I received this recipe from my mother years ago, and it's been a family favorite ever since. Pork sausage really bulks up ordinary rice pilaf for fantastic flavor.

1/2 pound bulk pork sausage
1 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/4 cups milk
1 jar (2 ounces) diced pimientos, drained
1/2 cup uncooked long grain rice
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
1 cup soft bread crumbs
2 tablespoons butter, melted

Steps:

  • In a skillet, cook sausage, celery, onion and green pepper until sausage is no longer pink and vegetables are tender; drain. stir in soup, milk, pimientos, rice, poultry seasoning and salt. , Pour into an ungreased 1-1/2-qt. baking dish. Cover and bake at 350° for 50 minutes, stirring occasionally. , Combine bread crumbs and butter; sprinkle on top. Bake, uncovered, 20 minutes more.

2 pounds bulk Italian sausage
1 large onion, chopped
1 jar (6 ounces) sliced mushrooms, drained
2 cups uncooked long grain rice
2 cans (10-1/2 ounces each) condensed beef consomme, undiluted
2 cups water
2 teaspoons dried oregano
Grated Parmesan cheese, optional

Steps:

  • In a large skillet over medium heat, brown sausage; drain. Add onion and mushrooms; saute until onion is tender. Add rice, consomme, water and oregano; mix well. Transfer to an ungreased 13-in. x 9-in. baking dish. Cover and bake at 350° for 55-60 minutes or until rice is tender, stirring once. Sprinkle with Parmesan cheese if desired.

CHICKPEA & COURGETTE PILAF

Make our pilaf with lemon, courgette and chickpeas for an easy vegetarian midweek meal. Flavour with cinnamon, cumin and coriander if you have them in your storecupboard

Number Of Ingredients 11

4 tbsp vegetable oil sunflower oil or olive oil, plus a splash
1 onion, finely chopped
4 garlic cloves, finely chopped
½ tsp ground cinnamon (optional)
2 tsp ground cumin
300g long-grain rice
1 lemon, zested and juiced
2 medium courgettes (about 300g), cut into 1cm slices
2 x 400g cans chickpeas, drained
small bunch of dill, roughly chopped, or use mint or parsley
pinch of chilli flakes, or to taste (optional)

Steps:

  • Heat 2 tbsp of the oil in a pan over a medium heat and cook the onion for 8-10 mins until softened. Add the garlic and spices, and cook for 2 mins more until fragrant. Tip in the rice and 450ml boiling water from the kettle along with the lemon zest and ½ tsp salt. Cover, reduce the heat to medium-low and cook for 20 mins, or until all the water has been absorbed and the rice is cooked through. This process can also be done in the oven: cook everything in a flameproof casserole and transfer to the oven once the rice and water has been added, covering and cooking for 20-25 mins at 190C/170C fan/gas 5.
  • Heat the rest of the oil in a second pan over a medium-high heat and fry the courgette slices for 4 mins until slightly coloured and the edges are just softened. Stir in the chickpeas and cook for 2 mins more until warmed through. Season well.
  • When the rice is cooked through, add half the lemon juice and fluff up the rice with a fork. Add the chilli flakes, if using, and chopped dill to the courgette and chickpea mixture. Season well. Stir in the remaining lemon juice and a splash more oil. Serve the rice with the courgettes.

Sausage & herb stuffed courgettes image

Everyone will love these cheesy stuffed courgettes with parsley and sausagemeat

4 large courgettes , halved lengthways
2 tbsp olive oil
1 onion , finely chopped
1 garlic clove , finely chopped
100g breadcrumb
100g mature cheddar , grated
25g finely chopped flat-leaf parsley
175g Cumberland pork chipolata , squeezed from their skins
salad , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Using a teaspoon, scoop out the flesh from the courgettes, then roughly chop.
  • Heat the oil in a large frying pan and cook the onion for 6-8 mins until soft. Stir in the garlic and cook for 1 min more. Add the chopped courgette and cook for a further 6 mins until really tender.
  • Remove from the heat and tip into a bowl along with the breadcrumbs, cheese, parsley and the sausagemeat. Mix together well.
  • Spoon the mixture into the hollowed out courgette halves and place on a baking sheet. Bake for 25-30 mins - cover towards the end if browning - until the courgettes are tender and the filling is golden. Serve with a salad, if you like.

This is a spicy, flavorful side dish that is great to take to a potluck! If you want to cut down on the "heat" you can used "regular" or "mild" breakfast sausage.

1 lb hot pork sausage
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
1 cup finely chopped celery
1 can cream of mushroom soup
1 cup raw white rice, cooked separately

Steps:

  • Cook rice separately.
  • Cook sausage over low heat in a large skillet; Drain.
  • To the same skillet, add onions, green bell peppers, and celery.
  • Cook for 5 minutes.
  • Stir in soup and cooked rice.
  • Pour into a greased casserole dish.
  • Cover and bake at 250°F for about 30 minutes or until heated through.
