Bake 70 mins or until it registers 160°F.
  • Let stand 5 min and drain juices.

I love real home-style meatloaf, but have been trying to cut down on beef and have been disappointed with pure turkey meatloafs - this one I invented and it is GOOD!!

1 1/2 lbs ground turkey
1/2-3/4 lean ground beef
1/2-1 cup Italian breadcrumbs
1/2 cup Egg Beaters egg substitute
1 -1 1/2 cup salsa
1/4 cup catsup (or more - if you like catsup - or you could add more salsa and save the salt)

Steps:

  • Mix everything together well and shape into a loaf size- I like to use a larger roasting pan and put diced potatoes around the edges.
  • Roast at 350 for around 1 to 1 1/2 hr- ENJOY!

1 medium red bell pepper, chopped
1/2 large onion, chopped
2 large eggs, beaten
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 c italian bread crumbs
1/2 c milk
2 Tbsp tomato paste
1 1/2 lb ground turkey, not extra lean
1 lb chicken italian sausage, removed from casing
FOR THE GLAZE
3 Tbsp tomato paste
1 Tbsp balsamic vinegar
1 Tbsp honey

Steps:

  • 1. In a large bowl place the meatloaf ingredients (minus the turkey and sausage) and mix well.
  • 2. Add the meats and mix well. I do this with my hands.
  • 3. Place the meatloaf mix in a well greased pan. I line mine with parchment paper. Pat down to shape loaf in to desired shape.
  • 4. Mix the glaze ingredients in a small bowl and frost the top of the meatloaf. Add some extra freshly ground pepper on top if you desire.
  • 5. Bake in a 350 degree oven for 1 hour 30 minutes. Turn up heat to 450 degrees the last 10 minutes to crisp and brown.
  • 6. Remove from oven and rest on a hot pad for at least 20 minutes before slicing.

Fall is approaching quickly and with it brings lots of hearty home cooking like Grandma used to make. This scrumptious easy ground turkey meatloaf is quick to come together and so full of flavor. The simple three ingredient sweet glaze takes this meatloaf over the top and keeps it nice and moist.

2 lb ground turkey
2 clove garlic minced
1 medium onion finely chopped
1 1/2 Tbsp dried oregano
1/2 tsp freshly ground black pepper
1 c fresh breadcrumbs
1 1/4 c kansas city style barbecue sauce
1/3 c ketchup
1 Tbsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350 degrees. Spray large casserole dish with nonstick cooking spray.
  • 2. In a large bowl mix together ground turkey, minced garlic, chopped onion, dried oregano, freshly ground black pepper, bread crumbs, eggs and 3/4 cup barbecue sauce. Using your clean hands or a strong spoon mix until well combined. In a large baking dish shape into a wide loaf as you don't want it too thick.
  • 3. In a small bowl mix together remaining barbecue sauce, ketchup and Worcestershire Sauce. Spread 1/3 of the glaze over the meatloaf and place in the oven. Be sure to wash the spoon afterwards since it touched raw meat. Bake for 40 minutes and then spread another 1/3 of the sauce over the meatloaf. Bake another 20-30 minutes or until internal temperature reaches 160 degrees. Spread the rest of the sauce over the meatloaf and cover loosely with an aluminum foil tent. Let it rest for 10 minutes.
  • 4. There is no salt needed in this recipe since there is a lot of sodium already in the barbecue sauce.

2 eggs
3 slices bread
1 cup onion
1 teaspoon salt
1 teaspoon pepper
7 tablespoons honey-flavored barbecue sauce

Steps:

  • Preheat oven to 350. Chop the onion & shread the bread. Mix the ground turkey, eggs, bread, onion, salt, pepper and 2 tbsn's of barbecue sauce together. Put mixture into a pan and spread the remaining barbecue sauce on top ( I usually eyeball the bbq sauce and don't really measure it out). Cover with aluminum foil and cook for about an hour and a half.

This classic meatloaf is great the next day in saldwiches. Or serve hot with mashed potatoes and Turkey gravy. It's quick because you make it in the blender.

1 pound(s) turkey cutlets
1 large egg
1 small yellow onion, peeled and quartered
1/2 cup(s) fresh white mushrooms, sliced
3 slice(s) stale bread, torn in pieces
1/2 teaspoon(s) dried thyme
1/2 teaspoon(s) paprika
1 1/4 teaspoon(s) worcestershire sauce
1/2 teaspoon(s) celery salt
1 teaspoon(s) ground mustard
5 small sage leaves
1/2 - a cored pear or apple

Steps:

  • Preheat oven to 350^: spray a loaf pan with cooking spray. --- Place all ingredients into your blender or food processor. Press pulse several times until mixture is mostly chopped and to the texture you like.Should be pretty well mixed.
  • Press mixture into prepared loaf pan and bake for 1 hour or unto cooked through. About 5 minutes before removing from oven spread a mixture of 1 Tablespoon brown sugar and 1/4 cup ketchup and pinch of ground mustard over top; bake for 5 minutes.Remove from oven and let set for 3 minutes before cutting. -- Note: If desired you can use 1 pound of ground turkey and mix all together by hand in large bowl.
