1 cup grated Parmesan cheese
2 tablespoons garlic powder
1 tablespoon onion powder

1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.
  • Combine Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a second resealable bag. Pour oiled potatoes into the bag, seal, and toss well to coat.
  • Spread potatoes on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip potatoes over and bake until crisp on the outside and soft on the inside, about 15 minutes more.

One 1 1/2-pound bag microwaveable golden or new potatoes (Red Bliss works too!)
6 strips bacon
2 tablespoons salted butter
6 red, orange or yellow mini sweet peppers, chopped
1/2 white or sweet onion, chopped
1 teaspoon steak seasoning
Kosher salt and freshly ground black pepper
1 cup shredded cheddar-jack cheese blend
4 scallions, chopped

Steps:

  • Leave the potatoes in the bag and cook them in the microwave for 2 minutes less than the package instructions so they aren't too soft (they will cook in the pan, plus, you'll need to break them down further). Remove from the bag and let cool until cool enough to handle, then cut the larger potatoes into sixths and the smaller ones into fourths.
  • In a mid-sized pan on the stovetop or on a grill on medium heat, add the bacon and cook until crispy. Remove the bacon from the pan with a slotted spoon, leaving the bacon fat in the pan. Roughly chop the bacon and set aside. Add the butter to the bacon fat. Once it has melted, add the potatoes in one layer if possible. (If not, do the potatoes in batches.) Cook the potatoes on one side until a peek beneath reveals a golden crust, 10 to 15 minutes, then toss and repeat. Do this a few times; if doing in batches, you can pile the cooked potatoes on the side of the pan while the new ones get attention. Once the potatoes are almost done, push them all to the sides of the pan.
  • To the center of the pan add the peppers, onions, steak seasoning, a pinch of salt and a few grinds of black pepper. Cook the veggies, stirring, until the peppers and onions are tender but still have some crunch, about 5 minutes. Add the bacon back to the pan and toss everything together. Season with salt and pepper. Remove from the heat and stir in the cheese. Transfer to a serving bowl and garnish with the scallions.

2 teaspoons ground cumin
2 teaspoons kosher salt
½ cup water
½ cup distilled white vinegar
1 tablespoon kosher salt
1 tablespoon sugar
2 cloves garlic
2 strips lime zest
6 jalapeñoes, sliced into 1/2 in (1 1/4 cm) round
1 bag frozen french fries, preferably crinkle cut
1 cup shredded mexican cheese blend
½ cup sour cream
4 scallions, thinly sliced

Steps:

  • Make the chili: In a slow cooker, combine the ground beef, onion, diced tomatoes, kidney beans, black beans, chili powder, cumin, and salt. Cover and cook on low, stirring often, for about 6 hours, or until the onions are tender.
  • While the chili cooks, make the quick pickled jalapeños: In a small saucepan, combine the vinegar, water, salt, sugar, garlic, and lime zest. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer until the salt and sugar have dissolved, about 2 minutes.
  • Add the jalapeños to a medium heatproof bowl or large mason jar. Carefully pour the pickling liquid over the jalapeños, making sure they are fully submerged. Let the pickles cool to room temperature, about 1 hour. Cover the bowl with plastic wrap or seal the jar and transfer to the refrigerator until ready to use. The pickled jalapeños will keep in the refrigerator for up to 2 weeks.
  • Make the chili cheese fries: Preheat the oven according to the French fry package instructions.
  • Spread the French fries in an even layer on a rimmed baking sheet. Bake for 3 minutes less than the package instructs.
  • Remove the fries from the oven and top with several large scoops of chili. Sprinkle the shredded cheese evenly over the top. Return to the oven for about 5 minutes, or until the cheese has melted completely.

Time-consuming home fries on my watch? Never! I had leftover potato "meat" from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. NOTE: The amounts shown aren't an exact science, more to give you an idea and show that home fries can be made quickly :)

Number Of Ingredients 4

3 pounds russet potatoes (about 6 large), cut lengthwise into 1/4-inch-wide strips
Nonstick cooking spray
4 teaspoons vegetable oil
Coarse salt and ground pepper

Steps:

  • In a large bowl, cover potatoes with water by 2 inches. Refrigerate at least 3 hours (or up to overnight).
  • Preheat oven to 400 degrees, with racks in upper and lower thirds. Lightly coat 2 rimmed baking sheets with cooking spray. Drain potatoes and pat dry; wipe out bowl. Toss potatoes in bowl with oil and season with salt and pepper. Divide potatoes between sheets and arrange in a single layer. Bake until golden and crisp, 45 minutes. Toss potatoes and rotate sheets. Bake 15 minutes more.
