1 (16 ounce) container frozen non-dairy whipped topping
1 (12 ounce) jar chocolate fudge topping, room temperature
1 (1.5 ounce) bar chocolate candy bar, grated

Steps:

  • Place 8 of the ice cream sandwiches side by side in a 9x13 inch baking dish. Spread evenly with half of the hot fudge topping, then half of the whipped topping. Repeat with the remaining sandwiches and toppings. Sprinkle with grated chocolate bar.
  • Cover and freeze for at least 1 hour before serving. Keep unused portion covered and frozen.

It's hard to find a summer dessert easier and more refreshing than this combination of strawberry ice cream and a purchased 10-inch angel food cake! Layers of cake and ice cream, frosted with a purchased frozen whipped topping, are stored in the freezer until you are ready to garnish and slice. This should keep, covered, in the freezer for a week or two. I've never been able to find out exactly how long it will store, because it's usually gone in a few days!

1 (10 inch) prepared angel food cake
2 pints strawberry ice cream
1 (8 ounce) container thawed frozen whipped topping
6 large fresh strawberries, sliced
1 sprig fresh mint, leaves picked

Steps:

  • Using a long serrated knife or bread knife, slice angel food cake into 3 equal horizontal layers. Place the bottom layer onto a freezer-proof plate.
  • Remove packaging from the ice cream and slice about 1-inch thick. Working quickly, place ice cream slices on the bottom cake layer, filling the gaps with ice cream and leaving the center unfilled. Lightly press the ice cream pieces together to form a solid layer the same size as the cake layer. Repeat with the second cake layer and remaining ice cream. Top with the final layer of cake and freeze until the ice cream is firm again, about 1 hour.
  • Frost the entire cake with whipped topping. Garnish with fresh strawberry slices and mint. Serve immediately.

nonstick cooking spray
1 (15.25 ounce) package devil's food cake mix
1 cup water
½ cup oil
3 large eggs
½ gallon vanilla ice cream, slightly softened
2 cups chopped chocolate sandwich cookies (such as Oreo®)
1 (7.25 ounce) bottle chocolate shell topping (such as Magic Shell®)
2 cups heavy whipping cream
2 cups powdered sugar
decorating icing (optional)
candy sprinkles (optional)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly coat the bottom and sides of two 8-inch round cake pans.
  • Blend cake mix, water, oil, and eggs in a large bowl until moistened. Beat with a mixer on medium speed for 2 minutes. Pour into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 32 to 38 minutes.
  • While the cake layers are baking, line a clean 8-inch round cake pan with plastic wrap, allowing the sides to hang over about 6 inches all the way around. Peel down the sides of the ice cream carton and slice off several big pieces; press them into the prepared cake pan. Wrap plastic over the top of the ice cream and continue to form until it's in an even layer. Freeze for 1 hour.
  • Remove cakes from the oven and cool for 10 to 15 minutes in the pans. Transfer to a wire rack and let cool completely, about 30 minutes.
  • Place one cake layer on a freezer-safe plate. Reserve remaining layer for another use (you can freeze it for up to 4 months.)
  • Combine chopped cookies and chocolate topping in a medium bowl. Spread cookie "crunchies" evenly on top of the cake layer. Invert frozen ice cream layer on top of cookie layer with the bottom (smooth side) up. Return to the freezer for 1 hour.
  • Add cream to bowl of a stand mixer fitted with a whisk attachment and whisk on medium speed. Gradually mix in powdered sugar until stiff peaks form. Spread icing evenly over cake and freeze for 1 more hour.
  • Decorate cake with icing and sprinkles and return to the freezer for at least 30 minutes (or up to 1 week) before serving.

1 (1/2 gallon) container mint chocolate chip ice cream
1 package Oreo cookies

Steps:

  • Allow the ice cream to melt in a large bowl till it is just a thick, soupy mixture.
  • Crush the entire package of Oreos in a food processor.
  • Mix the melted ice cream and the cool whip together.
  • Take a 9 by 13 pan and layer the Oreos and the ice cream mixture.
  • Start with the ice cream and then add Oreos then the ice cream and so on.
  • Put it in the freezer over night or at least 8 hours covered in plastic wrap and then serve with dribbled chocolate sauce on top.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray at 9x13-inch glass baking dish with cooking spray.
  • Combine sugar, flour, butter, eggs, walnuts, cocoa powder, vanilla extract, baking powder, and salt together in a large bowl, stirring well as each ingredient is added, until smooth batter forms. Pour batter into prepared baking dish.
  • Bake in preheated oven until top is dry and edges have started to pull away from the sides of the pan, 20 to 30 minutes. Cool to room temperature, 30 to 45 minutes.

