2 packages (6 ounces each) fresh baby spinach
3 tablespoons sherry or reduced-sodium chicken broth
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon pine nuts

Steps:

  • In a large nonstick skillet coated with cooking spray, saute onion until tender. Add garlic; cook 1 minute longer. Stir in the spinach, sherry, salt and pepper; cook and stir for 4-5 minutes or until spinach is wilted. Sprinkle with pine nuts.

1 (10 ounce) bag spinach leaves
1 ½ teaspoons garlic salt
¼ cup grated Parmesan cheese

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the spinach to the skillet and cover; allow to cook 5 minutes. Stir in the garlic salt and cover again for another 5 minutes; remove from heat. Sprinkle with Parmesan cheese to serve.

If you haven't cooked with fresh spinach before you will be amazed at how easy it is to cook and how much better it tastes than frozen or canned. The dish can easily be multiplied, as long as you have a pan big enough to hold the raw spinach.

1 lb fresh spinach, washed
2 -3 tablespoons extra virgin olive oil
1/2-1 teaspoon minced garlic, to taste (I use the kind in a jar)

Steps:

  • In a pan large enough to hold the spinach, put olive oil and garlic, over medium heat.
  • add spinach immediately and saute, moving the cooked spinach from the bottom up to keep things cooking evenly.
  • when all of the spinach is wilted and the stems are tender, it's done.
  • do not let the garlic brown or it will get bitter.
