Easy Stuffed Peppers image

Tender bell peppers stuffed with a zesty beef and rice filling with tomato sauce are baked until bubbly.

6 bell peppers
½ pound lean ground beef
½ pound Italian sausage
1 small onion (diced)
2 cloves garlic (minced)
1 can small diced tomatoes (14 ½ ounces)
½ cup white rice (uncooked)
1 ¼ cup water
1 tablespoon Worcestershire sauce
½ teaspoon Italian seasoning
2 ½ cups marinara sauce (divided)
½ cup cheddar cheese (shredded)

Steps:

  • Preheat oven to 350°F.
  • Cut the tops off the peppers (reserve the tops), remove seeds and membranes and discard. Chop tops of the peppers to add to the filling.
  • Bring a large pot of water to a boil and cook peppers 5 minutes. Remove and drain well.
  • In a large skillet, brown beef, sausage, onion & garlic over medium high heat until no pink remains. Drain any fat.
  • Stir in the diced tomatoes with juice, rice, 1 ¼ cup water, diced pepper tops, Worcestershire sauce, and Italian seasoning.
  • Bring to a simmer, reduce heat and cover. Cook 15-20 minutes or until rice is tender. You can add more water if needed. Stir in ½ cup marinara sauce.
  • Place 1 ½ cups of marinara sauce in the bottom of a 9x13 pan. Fill each pepper with the rice mixture. Spoon remaining marinara sauce over peppers.
  • Cover with foil and bake 35 minutes. Remove foil, baste peppers with any sauce in the bottom. Top with cheddar and bake an additional 10 minutes or until cheese is melted and peppers are tender.

1 lb lean ground beef
1 1/2 cups thick and chunky style salsa
1 pkg (10 oz) frozen whole kernel corn
4 green bell peppers, tops and seeds removed
1/2 cup shredded Colby cheese
1/2 cup shredded Monterey Jack cheese

  • Preheat oven to 350°F. Prepare rice according to package directions. Step 2
  • Heat oil in a large, nonstick skillet over high heat. Add beef and brown, undisturbed, about 5 minutes. Then, break up with a spoon and continue to cook for an additional 5 minutes, or until cooked through. Drain off excess fat. Stir in salsa, corn and rice. Step 3
  • Pierce peppers with a fork or sharp knife and stand up in a small casserole dish. Fill each pepper with the meat mixture. Step 4

6 large bell peppers, any color
1 lb ground beef
2 c cooked rice (i use brown rice)
2 c mild chunky salsa
1 1/2 c frozen whole kernel corn, thawed
1 can(s) black beans, drained & rinsed
1 large avocado, peeled, pitted and diced small
2 c shredded monterrey jack cheese
1/2 tsp cilantro, dried
1/2 tsp chili powder
1/8 tsp garlic powder

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cut the stem end of the peppers to remove a thin cap.
  • 3. Carefully remove the seeds and membranes. Rinse the peppers and dry. * If needed very thinly slice the bottoms so the pepper will stand up.
  • 4. Place the beef in a skillet and brown it, stirring to break it up as you do. Thoroughly drain the grease. Return the beef to the skillet.
  • 5. Add the garlic powder, chili powder and cilantro. Stir to mix well. Cook 2 minutes and remove from heat.
  • 6. Add the salsa, corn, black beans and rice. Mix well.
  • 7. Gently stir in avocado. Add the cheese and stir to mix.
  • 8. Place the peppers in a baking dish. Even fill each with the beef mixture.
  • 9. Cover with foil and bake 20 minutes.
  • 10. Uncover and bake for 10 more minutes or until the peppers are tender.

1 pkg. (6 oz.) STOVE TOP Cornbread Stuffing Mix
2 eggs, beaten
1-1/2 cups TACO BELL® Thick & Chunky Salsa, divided
4 large green peppers, cut lengthwise in half, seeded
1 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses

Steps:

  • Heat oven to 425°F.
  • Brown meat in skillet. Meanwhile, prepare stuffing as directed on package. Combine meat, stuffing, eggs and 3/4 cup salsa.
