2 ½ cups chopped cooked turkey
1 (10.75 ounce) can condensed cream of chicken soup
1 (15.5 ounce) can whole kernel corn, drained
1 (14.5 ounce) can sliced carrots, drained
1 (15 ounce) can sliced white potatoes, drained and chopped
¼ cup chicken stock
salt and ground black pepper to taste
2 ¼ cups biscuit baking mix (such as Bisquick®)
⅔ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 9x11-inch baking dish.
  • In a large bowl, gently mix together the cooked turkey, cream of chicken soup, corn, carrots, potatoes, and chicken stock until thoroughly combined. Season to taste with salt and black pepper. Transfer the mixture to the prepared baking dish. In a second bowl, mix the baking mix and milk to form a dough; roll the dough out to a 9x12-inch rectangle on a floured work surface. Place the dough on top of the baking dish.
  • Bake in the preheated oven until the filling is bubbling and the biscuit dough topping is browned, about 25 minutes.

These cookies are cute and easy! Kids love them! Fun to make! I used the refrigerated cookie dough - but you could even buy pre-made sugar cookies and decorate them... We took these to my kids classes for their pre-Thanksgiving party and they were a huge hit! It's probably easiest to just look at the picture to make these rather than follow my directions - but good luck! Enjoy!

1 (18 ounce) roll refrigerated sugar cookie dough
1 (8 ounce) bag candy corn
1 (8 ounce) bag miniature M&M's chocolate candies
2 ounces decorating gel
1 (6 1/2 ounce) can betty crocker decorating icing

Steps:

  • Cut and bake the sugar cookies as directed on the package.
  • Cool.
  • With the can of spray frosting, squirt a line on the top of the cookie that covers about 1/4 of the cookie arc. Place 5-6 candy corn along the frosting row to make the turkey feathers.
  • Next squirt two dots in the middle for the eyes. Top with 2 mini M&Ms of the same color.
  • With the gel frosting, make a "V" for the beak - and then an upside-down "Y" for the feet.
  • Cute!

6 cups unsalted chicken stock or 6 cups water
3/4 cup hulled barley
2 cups sliced fresh mushrooms
1 cup sliced fresh carrot
1 cup sliced celery (include leaves)
1 cup chopped onion
2 teaspoons chicken bouillon granules
1 teaspoon dried thyme
1/4 teaspoon ground black pepper
2 cups diced cooked turkey breast or 2 cups cooked chicken breasts
fresh snipped parsley, for garnish

Steps:

  • Combine the broth or water and the barley in a 3-quart pot, and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 40 minutes, or until the barley is almost tender.
  • Add the mushrooms, carrots, celery, onion, bouillon granules, thyme, pepper and turkey to the pot. Cover and simmer for 20 minutes, or until the barley and vegetables are tender.
  • Ladle the soup into individual serving bowls, and serve hot garnished with fresh snipped parsley.

"A PIECE OF TURKEY" EASY ROASTED THANKSGIVING TURKEY

One 14-pound turkey
3/4 cup kosher salt
2 stalks celery, roughly chopped
1 yellow onion, cut into thick slices
1 container fresh poultry herbs (thyme, rosemary, sage, etc.)
1/2 bulb of garlic, cloves intact
Freshly cracked black pepper
8 tablespoons (1 stick) unsalted butter, cut into tablespoon-size pats

Steps:

  • Ask your butcher to cut the turkey into pieces: legs, thighs and wings separate and an attached double breast. Put the pieces skin-side up on a wire-racked roasting pan and thoroughly rub the kosher salt under and over the skin. Leave lightly covered in the fridge for 2 days, but as all dry-brining methods go, uncover for the last 6 to 8 hours to "dry out" the skin.
  • When ready to roast, preheat the oven to 450 degrees F.
  • Put the turkey pieces skin-side up in the roasting pan (no rack), then arrange the celery, onions, herbs and garlic in between the pieces. Season with freshly cracked pepper and dot everything, especially the turkey skin, with tablespoon-size pats of butter.
  • Roast the turkey for 30 minutes, then lower the temperature to 325 degrees F and continue to cook until the breast registers 165 degrees F on an instant-read thermometer, another 45 minutes to 1 hour. Let rest, uncovered, for at least 20 minutes before serving.
  • I recommend traditionally carving the breast, hand-shredding the thighs and serving the other pieces on the side.

This easy roast turkey recipe with sage and onion butter and a rich gravy won't let you down on the big day, perfect for feeding a crowd on Thanksgiving

7kg/15lb 4oz fresh turkey
2 onions , halved
1 lemon , quartered
75g soft butter
3 tbsp finely chopped fresh sage
2 tbsp plain flour
200ml marsala wine or Madeira
400-500ml/14fl oz-18fl oz hot chicken stock
1 tbsp cranberry jelly

Steps:

  • Heat oven to 170C/150C fan/gas 3-4 and place the turkey in a large roasting tin. Tuck 3 of the onion halves and the lemon quarters into the cavity and season. Cover with foil, make sure there's plenty of space between the turkey and foil for the air to circulate and seal the edges tightly so that no steam escapes. Roast for 4 hrs.
  • Meanwhile, finely chop the remaining onion half, and mix with the butter and sage. Take the turkey out of the oven and raise the temp to 200C/180C fan/ gas 6. Brush the sage and onion butter all over the turkey and return to the oven, uncovered, for 45 mins until crisp and dark golden. If you're making the roasties, then start them in the oven when the turkey goes back in, uncovered.
  • Transfer the turkey to a warm serving plate, cover loosely with foil and leave to rest for 30 mins. Tip the juices out of the pan into a bowl, leave for a moment to settle, then scoop the buttery oil from the surface into a separate bowl. Spoon 2 tbsp of this oil back into the tin and return to the heat.
  • Stir the flour into the tin using a wooden spoon, scraping the residue off the bottom of the tin as you go. Cook for 2 mins, then stir in the Marsala or Madeira and bring to the boil. Make the reserved turkey juices up to 500ml using hot chicken stock and pour into the tin. Bring to the boil and simmer for a few mins, then add cranberry jelly. Keep warm until ready to serve.
