2 large sweet onions, sliced
½ cup butter, sliced
1 tablespoon dried parsley
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x13 inch casserole dish, mix the potatoes, onions, butter, and parsley. Season with salt and pepper.
  • Bake covered in the preheated oven for 45 minutes, stirring occasionally, or until potatoes are tender.

2 pounds potatoes, sliced into 1/2-inch-thick pieces
1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
  • Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

3 pounds medium red potatoes, quartered
2 packages (3 ounces each) cream cheese, cubed
1/2 cup butter, cubed
1/2 cup half-and-half cream or milk
1 medium green pepper, chopped
4 green onions, thinly sliced
1 jar (2 ounces) sliced pimientos, drained
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese, divided
1/2 cup grated Parmesan cheese, divided

Steps:

  • Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash the potatoes. Add the cream cheese, butter and cream; beat until blended. Stir in the green pepper, onions, pimientos, salt and pepper. 1/4 cup whole milk
1 large egg

8 to 10 medium potatoes, peeled and cubed
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3 cups shredded cheddar cheese, divided

This makes a great side dish! You can add in some grated Parmesan cheese and salt to the sour cream mixture if desired. I always add in about 3-4 tablespoons mayo to the sour cream mixture but that is optional.

8 medium potatoes, cooked
2 large sweet onions
1/4 cup water
2 tablespoons chicken bouillon powder (can use more)
2 cups grated cheddar cheese (can use more)
2 cups sour cream
3 -4 tablespoons mayonnaise (optional)
black pepper
1 1/2 cups breadcrumbs
4 tablespoons melted butter
paprika

Steps:

  • Set oven to 350 degrees.
  • Butter a medium-size casserole dish.
  • Cook the potatoes until just firm-tender, cool and slice into about 1/4-inch rounds; set aside.
  • Place onions, water and boullion in saucepan, bring to a boil, then simmer 5-7 minutes or until onions are tender; drain very well and set aside.
  • Combine cheese, sour cream, mayo (if using) and black pepper.
  • In greased dish, layer HALF the potatoes, and HALF of the onions, then HALF of the cheese mixture.
  • Repeat the layers.
  • Combine crumbs with melted butter and sprinkle on top, then sprinkle with paprika.
  • Bake uncovered for 20 minutes.

I'm a pastor's wife, and I often find myself cooking for large groups. I first put together Potato Onion Supreme for a wedding shower dinner when our organist's son got married. Afterward, I had three requests for the recipe! This dish is fast and easy, so it's nice for adding a festive touch to a Sunday dinner. But it's equally at home at church potlucks or Grange socials.

8 medium potatoes (about 2-1/2 pounds)
2 large sweet onions, sliced
1/4 cup water
2 tablespoons chicken bouillon granules
2 cups shredded sharp cheddar cheese
2 cups sour cream
3/4 cup bread crumbs
2 tablespoons melted butter
Paprika

Steps:

  • Cook potatoes; peel and slice 1/4 in. thick. Set aside. Place onions, water and bouillon in a saucepan; bring to a boil, then simmer 5-7 minutes or until onions are tender. Drain and set aside. Combine cheese and sour cream. , In a greased 2-1/2-qt. baking dish, layer half the potatoes, onions and cheese mixture. Repeat with remaining ingredients. 1/2 cup butter, melted
2 cups cheddar cheese, shredded
1/3 cup green onion, chopped

6 slices bacon, crispy and crumbled

  • boil potatoes til slightly tender.
  • coarsely grate (or just use frozen shredded potatoes).
  • toss all ingredients to mix.
