Time 1h

Number Of Ingredients 8

1 sheet store-bought puff pastry (preferably Dufour, defrosted according to package instructions)
3 tablespoons (1 1/2 oz) unsalted butter
2 cloves garlic (finely chopped or grated)
2 sprigs fresh thyme (leaves only)
2 to 3 leeks (white parts only, halved lengthwise and sliced into thin half-moons (about 2 cups))
16 ounces cremini mushrooms (cut into 1-inch (25-mm) chunks)
Freshly ground black pepper (to taste (optional))
3 ounces Gruyère cheese (grated)

Steps:

  • Preheat the oven to 425°F (218°C).
  • On a sheet of parchment paper cut to fit a rimmed baking sheet, roll the puff pastry sheet into a 10-by-10-inch square, gently smoothing out any creases in the pastry. Using a sharp knife, lightly score the pastry, leaving a 1-inch border all along the outer edge and being careful not to cut all the way through the pastry. Carefully slide the parchment with the scored pastry onto a rimmed baking sheet and refrigerate while you prepare the topping.
  • In a large skillet over medium heat, melt the butter. When it bubbles, toss in the garlic and thyme and cook for 1 minute. Add the leeks and cook until they begin to soften. Add the mushrooms and cook until they're soft but not yet releasing any liquid. Dump the mushroom filling in a strainer situated over a bowl and let drain for a few minutes.
  • Spoon the mushroom filling onto the pastry, being careful to stay inside the scored lines. Either reserve the strained mushroom liquid for making vegetable stock or discard it. Grind fresh black pepper, if using, over the topping.
  • Bake the tart for 15 minutes, checking the puff pastry after 10 minutes. If the pasty is already golden brown, cover the exposed pastry edges with foil strips to prevent it from turning too brown. After the first 15 minutes, remove the tart from the oven and sprinkle it with the cheese. Bake for 5 to 7 minutes more, or until the cheese has melted and the pastry is golden brown. Again, it may be necessary to cover the outer edges with foil.
  • Let cool for 5 minutes and then slice into squares or rectangles. This tart is best eaten as soon as it is cool enough to handle. (Any leftover mushroom leek tart can be wrapped and refrigerated, but the pastry will suffer. To reheat, pop under the broiler for a few minutes. Whatever you do, don't reheat the tart in the microwave.)

Time 55m

Yield 6-8

Number Of Ingredients 16

1 sheet frozen puff pastry (half of a 17oz. package), thawed
For the Filling
1 lb. fresh, young leeks, thinly sliced
1 sweet onion, chopped
2 TBSP. butter
2 TBSP. olive oil
- salt & pepper, to taste
⅔ cup Gorgonzola cheese (or an aged Blue cheese or Goat cheese)
2 TBSP. Parmesan cheese
½ cup smoked ham, cubed (optional)
For the Custard:
2 large eggs, plus one egg yolk
8 oz. cream (heavy or light)
½ tsp. salt
¼ tsp. freshly ground pepper
2 tsp. flour

Steps:

  • Roll out the cold puff pastry on a lightly floured surface to form a 12-inch square. Transfer the puff pastry to a 9-inch-diameter glass or ceramic pie dish, lined with parchment paper. Fold the overhanging dough inward and lightly press, so that it is more or less the same thickness around the pie dish and forms a uniform edge. Prick the base of the pastry with a fork and chill in the refrigerator while you make the filling (keeping the dough very cold will help it puff up nicely and prevent it from shrinking when it bakes).
  • Make the filling. Clean the leeks well under cold running water. Trim and discard about 2 inches of the green tops, thinly slice the rest, and let drain. In a large, heavy skillet, heat the butter and olive oil. Add the leeks and the onion, season well with salt and pepper, and cook over medium-high heat, stirring occasionally, until the leeks and the onions are very soft and caramelized. Set aside to cool.
  • Preheat the oven to 400°F.
  • Make the custard. In a medium-sized bowl, mix together the eggs, the cream, the flour, and the salt and pepper. Add the cooled leek and onion mixture to the egg mixture and stir to combine.
  • Remove the puff pastry from the refrigerator, then pour the custard and filling mixture over it. Sprinkle the top with the cheese of your choice, the grated parmesan and add the ham (if using). Bake for about 30 minutes, or, until the crust is deep golden and the filling feels firm around the edges. It should look well puffed and lightly browned. Place on a wire rack to cool for about 20 minutes before slicing and serving.

