1 cup peanut butter
1 cup sugar
1 egg
2 teaspoons baking soda
1 cup chocolate chips

Steps:

  • Mix together the first four ingredients until well combined.
  • Add the chocolate chips and mix well.
  • Place a spoonful of dough on cookie sheets and flatten just a little bit.
  • Bake at 375 degrees for about 9-10 minutes.

This recipe is from the side of a Kraft Peanut Butter jar. It's super easy and perfect for people who can't eat gluten. Substitute Splenda granular for sugar for a lower calorie version. I use the reduced fat peanut butter.

1 cup smooth peanut butter
1/2 cup sugar
1 egg

Steps:

  • Preheat ovet to 325. Combine all ingredients in a bowl. Roll dough into 24 balls and place on ungreased cookie sheet about 2 inches apart. Press down with fork. Bake until very lightly browned (about 15 minutes).
  • To make them a little more special, when they come out of the oven drizzle cookies with honey or make a well in the middle of the cookies with your finger and fill with you favorite jam!

2 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsweetened cocoa powder
1 cup butter, softened
1 cup packed brown sugar
¾ cup white sugar
3 eggs
2 teaspoons vanilla extract
2 cups peanut butter chips

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). In a small bowl, whisk together the flour, baking soda, salt and cocoa. Set aside.
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Gradually blend in the dry ingredients until just moistened, then stir in the peanut butter chips. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 18 to 20 minutes in the preheated oven. Remove cookies to cool on a wire rack.