2 tablespoons softened butter
1 McIntosh apple, diced
1/2 teaspoon ground cinnamon

  • Preheat oven to directions on box. Mix cake mix to directions on box, using 1/2 cup water and 1 egg. Grease a 9 by 9-inch square cake pan or disposable cake pan with butter. Pour in cake batter. 1/4 cup (28g) cocoa powder (Hershey's Special Dark is my favorite)
1 1/4 teaspoons (4.6g) baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup (157ml) hot brewed coffee (or milk)
1 gallon ice cream (flavor of choice)
1 3/4 cups (413ml) heavy whipping cream
1/4 cup (28g) cocoa powder
3/4 cup (98g) powdered sugar
1-2 teaspoons pure vanilla extract to taste

Steps:

  • Preheat the oven to 350°F. Line an 8-inch cake pan with parchment paper or a silicone baking mat and grease & dust the edges with a combination of flour and cocoa powder.
  • In a large mixing bowl, combine the sugar, vegetable oil, eggs and vanilla extract. Beat on medium speed until the eggs and oil are well incorporated and the batter is lighter in color. Next mix in the sour cream and beat until well combined.
  • In a separate bowl, sift together the dry ingredients. Then alternate adding half the dry ingredients followed by half of the coffee and mix just until the flour starts to incorporate. Use a spatula to scrape down the sides of the bowl and stir the batter from the bottom to the top to ensure it's well mixed.
  • Bake at 350°F for 28-30 minutes. Test the cake for doneness by inserting a toothpick into the center of the cake. If the toothpick comes out clean, the cake is done. Cool Completely.

1 box 8 count individually wrapped chocolate creme-filled suzy q's cakes
2 c mint chocolate chip ice cream or your favorite flavor
1/2 tsp mint extract, if using mint ice cream
8 oz container thawed whipped topping

Steps:

  • 1. Line an 8x4-inch loaf pan with plastic wrap that overhangs the edges. Remove wrapping from 8 of the cakes.(Twinkies would work great too!) Press 4 cakes into bottom of pan, so the long sides of the the cakes are parallel with the short way of the pan.
  • 2. Place pan in freezer while ice cream softens. Let ice cream stand at room temperature for 10 minutes, stirring until consistency of thick sour cream. Once ice cream is thickly spreadable, remove pan from freezer . Spread ice cream over top of cakes and to completely cover to edges of pan.
  • 3. Press remaining 4 cakes on top of ice cream, the same as the last ones. Tightly cover top of cake with overhanging plastic wrap. Freeze until firm at least 3 hours.
  • 4. Fold mint extract, if using, into thawed whipped topping. Once cake is firm to touch, uncover top of cake. Invert onto platter; remove pan and plastic wrap. Frost sides and top of cake with thawed whipped topping(before doing this if you want tint topping with color of your choice tint green in this case , if desired -(depending on the flavor and color of ice cream - pink for strawberry ice cream etc..) Refreeze for at least 2 hours or overnight. Thinly slice and serve. IF YOU LOVE ICE CREAM CAKES YOU WILL LOVE THIS ONE!

3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 gallon ice cream, your choice
3 (16 ounce) jars frosting

Steps:

  • Bake the cake according to directions in two 8" round pans.
  • While cake is baking let the ice cream soften a bit.
  • Spread ice cream, about 1/2 inch thick on buttered cookie sheet, if you can form about the same size as the cake.
  • Place in freezer until frozen well.
  • When cake is cooled completely (very important) cut each layer in half with long knife.
  • Carefully separate layers.
  • Place the ice cream in the middle of each layer of cake.
  • So it is cake, ice cream, cake.
  • Place in freezer about an hour.
  • Remove from freezer, frost bottom, place on second layer, frost.
  • Place in freezer another hour.
  • Frosting should be frozen.
  • Wrap in plastic wrap till ready to serve. When you are ready to serve heat knife in hot water before cutting.
