EASY STRAWBERRY JELLO SALAD WITH COOL WHIP
Steps:
- Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.

- 1. In a large bowl, thoroughly combine the cottage cheese with the Jello. Mixture will be a little grainy due to undissolved sugar (you can stir it until it dissolves, but I never do and it comes out fine - sugar will usually dissolve during refrigeration, but if it doesn't, it's no big deal).
- 2. Fold in the whipped topping until evenly incorporated. Don't get too vigorous with this as it's possible to stir out all the loft in the topping.
- 3. Make sure the oranges are well drained (if you're frugal you can use the juice to flavor/sweeten something else). OPTIONAL - Reserve several orange sections for decoration - (I usually pull out 16 well-formed slices). Next, gently stir the remaining fruit into the Jello mixture until well distributed. Remember, don't over-do it or you'll lose too much loft from the whipped topping and the dish will be runny.
- 4. Transfer mixture to serving dish, smooth top and (OPTIONAL) arrange reserved orange sections in attractive design (I put a slice at each of the clock numbers, all facing the same direction, plus a "flower" of 4 in the center, usually facing the opposite direction from the numbered slices). Cover; refrigerate. Serve cold.
- 5. VARIATIONS This can easily be made lower calorie or diabetic friendly by choosing dietetic options for the ingredients. Be forewarned, however, if you use a dietetic product for every option, you will probably be disappointed in the flavor. If you want more of a Dreamsicle flavor, you can add half a teaspoon of vanilla extract.

- Stir in 12 oz can of frozen OJ, will be soft set in just a bit.
- Then stir in drained mandarin oranges.
- Chill 4 hours or so until firmly set.

Can't get much easier than this and it is always the first to go. I was making this for years, before I realized I was supposed to put sour cream in it -- so leave it out if you want sweeter! Lime jello and kiwi or well drained pineapple or strawberry jello with fresh strawberries are good too!

Steps:
- Mix 1 large box of strawberry-banana jello according to package directions. Let set in the icebox until almost set (jelled), but not quite (about 2 hours).
- Drain can of mixed fruit and add to your jello. Now, peel and slice your banana in your jello and mix.
- Add about 3/4 container of Cool Whip to your jello and fold.
- Return jello mixture to your icebox and let it finish setting up.
- If you mess up and your jello sets up all the way, just microwave for about 1 minute or leave at room temperature until it begins to soften and then add your mixed fruit, etc. You cannot mess this up!