Time 35m

Yield 6 servings

Number Of Ingredients 8

All-purpose flour, for dusting
1 sheet (1/2 a 17.3-ounce package) all-butter frozen puff pastry, thawed
3 cups fruit, nuts and/or cheese (ideal for roasting)
3 tablespoons unsalted butter, melted
3 tablespoons brown sugar
1/2 teaspoon cinnamon or other spices
1/4 cup warmed honey, if desired
Puff Pastry Variations, recipes follow

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or grease with nonstick cooking spray.;
  • Sprinkle the cutting board with flour. Roll-out the creases.;
  • Unfold the pastry onto parchment paper. Using a fork, pierce a 1/2-inch border around the edge of the puff pastry. Prick the center of the pastry as well, about 10 times all over.
  • Arrange the fruit, nuts, and cheese on top of the pastry in a uniform manner, avoiding the border. Brush the fruit with the melted butter and top with the cinnamon and sugar. Bake 15 minutes, until the pastry is golden brown and beginning to puff.
  • If desired, brush the honey over the fruit and bake for an additional 5 minutes. Serve warm with fresh whipped cream or vanilla ice cream.
  • Puff Pastry Variations:
  • Apricot Plum Tart: Cut 2 plums and apricots into 1/4-inch thick slices. Arrange on top of puff pastry and brush with melted apricot preserves rather than honey.
  • Rhubarb Tart: Thinly slice 8-ounces rhubarb stalks on the diagonal and marinate in 1 cup orange juice and 1/2 cup sugar for 10 minutes. Strain the rhubarb, reserving the juices. Arrange the rhubarb slices on top of the puff pastry. Sprinkle with white sugar. While the pastry bakes, reduce the rhubarb juices until it becomes a syrupy glaze. When the pastry finishes, brush the pastry with the glaze.
  • Pear, Pecan and Blue Cheese Tart: Slice 3 cups Bartlett pears and place on the puff pastry. Top with 1/2 cup chopped pecans. After brushing on the honey, top with 1/3 cup blue cheese crumbles.

ONION TART WITH LEEKS, CAPERS AND ANCHOVY

Onion Tart With Leeks, Capers and Anchovy image

Though this tart may seem complicated, it's actually rather simple to put together. Once you make the savory onion mixture, all that's left to do is spread it on a sheet of rolled-out puff pastry, top it with anchovy fillets and capers, and bake it to a golden brown. Use any kind of flaky pastry or pie dough you wish, or even spread the mixture on yeasted pizza dough. Accompany with a salad of small lettuce greens if desired. The tart is delicious served warm or at room temperature.

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 10

1/4 cup extra-virgin olive oil
3 medium onions, diced (about 3 cups)
Salt and pepper
3 medium leeks, white and tender green parts, diced (about 2 cups)
3 garlic cloves, minced
1/2 teaspoon chopped fresh thyme leaves
1 sheet store-bought all-butter puff pastry, thawed and rolled into a 10-inch circle (or use any favorite pie dough recipe)
2 teaspoons medium capers, rinsed
8 anchovy fillets
2 teaspoons snipped chives or chopped parsley

Steps:

  • Heat oven to 375 degrees.
  • Put olive oil in a wide skillet or heavy-bottomed pot over medium-high heat. When oil is wavy, add onions and cook, stirring, until softened and lightly browned, about 5 to 7 minutes. Season well with salt and pepper.
  • Add leeks, garlic and thyme, and cook for another 5 minutes, until leeks are softened but still bright green. Taste and adjust seasoning, then spread mixture on a baking sheet to cool to room temperature.
  • Lay pastry round on a rimmed parchment-lined baking sheet. Spread cooled onion mixture over pastry, leaving a 1-inch border. Fold over the border and crimp.
  • Sprinkle capers evenly over onion mixture. Arrange anchovy fillets on top.
  • Bake for 45 minutes, until the pastry is nicely browned. Cool tart for 5 minutes, then sprinkle the chives on top and cut into wedges to serve.
