I modified a bean soup recipe and came up with this wonderful chili. I make it mild, as that's how my family likes it, then I just add Tabasco sauce to mine. A fun alternative to traditional chili!

2 (15 1/2 ounce) cans black beans
1 (15 ounce) can kidney beans
1 (16 ounce) jar chunky salsa
1 cup low sodium chicken broth
1 (15 ounce) can corn, drained
1 (10 ounce) can rotel, drained
2 tablespoons ground cumin
3 (3 ounce) chorizo sausage links
salt (optional)
2 teaspoons Tabasco sauce (optional)
1 avocado, diced
1/4 cup chopped cilantro
6 tablespoons sour cream

Steps:

  • In a crock pot (slow cooker), mix the beans (with their liquid), salsa, chicken broth, corn, cumin and Rotel tomatoes.
  • Then take the casing off the sausages and break into bite-sized pieces and put into the crock pot.
  • Cook on low for 5 hours.
  • Let cool for about 20 minutes, then add salt and Tabasco sauce to taste.
  • Serve in bowls with avocado, a dollop of sour cream and cilantro to garnish on top.

Very easy to make...and tastes yummy!!! I'm not one who likes traditional chili, but I love Mexican food. I came across this by accident one day while making a casserole...my whole family loves this...I hope you do too!!

1 1/2 lbs lean ground beef
1/2 onion, diced
1 (16 ounce) can refried beans, any size and flavor (the bigger the can you use the more flavor of bean you will have)
1/2 cup salsa con queso, cheese dip (Any flavor)
2 (1 1/4 ounce) packages taco seasoning
1 cup water
shredded Mexican blend cheese
onion, diced
sour cream
tortillas or tortilla chips

Steps:

  • Brown ground beef and onion, until meat is no longer pink and onion is soft.
  • Add the water and taco seasoning.
  • Simmer until most of the water is evaporated.
  • Add the beans and the cheese dip.
  • If mixture is still too thick to your liking, add more water.
  • Simmer on low for 10 minutes.
  • Garnish with your favorite toppings.

It doesn't get any easier than this folks! Throw everything in one pot and let it heat up - soooo yummy! Pretty healthy too unless you add sour cream, cheese, and salt on top like I do. :-) We usually double or triple my recipe b/c this is a favorite! The proportions are easy to multiply too. This is also a great "base recipe"...

Number Of Ingredients 15

2 Tbsp butter
1/4 c chopped onion
1 Tbsp flour
1/2 tsp salt and pepper
1 c chicken broth (sometimes i add more at the end to make it soupier)
1 rotisserie chicken, precooked, deboned
1/2-1 Tbsp southwest seasoning mix (amount depends on how much heat you want))
1 can(s) black beans, drained and rinsed (15 oz)
3 Tbsp canned chopped green chilies
1 c frozen corn
OPTIONAL
(topping) shredded cheese, like pepper jack cheese
(topping) thick and chunky salsa
(topping) sour cream
(topping) chopped avocado

Steps:

  • 1. Melt butter over medium heat. Add onion and cook until tender. Add flour, salt and pepper; stir until well blended. Gradually stir in chicken broth, until thickened. Stir in chicken, beans, green chiles, and corn. Simmer about 5 minutes until heated through.
  • 2. Top with cheese and salsa. Enjoy! PS. This is not an exact science; more or less of pretty much anything can be used. Make it your own!
