This is super easy and tasty! My grandma used to make it with mashed potatoes and green beans as side dishes.

1 -1 1/2 lb round steak
2 (10 1/2 ounce) cans cream of mushroom soup (fat free is ok)
1 (10 1/2 ounce) can water
1 medium onion

Steps:

  • Cut off fat from round steak and cut into 3 x 3 inch pieces.
  • Whisk water and mushroom soup together in a bowl, then pour just enough to thinly coat the bottom of a 13 x 9 pan.
  • Place the pieces of round steak evenly around the pan.
  • Cut onion into slices and place them evenly on top of the meat.
  • Pour the rest of the mushroom soup mix on top of the round steak and onions.
  • Cover with foil and bake at 325 degrees for 2 1/2 to 3 hours.

3 lbs chuck roast, 2-3 inches thick
2 tablespoons vegetable oil
1 (1 7/8 ounce) envelope onion soup mix (or onion mushroom soup mix)
2 (10 3/4 ounce) cans cream of mushroom soup
1 cup water (or beef or chicken stock)

Steps:

  • Brown meat on all sides in oil in cooker.
  • Mix all other ingredients and add to cooker, coating meat.
  • Cover and cook 50-60 minutes after control jiggles.
  • Cool cooker normally for 5 minutes, then place under faucet to depressurize.
  • The gravy came out perfect for us -- thin with beef stock or thicken to your own taste.

4 cups water
1/2 ounce dried porcini mushrooms (1/2 cup)
2 tablespoons extra-virgin olive oil
1/4 cup chopped shallots
8 ounces assorted mushrooms such as white button, shiitake, cremini, velvet pioppino, and brown and white beech, trimmed and sliced
1/2 cup dry white wine
3 tablespoons cornstarch
Kosher salt and freshly ground black pepper

Steps:

  • Bring water to a boil. Transfer dried mushrooms to a medium bowl. Cover with water and let stand 30 minutes, until mushrooms are softened. Drain liquid (and reserve) through a sieve, and slice mushrooms. Set aside.
  • Heat oil in medium saucepan over medium heat. Add shallots and cook until tender, about 3 to 4 minutes. Add fresh mushrooms and cook until soft, about 6 to 8 minutes. Deglaze pan with wine and reduce liquid by half, about 3 minutes.
  • Meanwhile, slowly whisk cornstarch into 1 cup of mushroom liquid until smooth; set aside. Add remaining 3 cups mushroom liquid and chopped rehydrated mushrooms to gravy. Bring to a boil. Stir in cornstarch mixture and simmer until mixture thickens, about 5 to 7 minutes. Season with salt and pepper.

1 large egg
1 tablespoon Worcestershire sauce, divided
1 tablespoon Dijon mustard, divided (Grey Poupon style)
kosher salt & freshly ground black pepper, to taste
3/4 lb extra lean ground beef
1/4 lb sweet Italian sausage, casings removed
1/2 cup plain breadcrumbs
1/2 small yellow onion, coarsely grated
2 large garlic cloves, finely grated
2 tablespoons vegetable oil
2 tablespoons unsalted butter, divided
3 cups beef broth
1 tablespoon cornstarch
8 ounces mushrooms, stemmed thinly sliced

Steps:

  • In a large bowl, whisk the egg with 2 tsp Worcestershire sauce, 1 tsp mustard, 1/2 tsp salt and 1/4 tsp pepper. Add the beef, sausage, breadcrumbs, onion and garlic and mix until well combined. Shape into 4 oval patties about 1/2 inch thick.
  • Heat the oil and 1 tbsp of the butter in a large skillet over medium-high heat until the butter stops foaming. Add the patties and cook, flipping once, until well browned and cooked through (about 10 minutes). Transfer to a plate and cover to keep warm. Wipe out the skillet.
  • In a small bowl, stir 2 tbsp of the beef broth with the cornstarch.
  • Melt the remaining 1 tbsp butter in the skillet over medium-high heat. Add the mushrooms and 1/2 tsp salt and cook, stirring occasionally, until the mushrooms are browned (5 minutes). Add the remaining beef broth, 1 tsp Worcestershire, and 2 tsp mustard. Stir the cornstarch mixture again and then whisk it into the skillet. Cook, whisking occasionally, until the mixture is slightly thickened (5-7 minutes). Season to taste with salt and pepper. Return the patties to the skillet to reheat.

I use the cheesy garlic biscuit mix by Bisquick. Sometimes I use a can of tomato soup rather than mushroom just for a change. I like to serve these with mashed or fried potatoes and green beans.

1 (7 3/4 ounce) package Bisquick baking mix
1 lb hamburger
1/4 cup diced onion (optional)
1 (10 1/2 ounce) can mushroom soup
milk
seasoning salt
pepper
chili powder (optional)
beef bouillon (optional)

Steps:

  • Follow directions on biscuit mix package to make dough. Brown hamburger with onions and salt and pepper to taste preference. Mix 1/2 or a little more of meat into dough. Kneed to mix well. Bake as directed on biscuit mix package.
  • Meanwhile mix soup and 3/4 can milk and remaining cooked hamburger and cook till throughly warm. This sauce can be thinned to your preference by adding more milk. For a more meaty flavor, add a little beef bouillon but be careful as it will become more salty.
  • Serve hot biscuits smothered with sauce and sprinkled lightly with chili powder.

2 tablespoons olive oil or 2 tablespoons butter
1/4 cup beef drippings (or less)
1 (12 ounce) jar beef gravy (Heinz HomeStyle Savory Beef)
1 (10 3/4 ounce) can beef consomme
6 ounces beef broth (Chicken works fine too)
2 teaspoons garlic and herb seasoning (Salt Free)
2 tablespoons dried parsley
black pepper (to taste)
cornstarch (approx 2 TB) (optional)
2 ounces beef broth (Chicken works fine too) (optional)

Steps:

  • Saute mushrooms in Olive Oil &/or Butter until tender & slightly browned.
  • Transfer mushrooms to sauce pan.
  • Add remaining ingredients "except" for Corn Starch & additional Broth.
  • Bring to soft boil for approx 5 minutes.
  • Depending on preference & use of gravy; thicken with Corn Starch blended with Broth until smooth. (It's easiest to shake together in a small jar with lid).
  • Add to gravy.
  • Bring to soft boil & serve.
  • TIP: to keep gravy hot for serving, keep in thermos & when needed, transfer to gravy boat.
