Two incredibly easy ways to eat edamame as a healthy snack, side dish, or appetizer. A salted edamame pods recipe and a spicy salt & chili shelled edamame recipe.

2 cups frozen edamame pods
1 tsp sea salt flakes
2 cups frozen shelled edamame
1 tsp sea salt flakes
1/2 tsp chili flakes

Steps:

  • Rinse the beans under running water.
  • Boil the frozen edamame or heat in a microwave for 4-5 minutes. Drain well, then sprinkle with sea salt and serve warm in their pods.
  • Rinse the shelled beans under running water.
  • Boil the frozen edamame or heat in a microwave for 4-5 minutes.
  • Drain well, and let them cool for a couple of minutes. Put the beans in a serving bowl, sprinkle with the sea salt and chili flakes and serve warm.

Nice fresh salad for summer that's a little different from the norm. The seasonings can be adjusted to taste, these are just rough guesses since I usually just add till it tastes good.

1 (16 ounce) package frozen shelled edamame (green soybeans), thawed
1 (16 ounce) package frozen sweet corn, thawed
1 (16 ounce) package frozen sweet peas, thawed
1 (12 ounce) can black beans, drained and rinsed
½ red onion, minced
¼ cup olive oil, or to taste
¼ cup red wine vinegar, or to taste
½ teaspoon salt
½ teaspoon dried parsley
¼ teaspoon ground black pepper
¼ teaspoon dried basil
¼ teaspoon garlic powder

Steps:

  • Mix edamame, corn, peas, black beans, and red onion in a large bowl.
  • Stir olive oil, vinegar, salt, parsley, black pepper, basil, and garlic powder into edamame mixture.
  • Chill in refrigerator at least 30 minutes before serving.

Easy Italian Edamame image

This is an easy and delicious recipe that I found in Shape Magazine. It's a filling dish that I whip up for a main dish but it can also be made as a side. This was Shape's vegetarian recipe of the month.

2 medium zucchini
1 teaspoon olive oil
2 garlic cloves, minced
1 3/4 cups chopped onions
1 diced red bell pepper
16 ounces edamame, shelled (i used one bag frozen)
2 (14 1/2 ounce) cans Italian-style diced tomatoes
3/4 cup orange juice
1/2 cup chopped basil
2 cups cooked long-grain brown rice
basil (to garnish)
orange slice (to garnish)

Steps:

  • Slice zucchini into thinly sliced (1/4 inch) pieces, set aside.
  • Dice red bell pepper and onion, set aside.
  • Heat olive oil in a large saute pan or wok over medium-low heat.
  • Add garlic and saute for 1 minute.
  • Add onion to pan. Cook 2 minutes or until pieces begin to soften.
  • Add bell pepper, zucchini, and edamame. Stir and cook for 2 minutes.
  • Strain tomatoes, reserving juice (about 1 cup). Combine solid tomato chunks with vegetable mixture and stir.
  • Whisk together reserved tomato and orange juice; pour over vegetables.
  • Turn heat to low and simmer 15 to 20 minutes.
  • Add basil and toss together.
  • Serve over brown rice and garnish.
