This is my favorite quick and easy recipe. For more flavor, add maple syrup.

½ cup butter
2 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried thyme

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
  • Transfer potatoes to a large bowl; mash butter, garlic, basil, and thyme into the potatoes with a potato masher until smooth.

The addition of maple syrup makes these pleasently different. This dish was always popular when I catered holiday dinners. I put a small amount of syrup here but you may certainly add more if you like. I have also cut it down as I doubt that very many folks will be having 100 at their table *wink*. Prep time is actually the mixing time after the potatoes have been baked. Also this can be made the day before and gently reheated (covered) before serving. **EDIT** After several reviewers commenting that the maple flavor is faint I have upped the maple syrup content on Jan 18 "07, please feel free to add more after tasting it if you would like to.

1/4 teaspoon salt
2 tablespoons butter

1 whole garlic bulb
1 teaspoon olive oil
2-1/2 pounds Yukon Gold potatoes, peeled and quartered
2 cups chicken broth, divided
1/4 cup butter, softened
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Remove papery outer skin from garlic bulb (do not peel or separate cloves). Cut top off bulb; brush with oil. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Meanwhile, place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Place 1 cup broth in a blender. Squeeze softened garlic into blender; cover and process until blended. 1 cup orange juice
1 cup butter
3 tablespoons white sugar
2 cups marshmallows

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and mash.
  • Preheat oven broiler.
  • Mix mashed potatoes with orange juice, butter and sugar until smooth. Spread in a 9x13 inch baking dish. Cover with marshmallows.

  • Put potatoes in a large saucepan, and cover with cold water. Add 2 tablespoons salt. Bring to a boil. Reduce heat to medium-low, and simmer until tender, about 10 minutes. Drain potatoes in a colander.

8 -10 red potatoes
kosher salt

1/4 cup heavy cream
1/4 cup butter
1/3 cup roasted garlic cream cheese
1 head roasted garlic

  • to Roast the garlic -- cut the top off and place in foil. Coat with good olive oil and salt and pepper. Roast at 375 for about an hour. Garlic should be golden brown and smell slightly sweet. Sit aside untill the potatoes are done.
  • peel and cube the red potatoes.
  • put in a pot with cool water to cover, add a generous pinch of kosher salt. bring to a boil and cook untill soft. you can test with a fork for tenderness.
  • drain off water and return to the pot. Put back on burner over minimum heat add the butter, cream and mash. Add cream cheese, rasted garlic with more salt and pepper. Mash untill desired consistancy. Taste and adjust salt and pepper as desired.

1/4 cup water or vegetable broth
1/4 cup half-and-half plus more as desired

Two-quart or larger Crock Pot

Steps:

  • Place garlic in the Crock Pot, then add potatoes. Top with butter, sprinkle on the salt, and add the water or vegetable broth.
  • Cook on high 3 - 4 hours or low 8 hours. Potatoes and garlic should be very tender.

Steps:

  • Add the cubed potatoes to a large pot; fill with enough water to cover the potatoes and add ½ tablespoon of salt.

Steps:

  • Cut potatoes into quarters and place into a pot. Cover with water and bring to a boil. Reduce heat to medium-low and simmer until tender and a fork slides easily into each potato, about 20 minutes. Drain.
  • Mash potatoes. Add 2 tablespoon each butter and milk. Adjust the measurements if needed-if it's dry, add more milk and if it's not creamy enough, add more butter. Add celery salt and salt; continue to mash until there are no clumps of potato left and everything is thoroughly blended.
