2 tablespoons canola oil
1 medium onion, cut into 1/4-inch thick rings
1 cup chicken broth
1 (8 ounce) can pineapple chunks, undrained
2 tablespoons lemon juice
3 tablespoons reduced-sodium soy sauce
1 tablespoon cornstarch
½ teaspoon dry mustard
6 skinless chicken thighs
1 small red bell pepper, cut into 1/4-inch rings

Steps:

  • Heat canola oil in a skillet over medium heat. Add onion rings and cook and stir for 3 minutes. Pour in chicken broth, pineapple juice, and lemon juice carefully. Bring to a boil.
  • Mix soy sauce with cornstarch and dry mustard in a bowl. Add to the sauce in the skillet, stirring until clear and thickened, 2 to 3 minutes.
  • Place chicken thighs in the sauce. Cover and simmer, stirring occasionally to prevent sticking, until chicken juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Add pineapple chunks and bell pepper to chicken; simmer until tender, about 5 minutes more.

1 1/2 cups finely chopped pineapple
3/4 cup bottled barbecue sauce
1 tablespoon soy sauce
1/2 teaspoon ground ginger
20 chicken wings, split,discard tips

Steps:

  • In a large bowl (non metallic) combine pineapple, barbecue sauce, soy sauce and ginger in.
  • Add chicken, turning to coat all sides.
  • Cover and marinate 15 minutes in refrigerator.
  • Grill or broil chicken 15 to 20 minutes or until chicken is no longer pink, brushing occasionally with marinade and turning once halfway through cooking.
  • Discard any remaining marinade.
  • Garnish with pineapple wedges if desired.

4 skinless, boneless chicken breast halves
1 cup bottled teriyaki sauce or marinade
1 green bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
1 onion, chopped
1 (20 ounce) can pineapple chunks, drained

Steps:

  • Preheat a grill for medium-high heat.
  • Lay out four squares of aluminum foil. Place one piece of chicken in the center of each square. Pour the teriyaki sauce over them, turning to coat. Distribute equal amounts of the green and red peppers, onion and pineapple chunks amongst the chicken pieces. Fold the foil up and seal tightly into packets.
  • Place the packets on the grill, and cook for about 20 minutes, or until chicken is no longer pink and juices run clear. I like to take one packet off the grill and check it before removing them all.

I got this recipe from a woman that used to live in Hawaii and it is absolutely amazing! I use miracle whip for the recipe but it originally called for mayonnaise, which i don't care for so either can be used according to your preference. It is very good grilled on jalapeno cheese bread with havarti cheese.

1 small red onion, diced
1 (8 ounce) bag sliced almonds

1 cup pineapple juice
1 tablespoon cornstarch
1 cup Yoshida gourmet sauce
1 tablespoon olive oil
1 tablespoon crushed red pepper flakes
1 1/2 lbs boneless skinless chicken breasts or 1 1/2 lbs boneless skinless chicken thighs

Steps:

  • In a medium bowl, mix cornstarch with pineapple juice, stirring to dissolve.
  • Add Gourmet Sauce, olive oil, and crushed red pepper, stirring well.
