CHOCOLATE MARSHMALLOW FUDGE
Rich and delicious, this treat tastes so out-of-this world, one square is all you need to satisfy a sweet tooth. Plus, it's so easy to prepare. Just cook the milk, sugar, and margarine on the stove top. Remove the pot from the heat and stir in the chocolate and marshmallows until smooth and pour into a pan. It's that simple! Store the fudge in refrigerator for at least 2 hours or until you're ready to enjoy before cutting them into squares. They'll hold up well in the fridge for about a week. You could also freeze the pan briefly for a firmer consistency if you prefer.

- Coat an 8- X 8-inch pan with cooking spray.
- In a medium saucepan, stir together sugar, evaporated milk and margarine (or butter); bring to a boil over high heat. Reduce heat to medium-low and cook, stirring constantly, about 3 minutes.
- Stir in chocolate and marshmallows; remove pan from heat and stir until smooth.
- Pour mixture into prepared pan and refrigerate until firm, about 2 hours. Cut into thirty-six 1 1/3-inch squares and serve. Yields 1 piece per serving.

- Preheat oven to 180 deg C (350 deg F, Gas 4). Coat a 20x30cm lamington pan with cooking spray.
- In a large bowl combine flour, cocoa and Maltesers well, breaking any cocoa lumps.
- In a large jug thoroughly mix together the eggs, sugar, oil and frommage frais. Fold into the dry ingredients.
- Pour into prepared tin and spread evenly. Bake for 25-30 minutes or until firm to touch. Cool in pan and then slice into 16 pieces. Dust with icing sugar or cocoa powder.
