I had potatoes I needed to use and wanted an easy no fuss recipe that was tasty. Most au gratin potatoes require added flour and milk but these don't. I'd like to think these are a little healthier! If nothing else, they're super tasty!

1 ranch dressing mix (Whole packet. I used Hidden Valley)
2 large idaho potatoes
1 cup cheddar cheese
olive oil flavored cooking spray
2 tablespoons olive oil
fresh cracked pepper (optional)

Steps:

  • Preheat the oven to 380 degrees.
  • Use the olive oil spray to coat the inside of a dutch oven. (I use a dutch oven but any round, covered casserole dish should work.).
  • Thinly slice the potatoes. (I used a mandolin.).
  • In a large bowl, Toss the olive oil, potatoes, ranch powder, and pepper (if you choose to include it) until the potatoes are coated evenly.
  • Evenly coat the bottom of the dutch oven with half of the potatoes.
  • Sprinkle 1/2 of the cheddar cheese evenly over the potatoes.
  • Arrange the remaining potatoes over the cheese.
  • Evenly sprinkle the remaining cheddar over the potatoes.
  • Place the cover on the dutch oven and place in the oven.
  • Bake for 30 minutes or until potatoes are cooked through.
  • Serve and enjoy!

11/2 lb fingerling potatoes
1 pkg dry ranch dressing
1 pkg dry italian seasoning mix
1/3-1/2 c olive or canola oil
steak seasoning like montreal (according to taste)

Steps:

  • 1. Preheat oven to 425 degrees F. Wash & scrub potatoes, then dry completely with paper towel. Drying the potatoes first assures that they will be crispy on the outside and flakey on the inside.
  • 2. Main Ingredients used for recipe.
  • 3. Using a medium size bowl, Combine both packets of salad dressing mix with oil and stir to blend together.
  • 4. Add potatoes and coat liberally using fingers or a spoon.
  • 5. Spray a shallow jelly Roll type baking pan with non stick cooking spray.
  • 6. Now spread potatoes in a single layer onto a baking sheet, and sprinkle lightly with steak seasoning. Then place pan in preheated 425 degree F. oven and bake till potatoes are tender, about 45 minutes. Potatoes should be a bit crispy on the outside and tender & flakey on the inside. They are very tasty. Just like regular potatoes only smaller.

6 to 8 medium red potatoes
1/2 cup(s) sour cream
1/2 cup(s) prepared ranch-style dressing
1/4 cup(s) cooked crumbled bacon
1/4 cup(s) onion, chopped
2 tablespoon(s) minced fresh parsley
1 1/2 cup(s) shredded cheddar cheese, divided
2 cup(s) slightly crushed corn flakes
1/4 cup(s) melted butter

Steps:

  • In a large saucepan, cook unpeeled potatoes in boiling, salted water until tender, about 20 minutes. Cut in quarters and set aside.
  • In a small bowl, combine sour cream, dressing, cooked bacon, onion, parsley, and 1 cup cheddar cheese.
  • Place the potatoes in a greased 9x13" baking pan. Pour sour cream mixture over potatoes and gently toss.
  • Top with the remaining 1/2 cup cheddar cheese. Combine the cornflakes and butter; sprinkle over casserole.
  • Bake in a preheated 350-degree oven for 40 to 45 minutes, or until bubbly.
