This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley.

Number Of Ingredients 9

12 ounces skinless boneless salmon (sold in 6 oz cans or packets)
1/2 medium onion, chopped
1/2 cup breadcrumbs, seasoned or 1/2 cup breadcrumbs, plain
1/4 cup chopped parsley (optional)
2 eggs, beaten
2 tablespoons unsalted butter
3 tablespoons olive oil
salt
pepper

Steps:

  • Saute onions in 1 TBS olive oil until cooked through but not brown.
  • Drain liquid from the salmon.
  • Combine salmon, sauteed onion, breadcrumbs (parsley if you use plain breadcrumbs), eggs, salt, and pepper.
  • Form mixture into patties.
  • Melt butter and oil in a pan.
  • Brown salmon patties on both sides (about 4-5 minutes per side).
  • Place cooked patties on a paper towl to absorb excess oil.

1 (15 ounce) can salmon, drained and liquid reserved
⅓ cup chopped onion
1 egg
½ cup all-purpose flour, or more as needed
1 ½ teaspoons baking powder
2 cups shortening, or more as needed
¼ cup cornmeal, or as needed

Steps:

  • Mix salmon, onion, and egg together in a bowl; stir in flour. Stir baking powder and 2 tablespoons reserved salmon liquid together in a separate bowl; stir into salmon mixture until mixture holds together when shaped. Add more flour if mixture is too soft. Add more reserved salmon liquid if mixture is too firm. Shape salmon mixture into small patties.
  • Heat shortening in a skillet over medium heat.
  • Spread cornmeal into a shallow bowl and press patties into cornmeal until evenly coated on both sides.
  • Fry patties in the hot shortening until golden brown, about 5 minutes per side. Transfer patties to a paper towel-lined plate using a slotted spoon.

I have used this recipe for many years and my family loves it, especially my husband. I think I got the recipe off of a crisco can when they still used paper wrapping on the cans.

Number Of Ingredients 6

1 (16 ounce) can pink salmon
1 egg
1/3 cup minced onion
1/2 cup flour
1 1/2 teaspoons baking powder
1 1/2 cups Crisco (or preferred cooking oil)

Steps:

  • Drain salmon; set aside 2 TBSP of the juice.
  • In a medium mixing bowl, mix salmon, egg and onion until sticky.
  • Stir in flour.
  • Add baking powder to salmon juice and stir into salmon mixture.
  • (Don't mix baking powder and juice and add until you are ready to start cooking the patties, otherwise it will become flat).
  • Form into small patties and fry until golden brown (about 5 minutes) in hot crisco.
  • Serve with tartar sauce (optional).

These are the best I've ever eaten .. and they are quick.

l large can of boneless pink salmon ( or 3 small cans)
8-10 crushed townhouse crackers (or crackers of your choice)
2 large eggs beaten
2 tbs salad dressing or mayo ( your choice)
3 tbs milk
1 tbs lemon juice
dash or two of dillweed (optional)
dash or two of garlic powder
salt/pepper to taste or diet
sauce: 1 can of condensed cream of mushroom or celery soup with 2/3 can of milk
optional topping: 1/4 cheese slice ( of your choice)

Steps:

  • 1. Begin by adding salmon in large bowl and breaking up with fork until fine . Add all ingredients one by one mixing well.
  • 2. Form 5 patties
  • 3. Add 3 tbs cooking oil to skillet .. once hot .. add patties ... fry until both side are a nice crisp brown .. remove from skillet .. set aside.
  • 4. In separate pan add can of cream of celery or mushroom soup using only 2/3 can of milk .. heat until soup begins to bubble .. turn off heat. Spoon over patties .
  • 5. Optional: lay 1/4 cheese slice over hot patties.

Yummy Salmon Patties With Easy Sauce image

The base of this recipe comes from an old GH cookbook. I've added other ingredients for presentation (color) and as a trick to sneak more veggies into my kids' food. I use Kirkland (Costco brand) canned salmon, but you can use any other kind you like. Chopping the ingredients into tiny pieces helps keep the patties together and helps make the vegetables less objectionable to kids. Also, you may choose to remove the bones from the salmon when you drain it, however it is a good source of calcium and my kids never notice it. This can be eaten on a bun with fresh tomato, romaine and the sauce.

3 eggs
1 (16 ounce) can salmon, drained
2 1/2 cups fresh breadcrumbs (about 5 slices, chop in your food processor)
2/3 cup celery, chopped into tiny pieces
1/3 cup green onion, chopped small
1/4 cup red bell pepper, chopped into tiny pieces
fresh Italian parsley, just a little, chopped small
3 tablespoons canola oil
mayonnaise (don't sub)
prepared yellow mustard

Steps:

  • Patties:.
  • In a large bowl beat eggs slightly with a fork.
  • Add salmon, crumbs, celery, green onions and red pepper (and optional parsley) and mix well (wear gloves use your hands).
  • With your hands, shape mixture into 6 firm patties.
  • In a skillet over medium heat, heat the oil. Fry patties approximately 10 minutes per side or until lightly browned.
  • Sauce:.
  • In a small bowl, mix the mayo and mustard in a 5-to-1 ratio (i.e. 5 Tbsp of mayo to 1 Tbsp of mustard) or to taste. Mix together until blended. If you want, on low power slowly warm the mixture in the microwave. Serve on the side.
  • Optional: use an envelope of hollandaise sauce mix instead.

Quick 'N Easy Salmon Patties With Caper Sauce image

1 pound salmon or other cooked fish (16-oz can or 2 cups)
4 cups Kellogg's® corn flakes (crushed to 1 cup) divided or 1 cup Kellogg's® corn flake crumbs (divided)
2 eggs, slightly beaten
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons finely snipped parsley
3 tablespoons finely chopped onions
oil
CAPER SAUCE
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons chopped capers
2 teaspoons caper juice
1 1/2 teaspoons grated onions
1/4 teaspoon salt
dash pepper

Steps:

  • 1. Drain salmon, reserving liquid. Remove skin, bone and flake. Set aside.2. In medium mixing bowl, combine salmon, 1/2 cup of the KELLOGG'S CORN FLAKES cereal, 1/4 cup salmon liquid, eggs, salt, pepper, parsley and the finely chopped onion. Mix thoroughly. Shape into 12 flat patties, 2 1/2-inches in diameter. Coat with remaining crumbs.3. In large fry pan or electric fry pan, place small amount of oil or shortening. Cook patties in hot oil on medium temperature, approximately 2 minutes on each side or until golden brown, turning only once. Serve hot with Caper Sauce. 4. To prepare Caper Sauce, combine all ingredients in small bowl, mixing well. Refrigerate.
