SPICY GINGER VEGETABLE SOUP



Spicy Ginger Vegetable Soup image

For an even heartier version of this amazing soup, add cooked 100% buckwheat noodles or brown, black, or red rice just before serving.

5 cups vegetable broth
1 4-inch piece lemongrass (crushed)
4 tablespoons fresh ginger (grated)
1 garlic clove (minced)
2 cups shiitake mushroom caps (sliced)
2 shallots (cut lengthwise into thin slivers)
2 cups bok choy or napa cabbage (thinly sliced)
1 cup carrot (shredded)
3 scallions (chopped)
2 teaspoons lime juice (or to taste)
4 cherry or grape tomatoes (halved)
1 teaspoon Healthy Hot Sauce (or to taste)
2 teaspoons Savory Spice Blend
2 tablespoons fresh Thai basil or cilantro (chopped)

Steps:

  • In a large pot, combine the broth, lemongrass, ginger, and garlic. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove the lemongrass and bring to a boil.
  • Add the mushrooms, shallots, bok choy, and carrot. Reduce the heat to low and cook for 3 minutes. Stir in the scallions, lime, tomatoes, Healthy Hot Sauce, and Savory Spice Blend. Simmer until hot, about 2 minutes. Garnish with Thai basil or cilantro and serve hot.

CARROT-GINGER SOUP WITH ROASTED VEGETABLES



Carrot-Ginger Soup with Roasted Vegetables image

Add a can of beans to vegetable purees like we did here. It adds fiber and makes the soup extra filling.

3 tablespoons extra-virgin olive oil, plus more for drizzling
2 scallions, sliced (white and green parts separated)
2 tablespoons chopped peeled fresh ginger
2 cloves garlic, smashed
5 carrots, chopped
Kosher salt and freshly ground pepper
1 14-ounce can light coconut milk
1 15-ounce can cannellini beans, undrained
1/2 acorn squash, seeded and chopped into 3/4-inch pieces
3 cups roughly chopped broccoli florets and tender stems (about 1 head)
2 slices crusty bread, cut into 1-inch pieces, plus more bread for serving

Steps:

  • Preheat the oven to 450 degrees F. Heat 1 tablespoon olive oil in a large wide pot or Dutch oven over medium-high heat. Add the scallion whites, ginger and garlic and cook, stirring occasionally, until softened, about 2 minutes. Stir in the carrots and season generously with salt and pepper. Add the coconut milk, beans with their liquid and 3 cups water. Cover and bring to a boil over high heat. Uncover and cook, stirring occasionally, until the carrots are very tender, 18 to 20 minutes.
  • Meanwhile, toss the squash, broccoli and bread with the remaining 2 tablespoons olive oil and 1/4 teaspoon each salt and pepper on a rimmed baking sheet. Roast, stirring, until the vegetables are tender and browned and the bread is toasted, about 15 minutes.
  • Puree the soup with an immersion blender (or transfer to a regular blender in batches and puree); season with salt and pepper. Divide the soup among bowls. Drizzle with olive oil and top with the vegetable-crouton mixture and scallion greens. Serve with bread.

1 tablespoon diced fresh ginger
2 teaspoons sesame oil
3 large carrots, peeled and sliced thin
3 stalks celery, sliced thin
1 head Chinese cabbage, shredded
3 cups bean sprouts
3 -4 cups water
1/4 cup low sodium soy sauce or 1/4 cup tamari

Steps:

  • Heat oil in a large pot and add ginger. Sauté for a minute or so.
  • Add carrots and celery and sauté until they begin to sweat.
  • Add soy sauce/tamari and water and bring to gentle boil.
  • Add cabbage and sprouts and cook until the vegetables are just tender and the cabbage begins to wilt.

2 tablespoons olive oil
2 tablespoons fresh garlic, minced
2 tablespoons fresh ginger, minced
1 tablespoon ginger paste (optional)
1 teaspoon cayenne pepper
salt, to taste
pepper, to taste
1 large sweet onion, Finely diced
2 lbs boneless skinless chicken breasts, cut into pieces
1/2 cup fresh carrot, sliced
32 ounces chicken broth, organic
6 -8 cups water, depending on preference
1 cup fresh spinach

Steps:

  • Heat olive oil in a large pan.
  • Add fresh garlic, fresh ginger, and onion.
  • Cook for 3-4 minutes. Add Ginger paste, cayenne pepper, and salt & pepper. Cook for an additional 3-4 minutes, stirring often.
  • Add the chicken broth, water, chicken, and carrots.
  • Bring to a boil. Reduce heat and simmer for 30 minutes (feel free to cook on low for up to an hour).
  • Add spinach and let cook for 5 minutes just before serving.
  • Note: you can also add mushrooms, to add in more antioxidants. Simply add to the soup at the same time you add the carrots.
