The owner of a local Christian bookstore, gave me this recipe several years ago. It's SO good, and quick to make. And it tastes like you've been working on it all day! :)

Number Of Ingredients 10

1 to 1-1/2 lb ground beef
1 tsp minced garlic
1 tsp cumin
3 Tbsp minced onion (or 1 onion, chopped)
2 can(s) minestrone soup (regular size)
1 can(s) ranch style beans
1 can(s) rotel tomatoes
1 can(s) beef broth
salt & pepper, to taste
1 to 1-1/2 c medium-sized pasta shells (optional)

Steps:

  • 1. Brown ground beef with minced garlic, cumin and onion. Drain.
  • 2. Add all other ingredients. (Don't drain any of the canned ingredients). May wish to add 2 or 3 cans full of water.
  • 3. Heat through, and serve with shredded cheddar cheese and cornbread! SO DELICIOUS! :)
  • 4. Note: My family likes extra pasta, so I add 1-1/2 cups medium-sized pasta shells to this soup and boil until pasta is tender (about 10 minutes or longer). If you add pasta shells to this soup, you'll need to add extra water.
  • 5. Great tasting soup, immediately after heating through. But, even more delicious on the second day! :)

1 pkg. Jimmy Dean Hot or Regular Sausage
1 Medium Sweet Onion
2 Cans Ortega Diced Fire Roasted Chilies
1 Bag Frozen Corn, 32 oz.
1 Can Hunts Diced Tomatoes, Fire Roasted or other
1 Can Swanson's Chicken Broth, 49 oz. can
Sour Cream

Steps:

  • - Peel and dice onion. - Open package of sausage and brown in large soup pot with onions; cook about 10 minutes on medium heat. - Drain grease, if any. - Open and add: chilies, corn, tomatoes & chicken broth. - Let it heat and cook 15 minutes. - Laddle into bowls and add a dollop of sour cream to center of bowl. - Serve with some good crusty bread.
