HONEY-GLAZED BAKED SALMON
I got this recipe from a friend and, as a new cook, it is easy to make and delicious to boot! Even when I make this recipe with fewer pieces of salmon (2 small salmon filets), I still make the same amount of honey glaze, because it is so delicious and I prefer having more sauce rather than not enough.

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix honey, green onions, soy sauce, sesame seeds, garlic, onion, ginger, and red pepper flakes in a small bowl until blended.
- Place salmon in single layer in a 9x13-inch baking dish. Spoon honey mixture evenly on top of salmon; the mixture will run off, but try to coat the fish with a thin layer all over.
- Roast salmon in the preheated oven, basting salmon with the sauce at least once, until fish flakes easily with a fork, about 20 minutes.

An easy dinner for two that won't heat your kitchen up as it cooks very quickly. Easily doubled for 4 if you have a large skillet. Boneless salmon fillets can be substituted for salmon steaks if you hate picking out the bones.

- In a skillet (that has a lid), place orange juice, honey, and finely grated ginger; stir well to combine and bring to a boil.
- When boiling, add the salmon steaks, cover, and reduce heat so that the liquid mixture barely bubbles.
- Cook for 10 minutes, turning salmon after 5 minutes.
- Meanwhile, with a sharp knife, cut bottom and top off of orange and place on a cutting board; following the curves of the orange, cut off peel; cut into thin slices.
- Remove salmon to dinner plates, turn heat to high, and cook liquids in pan until reduced by half; pour over salmon.
- Garnish with orange slices and serve.

- Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
- Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
- Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
- Drizzle the reserved honey-lime mixture over top of the salmon just before serving.
