A simple, easy Homemade Spaghetti Meat Sauce. I have never bought bottle sauce again. This is a versatile recipe.

- 1. Combine ground beef, onion, garlic, mushrooms and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
- 2. Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

- Heat olive oil in a large skillet over medium-high heat; saute onion in hot oil until softened, about 5 minutes. Season onion with Italian seasoning; continue to saute until the herbs are fragrant, about 3 minutes more.
- Break beef into small pieces and add to the skillet; cook and stir until browned and crumbly, 5 to 7 minutes.
- Stir tomato sauce and diced tomatoes into the beef mixture; season with salt, place a lid on the skillet, reduce heat to low, and cook at a simmer for 1 hour.
- Splash wine over the mixture, stir, and simmer until thickened, about 20 minutes.

The spaghetti sauce is based on the famed Ragu alla Bolognese (sauce in the style of Bologna). The addition of milk might seem unusual, but it's traditional in northern Italy-where butter and cream, as well as milk, are essential to the cuisine.

- Heat butter and oil in a large saucepan over medium. Stir in carrot, onion, and garlic. Add ground beef, and cook until it turns from pink to brown, about 5 minutes.
- Add tomatoes and their liquid, crushing them with the back of a large spoon. Stir in milk, bay leaf, thyme, nutmeg, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Simmer 20 minutes.
- Meanwhile, in a large pot of boiling salted water, cook fettuccine until al dente according to package instructions, about 12 minutes. Reserve about 1/2 cup of the cooking water; drain fettuccine, and return to the warm pot. Add meat sauce, and toss. Add pasta water as needed if the sauce seems dry. To serve, sprinkle with Parmesan.

- Heat olive oil in a shallow soup pot.
- Sauteé garlic until golden, then add onions and peppers.
- Sauteé until onions are starting to become translucent, then add beef, and season with salt and pepper.
- Brown until cooked through (about 10-15 minutes).
- Drain grease.
- Add wine (if using) and allow to cook for a couple of minutes.
- Add tomato sauce, tomatoes, boullion cube, parsley, oregano, thyme and basil, salt and pepper and sugar.
- Stir to combine and bring to a boil.
- Boil for about 1 minute then reduce heat to med-low and simmer 20 minutes.

- 1. In a deep skillet, brown ground beef with onion, garlic and mushroom; Drain off grease and return meat mixture to pan.

- 1. In a large saute pan or skillet, heat oil and add minced shallot and garlic. Stir and cook until fragrant but not brown. Add ground chuck and Italian sausage, broken into small bite sized pieces and saute until browned. Add remaining ingredients except sugar, salt and pepper, and olives. Mix well, stir occasionally and let simmer on medium low for about 20 minutes. Add olives and taste to adjust seasoning with salt and pepper. Add as much or as little of the sugar as you like, per your preferences. Simmer until sauce is thick enough for your taste. (I like mine really thick)

- Remove stems from mushrooms. Cut into quarters and toss into food processor. Chop finely, 8-10 1-second pulses.
- Heat olive oil in a medium saucepan over medium-high heat until it smokes. Add onion and mushrooms and saute until soft and very brown, 6-12 minutes.
- Pulse milk and bread in food processor until it forms a paste, about 8 pulses. Add salt and pepper. Add beef and pulse until just combined, about 6 pulses.
- Add garlic, red pepper flakes and tomato paste to saucepan. Deglaze with 1/4 cup of the reserved tomato juices (discard or consume the rest). Add 2 tsp fresh oregano (if using dried oregano, add all of it now) and stir well.

- 1. Heat a large frying pan. Add the meat and cook; breaking the meat up as it cooks. Add the onion, bell pepper and the garlic and continue to sauté until the onion is transparent. Add the crushed tomatoes and the seasonings and half of the basil chopped. Simmer the sauce on low slightly covered for about 30 minutes. Check for the seasoning and season again to if needed. Prepare the macaroni as directed. Garnish with a little extra olive oil, grated cheese and the rest of the fresh basil.
