Prep now and enjoy wonderful pies all season. Make the crust and topping in advance and keep them in the freezer for up to three months, then defrost fully before using.

Steps:
- To make the dough for the pie crust, mix 2 1/2 cups all-purpose flour and 1 teaspoon each salt and sugar in a medium-size bowl. Cut 2 sticks chilled unsalted butter into pieces. With a pastry blender, cut in butter, working until mixture resembles coarse meal.
- Add 4 tablespoons ice water; work with hands until dough comes together. If dough is still crumbly, add more ice water a tablespoon at a time (up to 4 more tablespoons). Do not overwork.
- Divide dough in half, and flatten halves into disks. Wrap disks separately in plastic; refrigerate at least 1 hour.
- To form the pie shell, roll the dough on a floured surface into a 14-inch round. Wrap around rolling pin and carefully unroll over a 9-inch pie plate.
- Fit gently into bottom and side of plate. Use kitchen shears to trim dough to a 1-inch overhang; fold under, and seal to form a rim.
- Crimp rim with fingertips and knuckle. Repeat with remaining dough; wrap each with plastic, stack, and freeze.

This pie is so easy to make, if you love peanut butter, then you will love this pie! - Drain canned peaches; reserve 3/4 cup of syrup.
- Place peaches in a large non-reactive bowl; add reserved syrup, tapioca, and lemon juice. Mash 1/3 of the peaches with a potato masher and set aside. You may also use fresh peaches (increase sugar to 1 cup),or combine with another fruit: blueberries, pineapple, or pears to make one gallon total.
- Combine sugar and cinnamon. Add half of spice mixture to peaches and stir.
- Stir peaches gently every 5 minutes.
- Meanwhile, cream together cream cheese, butter,and sugar.
- Add flour slowly mixing until the dough comes together and is well blended.
- Pat out dough into a ball and flatten to 1 inch thick. Wrap in plastic wrap and chill 30 minutes.

- Roll out dough into a rectangle approximately 1 inch larger than the baking pan on a lightly floured piece of waxed paper.
- Pour peach mixture into baking pan.
- Place dough on top of peaches. Method 1. Gently roll dough onto rolling pin; transfer to the pan and roll dough over the top. Method 2. Pick up waxed paper with dough on it and gently put the dough side down over the pan; then peel off the waxed paper.
- Fold edges of pastry under so pastry edges are flush against the pan.
- Cut slashes in top of the pastry to let steam out.
- Beat 1 large egg white until foamy; then brush lightly on pastry.
- Sprinkle remaining cinnamon sugar blend on top of pastry.
- Bake at 350 degrees for 1 hour or until golden brown.
- Serve warm with vanilla ice cream.

EASY AS PIE 10-MINUTE NO-RISE THIN-CRUST PIZZA DOUGH
This came from one of the volumes in my e-cookbook collection-- it's meant to yield one 12" pizza but I get about two 8" or 9" individual pizzas with it. - Proof the yeast in the warm water with the honey or sugar for 8-10 minutes or until foamy.
- Add the remaining ingredients together and knead well, about 2-5 minutes.
- If the dough seems a little sticky, dust your hands with some flour and knead again.

- 1. Find your big plastic bowl with the lid. Go ahead, I will wait.
- 2. Put the flour, sugar, and shortening in the bowl. (Sugar is for the dessert crust or use salt for savory crust) Put the lid on and shake it until small pea sized balls are formed. Take the lid off. Now add the water but start with four or five tablespoons at first. Put the lid on and roll it sideways. I think this is good exercise too. You don't feel so bad about eating the pie when it is done. You can make big circles in front of you for the upper arms. Open the lid to see if it has formed a ball. If not add some more water but just a little at a time.
- 3. Now it is time to roll it out. It is very flakey because you did not touch it while making it and the food processor did not beat it up. Makes a two crust 9 inch pie or 6-8 tart shells.

- In a food processor add the 3 cups of spelt flour and salt. Process for a minute to incorporate the flour and salt.
- Combine the non-dairy milk and light oil in a cup and mix well. I use a whisk to do this. Then feed the milk-oil mixture through the feeding tube in the food processor and into the flour mixture. The dough should be in large crumbles. At this point, stop the machine and feel the dough. It shouldn't be sticky or dry, but a little oily and hold together well. Try not to handle the dough too much as it tends to toughen the dough.
- Once you have the right consistency remove the dough crumbles onto a prepared surface to roll out your dough. I use a large plastic sheet, but waxed paper can also be used. I try to avoid using a floured surface as it will make the dough dry. I have found that with this dough that it isn't necessary.
- Shape the dough into a disc and cut it in half. Reshape the first piece of dough into a disc and roll it out. I wrap the dough around my rolling pin then place it onto the pie pan and unroll. Once I have the dough in place I position it carefully but do not stretch it, it will shrink. I prick the sides and bottom of the bottom crust.
- Fill the pie with the desired ingredients and roll out the second disc of dough and put it on top.
- Flute the edges with a fork and then trim the pie crust edges. Brush the pie with some of the non-dairy milk and then make slits in the top crust to let out the steam.
- Bake according to the type of pie you are making.
- Enjoy!
