- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch baking or casserole dish.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Mix in corn, tomatoes, oil, chili powder, and cumin. Bring to a boil; remove from heat.
- Combine milk, cornmeal, and eggs in a large bowl. Stir in meat mixture. Mix in olives. Pour into the prepared baking dish.
- Bake in the preheated oven until golden and set, 50 to 60 minutes; mixture should not be mushy.

- Combine the beef, sausage, onion and garlic in a 3-qt. microwave-safe dish. Cover and microwave on high for 4-5 minutes, stirring once to crumble meat. Drain. Add the tomatoes, corn, tomato paste, olives, chili powder and salt; mix well. Cover and microwave on high for 4-6 minutes or until heated through., Whisk egg in a large bowl; add milk and cornbread mix. Stir just until moistened. - Preheat the oven to 400 degrees F (200 degrees C).
- Stir cornbread mix, milk, and eggs together in a bowl; batter will be slightly lumpy. Set aside.
- Heat oil in a large skillet over medium heat. Add onion and saute for about 1 minute. Add chicken, poblano peppers, chili powder, cumin, and garlic. Cook and stir until chicken is crumbly and browned, 5 to 7 minutes.

AWESOME EASY TAMALE PIE
When everyone's starved, and I'm just not in the mood to cook, this tamale pie is the easiest thing to whip together and bake. It can be made spicy or mild to taste, depending on what type of salsa you use. This is the basic recipe, which is quite good buy itself, but you can also doctor it up by adding a couple of sliced jalapeno's or 1/3 a cup of black olives or even creamed corn to the cornbread.

- Preheat oven to 350°F.
- Prepare cornbread mix according to package.
- In a medium large skillet over medium high heat, saute onions until translucent.
- Add beef, and saute until browned.
- Stir salsa and beans into beef, and cook over medium to medium high heat until bubbling and starting to thicken.
- Stir as necessary while it cooks.
- Pour beef mixture into 9x9 casserole (be warned, a pie dish is slightly too small for this recipe!).
- Pour cornbread mixture over beef.

- Preheat oven to 350 Coat a 10 inch iron skillet or oven proof skillet with cooking spray. Set aside. In a large bowl combine 3/4 cup cheese, milk, egg, corn, green chiles, taco seasoning and muffin mix. Stir until combined. Spread this mixture into the prepared skillet and bake 15 minutes, or until the center is set Meanwhile in another skillet cook the ground chicken on medium het until it's done and no pink remains. Add in the black beans and cook until heated through, 2-3 minutes. Add the enchilada sauce to the mix and stir to combine. Remove from the heat until ready to use. When the corn muffin mixture is set use a fork to liberally poke holes across the entire surface. Pour the chicken mixture on top of the corn Sprinkle the remaining cheese on top and bake for an additional 15 minutes, or until the cheese is melted. - Preheat oven to 400°.
- In a mixing bowl, stir together the corn muffin mix, milk, and egg just until blended-the batter will be lumpy.
- Coat the inside of a large 12-inch cast iron skillet with 1 tablespoon vegetable oil. Spoon batter into cast iron skillet. Set aside.
- Add ground beef to a second skillet and cook over medium-high heat, stirring occasionally to break up the meat, until the beef is no longer pink. Remove beef to a plate lined with paper towels.
- Add remaining tablespoon of oil and onion to the skillet, sauté until onion is tender, about 3 minutes. Add ground beef and seasoning packet and sauté 1 minute.
- Stir in tomatoes, chilies, beans, and corn. Spoon mixture gently on top of the cornbread batter in the cast iron skillet.
- Sprinkle cheese on top of tamale pie. Cover with foil and bake 25 minutes. Remove foil and broil until cheese begins to brown, about 5 minutes. Sprinkle parsley on top before serving.

- Preheat oven to 375. In large skillet, brown ground beef, onion and garlic over medium high heat until meat is brown and onion is tender; drain. Reduce heat to medium low. Stir in corn, tomato sauce, green chilies, chile powder and salt. Remove from heat.
