PIZZA WITH FRESH TOMATOES AND BASIL

Number Of Ingredients 14

1 tablespoon yellow cornmeal
Two 8-ounce pieces of homemade or purchased Pizza Dough, recipe follows
6 teaspoons extra-virgin olive oil
1 1/3 cups, grated pasteurized mozzarella
2 Roma tomatoes, cut crosswise into 1/4-inch-thick slices
1/4 cup grated Parmesan
1 large garlic clove, minced, optional
6 fresh basil leaves, plus extra for garnish
1/2 teaspoon salt
1/2 cup warm water (105 to 110 degrees F)
2 teaspoons dry yeast
2 cups all-purpose flour
1 teaspoon salt
3 tablespoons olive oil

Steps:

  • Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F. Sprinkle the cornmeal over 2 rimless baking sheets. Roll out each piece of Pizza Dough into a 10 to 11-inch-diameter round. Transfer 1 dough to each prepared baking sheet.
  • Drizzle 2 teaspoons of oil over each Pizza Dough. Sprinkle the mozzarella over the Pizza Dough, dividing equaling and leaving a 1-inch border around each pizza. Arrange the tomato slices in a single layer over the cheese. Sprinkle with the Parmesan. Arrange basil leaves on top, drizzle with a little more olive oil and sprinkle garlic all over. Bake the pizzas until the crusts are crisp and brown on the bottom and the cheese is melted on top, about 15 minutes. Drizzle 1 teaspoon of oil over each pizza. Sprinkle with basil for garnish and salt. Cut the pizza into wedges and serve immediately.
  • Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and divide into 2 equal balls. (The dough can be used immediately or stored airtight in the refrigerator for 1 day.)

I created these delicious mini pizzas. They are more like a pizza bun. The dough is fluffy and tender, the sauce is fresh, and the cheese crisp and a little gooey. Very easy appetizer and absolutely delicious. A great appetizer, snack, or light supper!

3 cups all-purpose flour
2 cups warm water
3 tablespoons olive oil
2 tablespoons instant yeast
1 teaspoon kosher salt
1 teaspoon white sugar
1 ½ cups prepared tomato sauce
1 clove garlic, diced
2 tablespoons fresh oregano, diced
2 tablespoons fresh basil, diced
2 tablespoons olive oil
1 tablespoon white vinegar
1 teaspoon white sugar
1 cup shredded mozzarella cheese
1 cup chopped fresh spinach, or to taste

Steps:

  • Mix flour, water, olive oil, yeast, salt, and sugar together in a large bowl. Use an ice cream scoop to place 12 balls of dough onto the prepared pan, patting down slightly; dough will be very sticky. Let sit until risen, about 30 minutes, without kneading or punching down.
  • Preheat the oven to 425 degrees F (220 degrees C). Grease a baking pan. Toss an ice cube into the bottom of the oven to add some humidity.
  • Combine tomato sauce, garlic, oregano, and basil in a bowl. Add olive oil, vinegar, and sugar; stir very well.
  • Spread 1 to 2 tablespoons tomato sauce on each dough ball. Sprinkle 1 to 4 tablespoons mozzarella cheese on top and add spinach.
  • Bake in the preheated oven for 15 minutes. Let cool slightly before serving.

2-3 tomatoes, sliced in rounds
6 provolone cheese, sliced or grated
1 portabella mushrooms, sliced and quartered
1 c sliced onions
mrs. dash tomato and basil seasoning
garlic infused olive oil
black pepper

Steps:

  • 2. Once dough is ready, add about 1-2 tsp. of olive oil to a non stick pan, cook tomatoes over low heat till tender, season with Mrs. Dash tomato and basil as you cook them.
  • 3. Add about 1 tbs. of olive oil to a separate pan and cook onions till almost tender, then add portabella pcs. and cook about 5 min. more. You may need to add a little more olive oil when you add the mushrooms.
  • 4. Prepare 1/4 c. of garlic infused olive oil. Roll dough out and place on pizza pan. Brush with garlic infused olive oil. Top with provolone cheese, tomatoes, mushrooms and onions. Sprinkle liberally with black pepper if desired. Bake 450° for about 20-25 min.

2 medium onions, halved lengthwise and thinly sliced lengthwise
2 garlic cloves, finely chopped
1 teaspoon anchovy paste
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon sugar
2 tablespoons extra-virgin olive oil
1/2 pound frozen pizza dough, thawed
3/4 cup grape tomatoes (4 1/2 ounces), cut crosswise into 1/4-inch-thick slices
1/4 cup Kalamata olives (1 1/2 ounces), pitted and cut into slivers
1 teaspoon fresh thyme leaves
Scant 1/2 teaspoon flaky sea salt such as Maldon*

Steps:

  • Put oven rack in middle position and preheat oven to 475°F. Line a large baking sheet with parchment paper.
  • Cook onions, garlic, anchovy paste, salt, pepper, and sugar in oil in a 12-inch heavy skillet over moderate heat, stirring frequently, until onions are caramelized and very soft, 25 to 30 minutes.

1 tube (13.8 ounces) refrigerated pizza crust
1-1/2 teaspoons olive oil, divided
11 slices part-skim mozzarella cheese, divided
1 small zucchini, cut into 1/8-inch slices, patted dry, divided
1 small onion, sliced
4 plum tomatoes, cut into 1/4-inch slices
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup torn fresh basil

Steps:

  • Sprinkle cornmeal over a greased baking sheet. Unroll pizza crust; shape into a 12-in. square. Place on the baking sheet. Brush with 1 teaspoon oil. Arrange nine slices of cheese over dough to within 1 in. of edges. Pizza With Tomatoes, Onions And Olives image

Number Of Ingredients 6

4 or 5 ripe tomatoes
Coarse salt
Pizza dough (see recipe)
1 medium red onion or 4 shallots, peeled and chopped
20 black olives like calamata, pitted and chopped
Olive oil as needed

Steps:

  • Preheat oven to 500 degrees.
  • Core tomatoes, then cut in half horizontally. Gently squeeze out liquid and shake out most seeds, then slice tomatoes as thin as possible. Salt lightly and let sit at least 10 minutes, then drain off any excess liquid.
  • Top pizza rounds on baking sheet with tomatoes, onions, olives and a little olive oil. Bake for about 15 minutes, or until nicely browned.
