1 tablespoon butter
½ pound ground beef
½ cup chopped onion
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can diced tomatoes
¼ cup vegetable oil
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup milk
½ cup yellow cornmeal
2 eggs
1 (6 ounce) can black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch baking or casserole dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Mix in corn, tomatoes, oil, chili powder, and cumin. Bring to a boil; remove from heat.
  • Combine milk, cornmeal, and eggs in a large bowl. Stir in meat mixture. Mix in olives. Pour into the prepared baking dish.
  • Bake in the preheated oven until golden and set, 50 to 60 minutes; mixture should not be mushy.

1 pound ground beef
1/4 pound bulk pork sausage
1/4 cup chopped onion
1 garlic clove, minced
1 can (14-1/2 ounces) stewed tomatoes, drained
1 can (11 ounces) whole kernel corn, drained
1 can (6 ounces) tomato paste
1/4 cup sliced ripe olives
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1 large egg
1/3 cup 2% milk
1 package (8-1/2 ounces) cornbread/muffin mix
Dash paprika
1/2 cup shredded cheddar cheese

Steps:

  • Combine the beef, sausage, onion and garlic in a 3-qt. microwave-safe dish. Cover and microwave on high for 4-5 minutes, stirring once to crumble meat. Drain. Add the tomatoes, corn, tomato paste, olives, chili powder and salt; mix well. Cover and microwave on high for 4-6 minutes or until heated through., Whisk egg in a large bowl; add milk and cornbread mix. Stir just until moistened. Spoon over meat mixture; sprinkle with paprika., Microwave, uncovered, on high for 14-16 minutes or until a toothpick inserted in the center of the cornbread comes out clean. Sprinkle with cheese.

1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt

1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (11 ounces) whole kernel corn, drained
1 can (10 ounces) enchilada sauce
2 green onions, chopped
1/4 cup minced fresh cilantro
1 package (8-1/2 ounces) cornbread/muffin mix
2 large eggs, lightly beaten
1 cup shredded Mexican cheese blend
Optional toppings: Sour cream, salsa and minced fresh cilantro

Steps:

  • In a large skillet, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking it into crumbles. Stir in seasonings., Transfer to a 4-qt. slow cooker. Stir in beans, tomatoes, corn, enchilada sauce, green onions and cilantro. ⅔ cup milk
2 large eggs
1 teaspoon olive oil
1 cup chopped white onion
2 pounds ground chicken
1 cup chopped roasted poblano peppers
2 tablespoons chili powder
1 tablespoon ground cumin
1 clove garlic, diced
1 (15 ounce) can diced tomatoes

When everyone's starved, and I'm just not in the mood to cook, this tamale pie is the easiest thing to whip together and bake. It can be made spicy or mild to taste, depending on what type of salsa you use. This is the basic recipe, which is quite good buy itself, but you can also doctor it up by adding a couple of sliced jalapeno's or 1/3 a cup of black olives or even creamed corn to the cornbread.

1 lb ground beef
1 medium yellow onion
1/4 teaspoon garlic salt, to taste
1 (16 ounce) can of your favorite salsa, we like medium hot
1 (16 ounce) can refried beans
1 (8 1/2 ounce) package Jiffy cornbread mix
1 egg
1/3 cup milk

Steps:

  • Preheat oven to 350°F.
  • Prepare cornbread mix according to package.
  • In a medium large skillet over medium high heat, saute onions until translucent.
  • Add beef, and saute until browned.
  • Stir salsa and beans into beef, and cook over medium to medium high heat until bubbling and starting to thicken.
  • Stir as necessary while it cooks.
  • Pour beef mixture into 9x9 casserole (be warned, a pie dish is slightly too small for this recipe!).
  • Pour cornbread mixture over beef.
  • Bake in 350°F oven uncovered for 30-35 minutes, or until cornbread is cooked and starting to brown.

1 3/4 cup grated Mexican style cheese, divided
1/3 cup milk
1 egg
1 (15.25ounce) can corn, drained
1 (4.5 ounce ) can green chiles drained I chopped
1 (1 oz package) taco seasoning
1 (8.5 ounce package) corn muffin mix
1 pound ground turkey ( I used ground chicken)
1 (15.5 oz) can black beans, drained and
rinsed
10 ounces red enchilada sauce

Steps:

  • Preheat oven to 350 Coat a 10 inch iron skillet or oven proof skillet with cooking spray. Set aside. In a large bowl combine 3/4 cup cheese, milk, egg, corn, green chiles, taco seasoning and muffin mix. Stir until combined. Spread this mixture into the prepared skillet and bake 15 minutes, or until the center is set Meanwhile in another skillet cook the ground chicken on medium het until it's done and no pink remains. Add in the black beans and cook until heated through, 2-3 minutes. Add the enchilada sauce to the mix and stir to combine. Remove from the heat until ready to use. When the corn muffin mixture is set use a fork to liberally poke holes across the entire surface. Pour the chicken mixture on top of the corn Sprinkle the remaining cheese on top and bake for an additional 15 minutes, or until the cheese is melted. Serve immediately with sour cream, avocado, tomato and lettuce, if desired

1/2 cup milk
1 large egg
2 tablespoons vegetable oil, divided
1 pound lean ground beef
1/2 cup onion, finely chopped
1 package (1 oz.) taco seasoning mix
1 can (14.5 oz) diced tomatoes in puree
1 can (4.5 oz) chopped green chilies, drained
1 can (14.5) ounces black beans, drained
1 cup frozen corn
2 cups Cache Valley Four Cheese Mexican shredded cheddar cheese blend
2 tablespoons finely chopped parsley for garnish, optional

Steps:

  • Preheat oven to 400°.
  • In a mixing bowl, stir together the corn muffin mix, milk, and egg just until blended-the batter will be lumpy.
  • Coat the inside of a large 12-inch cast iron skillet with 1 tablespoon vegetable oil. Spoon batter into cast iron skillet. Set aside.
  • Add ground beef to a second skillet and cook over medium-high heat, stirring occasionally to break up the meat, until the beef is no longer pink. Remove beef to a plate lined with paper towels.
  • Add remaining tablespoon of oil and onion to the skillet, sauté until onion is tender, about 3 minutes. Add ground beef and seasoning packet and sauté 1 minute.
  • Stir in tomatoes, chilies, beans, and corn. Spoon mixture gently on top of the cornbread batter in the cast iron skillet.
  • Sprinkle cheese on top of tamale pie. Cover with foil and bake 25 minutes. Remove foil and broil until cheese begins to brown, about 5 minutes. Sprinkle parsley on top before serving.

6 ounces mexican style cornbread mix

Steps:

  • Preheat oven to 375. In large skillet, brown ground beef, onion and garlic over medium high heat until meat is brown and onion is tender; drain. Reduce heat to medium low. Stir in corn, tomato sauce, green chilies, chile powder and salt. Remove from heat.
  • In small bowl beat sour cream and egg until well blended. Stir in 1 cup cheese. Combine sour cream mixture with ground beef mixture. Spoon into lightly greased 9x13 pan.
  • In medium bowl, prepare corn bread mix according to package directions. spread corn bread batter ovedr casserole. Sprinkle with remaining 1 cup cheese. Bake, uncovered, 30 minutes or until heated through and corn bread topping is golden brown. serve warm.
