1 pound lean ground turkey
1 cup chopped onion, or more to taste
1 medium green bell pepper, seeded and chopped
3 cloves garlic, or more to taste, minced
1 (15.5 ounce) can dark red kidney beans, rinsed and drained
1 (15.5 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can tomato sauce
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, undrained
¼ cup water
2 tablespoons chili powder
1 teaspoon salt, or to taste
1 dash hot pepper sauce, or to taste

Steps:

  • Heat a large nonstick pot over medium-high heat. Cook and stir ground turkey and onion in the hot skillet until browned and crumbly, 8 to 10 minutes. Drain and discard grease. Add bell pepper and garlic; cook for 1 to 2 minutes.
  • Stir in kidney beans, black beans, corn, both cans of tomato sauce, diced tomatoes with juice, water, chili powder, salt, and hot pepper sauce; bring to a boil. Reduce heat to low, cover, and simmer, stirring occasionally, for 20 to 30 minutes.

This is a great recipe I came up with using just stuff we had on hand. You can eat it straight out of a bowl with cheese, onions and sour cream. Or you can top turkey hot dogs to make filling chili dogs. My husband loved it left over on hamburger buns - a la' sloppy joes! Keeps well, and freezes too.

1 lb ground turkey
1 tablespoon olive oil
1 medium white onions or 1 medium yellow onion, chopped
4 cloves garlic, finely minced or 1 teaspoon crushed garlic
1 bay leaf
1 teaspoon chili powder
1/2 teaspoon powdered chipotle pepper or 1/2 teaspoon jalapeno pepper, of your choice
1 teaspoon dried basil
1 teaspoon cajun seasoning
1 (10 ounce) can diced tomatoes with mild green chilies
1 (8 ounce) can tomato sauce or 1 (8 ounce) can tomato paste
1 (12 ounce) bottle favorite light beer or 1 cup dry red wine

Steps:

  • Heat the oil in a large pot or dutch oven (3 qts or larger) over medium/high heat.
  • Add the onions and garlic and cook until onion begin to become translucent.
  • Add the ground turkey and throroughly brown.
  • Add the chili powder, basil, chipolte and cajun seasoning.
  • Mix well.
  • Add the remaining ingredients bring to a rolling boil reduce to medium heat and let simmer for one hour to one and a half hours.

Who doesn't love a bowl of hot chili on a cold fall day? My friend whipped this up in less than a half hour after a quick trip to the grocery story and I was AMAZED by how good it was. The most amazing part is that groceries themselves cost less than $10. Served best with a bit of shredded cheese and a dollop of sour cream and some corn tortilla rounds.

1 tablespoon vegetable oil
2 cloves garlic (minced)
1/2 large onion (coarsely chopped)
1 lb ground turkey
1 (1 1/3 ounce) package chili seasoning mix (generic/store brand worked great for us)
2 (8 ounce) cans tomato sauce
1 (15 ounce) can black beans
1 (14 1/2 ounce) can diced tomatoes (we used diced tomatoes with green chillies)
chili powder, to taste
cayenne pepper, to taste

Steps:

  • In a large pot, over medium-high heat, saute garlic and onion in oil until onions become slightly tender.
  • Add ground turkey, stir occasionally until cooked throughout.
  • Once cooked add remaining ingredients (be sure NOT to drain canned items), stirring after each item is added.
  • Reduce heat and simmer for 15 minutes or so, until heated through and flavors are well blended.

3 slices center cut bacon, cut crosswise into 1/2-inch strips
3 pounds 93% lean ground turkey
4 garlic cloves, chopped
2 jalapeño peppers, minced (seeds removed for less heat)
3 tablespoons chili powder
3 tablespoons cocoa powder
4 teaspoons ground cumin
2 cans (28 ounces each) whole peeled tomatoes in puree
2 tablespoons molasses
1 cup water
4 teaspoons salt
4 cans (15.5 ounces each) pinto beans, drained and rinsed

Steps:

  • Add bacon to dutch oven, or multi-cooker, and cook on medium 6-8 minutes, until crisp.
  • Add onions, garlic and jalapeños. Stirring frequently until softened (about 5 minutes).
  • Add turkey and break up the meat. Cook until browned (about 10 minutes).
  • Add chili powder, cocoa, and cumin. Stir for 1-2 minutes.
  • Break up tomatoes with your hands and add along with remaining puree fro the cans to the pot.
  • Add molasses, water, and salt. Reduce heat to simmer and cook covered for 15 minutes.
  • Add beans. Continue cooking uncovered for 30-45 minutes.
