I like this recipe because, well, it's quick, easy, healthy, and, most of all, yummy. No special ingredients needed...just baking staples and a couple of ripe bananas. This recipe comes from "the best of Cooking Light" cookbook.

Number Of Ingredients 9

1 cup mashed ripe banana (about 2 medium)
3/4 cup sugar (or splenda)
1/4 cup vegetable oil
1 large egg white
1 large egg
1 3/4 cups flour
1 1/4 teaspoons cream of tartar
3/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Combinen first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth.
  • Combine flour, cream of tartar, baking soda, and salt in a bowl, stirring with whisk. Add flour misture to banana mixture, stirring just until moist.
  • Spoon batter into an 8x4 inch loaf pan coated with cooking spray.
  • Bake at 350 for 40 minutes. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on rack.
  • To freeze, wrap tightly in plastic wrap, and place in a heavy-duty plastic bag. Good for up to a month.

Banana bread is great for breakfast or afternoon tea and this is a very moist, tasty recipe. Bananas make the bread sweet so you don't notice that there is only a little sugar added. We added macadamia nuts to the bread and liked the crunch and coconut flavor. Dense and filling, no one will believe you when you say it's healthy.

3-4 ripe or even overripe bananas
1/3 c butter, warm and soft or melted (75 g)
1/8 c cane sugar (or sugar of your choice)
1 egg, beaten
1 1/2 c whole wheat flour (I like spelt)
1/2 c hazelnuts/pecan nuts/macadamia nuts/pumpkin seeds (your choice)
1 pinch salt

Steps:

  • 1. Preheat the oven to 350°F (175°C). Mash the bananas in a large bowl.
  • 2. Beat the egg briefly in a small bowl.
  • 3. Add the egg, salt, and soft butter to bananas. Combine (brief, not too precise).
  • 4. Add the flour, sugar, (baking soda/powder), nuts/seeds. Combine (brief, not too precise).
  • 5. Butter and flour the ring mould, tin or whatever you use.
  • 6. Put the mix in the tin.
  • 7. Bake in the oven for 1 hour. Enjoy!
