1 large onion, peeled and thinly sliced
2 tablespoons butter
1 tablespoon olive oil
4 potatoes (baked or boiled and cooled)
salt and pepper

Steps:

  • Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
  • Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
  • Return the onion to the pan, toss and season. Serve warm.

4 gold potatoes, sliced 1/4 inch thick
4 tablespoons butter
salt
pepper

Steps:

  • Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
  • Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
  • Add salt and pepper sometime during frying time, to taste.

1 lb boneless skinless chicken cutlet (4 breasts)
1 cup flour (1 bowl, about 1 cup)
1 1/2 tablespoons butter
1 teaspoon parsley
1/2 teaspoon garlic powder
2 tablespoons sauterne (white, dry)
1 teaspoon lemon juice
4 large russet potatoes
1/3 cup olive oil
fresh thyme
fresh rosemary
oregano
basil
black pepper
sea salt

Steps:

  • Wash chicken cutlets and pat dry with paper towels.
  • Pour flour into bowl (around 1 cup) and season with oregano, basil, and a bit of black pepper. Mix together.
  • Dredge chicken cutlets in flour until all surfaces are completely covered, then shake off excess.
  • Coat frying pan with olive oil and cook chicken cutlets over medium heat until both sides are golden brown.
  • When chicken is almost ready, place 1-1/2 tablespoons of butter with 1 teaspoon of parsley in tea cup or small glass bowl in the microwave for about 90 seconds.
  • Add 1/2 teaspoon of garlic powder, 1 teaspoon a lemon juice, 2 tablespoons of sauterne, and a bit of sea salt to butter and stir together.
  • When chicken is golden brown, add butter mixture over the cutlets as evenly as possible.
  • When most of butter mixture is absorbed into chicken or dissapates, place the cutlets onto a baking sheet (covered with cooking spray) and place them in oven at 400 degrees for about 10-15 minutes.
  • Clean 4 large russet potatoes.
  • Slice potatoes into 16 slices each.
  • Place potatoes slices into large bowl and coat with the olive oil.
  • Add fresh thyme, rosemary, oregano, basil, black pepper, and sea salt to you desired degree.
  • Mix the contents of the bowl together so the seasonings are coated onto the potatoes with the olive oil.
  • Place mixture on baking sheet and cook for around 30-40 minutes at 400 or until potatoes start to brown and get slightly crispy. Test with fork to make sure the potatoes have softened inside.

CHICKEN
4-6 boneless, skinless, chicken breasts
1 bottle of your favorite italian dressing, or your own homemade!
salt and pepper to taste
fresh herbs to taste
2 clove garlic, minced
2 Tbsp extra virgin olive oil
POTATOES
6-8 medium potatoes, skins on, washed, and cut in 1 inch wedges
1/2 stick butter, (or 1/4 cup olive oil)
1/2- 3/4 c of your favorite italian dressing, or your own homemade
1 medium yellow onion, diced
1 clove garlic minced
parmesan cheese, optional

Steps:

  • 1. Note: If you are looking for a good homemade Italian recipe, check out my Colorful Party Pasta Salad Recipe. I include a homemade Italian Dressing within that recipe & it's delicious! Any Italian dressing will do, use your favorite! Try different varieties!
  • 2. Remove any excess fat from chicken & rinse chicken in cold water, pat dry. Place in a large glass bowl, pour dressing over chicken just until thoroughly covered. Turn chicken to be sure to get both sides. Cover & allow to marinade for at least 30 minutes.
  • 3. In the meantime, prepare potatoes. Clean potatoes, & cut in one inch wedges, leaving skin intact. (Need those awesome vitamins!!) Add olive oil to large skillet & heat over medium high heat. Add potatoes. Cook for 15 minutes, turning frequently to brown on all sides.
  • 4. When potatoes are halfway done, add Italian dressing, minced garlic, onions, & your fresh herbs. Add salt & pepper to taste. Continue to cook over medium heat, turning frequently. I cover during this process to help the potatoes cook all the way through. Continue to cook until potatoes are cooked all the way through.
  • 5. While the potatoes are cooking, heat EVOO on medium heat in another large skillet. Add chicken, marinade, & minced garlic. Season with salt & pepper to taste. Cook 5-7 minutes each side depending on thickness of breast. Add fresh herbs the last couple minutes. I used fresh rosemary in this dish.
  • 6. Top with optional parmesan cheese just before serving! This dish goes very well with candied carrots as a side dish. Mmm good!! This is one meal I never have left over of! Sometimes I wish I did just so I wouldn't have to cook!

Steps:

  • 1. Wash, peel and cut up potatoes. Place in microwave-safe bowl and cover with water. Add about 1/2 to 1 teaspoon salt. Microwave on high for about 8 minutes. Drain well.
  • 2. Heat oil in frying pan (I love my cast iron). Add drained potatoes to hot oil and fry for about 5 min or until golden brown. Turn and fry on other side until golden. Add salt and pepper to taste, serve hot.
  • 3. These potatoes make an excellent side dish at dinner time or at breakfast time with eggs and your favorite breakfast meat or you can smother them in gravy. So much faster and easier and no matter how you serve them, these potatoes are scrumptious! You could also add onion, seasoned salt, green peppers or anything else that you like.

EASY PAN FRIED POTATOES, SHALLOTS WITH PARSLEY BUTTER



Easy Pan Fried Potatoes, Shallots With Parsley Butter image

Quick easy side dish. It takes just minutes into the microwave and then transfer to the pan for a quick pan fry. Some fresh parsley, garlic and shallots make this perfect. I loved pan fried potatoes but sometimes they just take too long and I always feel like I'm using too much butter or oil so this is my quick compromise. Now you can use the pre-bagged either frozen or dairy aisle packaged potatoes, but to me there is no comparison. I just love the sweetness and rustic flavor of the red skinned potatoes. Besides this is so easy to make and such a great inexpensive side dish. Serve with steak, fried fish, or any seafood, and of course one of my favorites an omelette. I don't know about you, but I can eat breakfast any time of the day.

12 medium red potatoes, cut in quarters (3 per person)
2 shallots, thin sliced
3 teaspoons minced garlic
2 scallions, fine chopped (whites and greens)
3 tablespoons fresh parsley
2 tablespoons butter
salt
pepper

Steps:

  • Potatoes -- Add the potatoes to a bowl or I prefer using a pie plate and add just a tablespoon or so of water and cover with plastic wrap. Now microwave. I like to start at 5 minutes and then check. You want them slightly tender but still firm and not falling apart - remember you are going to finish then in the pan. Once they are done, just remove from the microwave and drain well, you don't want water to hit a hot pan.
  • Pan Fry -- Add the shallot and garlic to a medium saute pan with 1 tablespoon of the butter on medium heat and cook 2 minutes. Increase the heat to medium high to high and add the other tablespoon of butter, potatoes and parsley. I like to let them set for a couple of minutes to brown on the bottom before flipping and stirring breaking them up slightly and then again a couple of minutes on the other side before I stir or flip and again breaking them up a bit. They will start to break apart which is fine. Then add the scallions, salt and pepper and serve.

4 large baking potatoes (peeled or unpeeled, your preference)
1/2 cup light mayonnaise
Old Bay Seasoning

Steps:

  • Preheat oven to 400 degrees.
  • Cut potatoes lengthwise into 2-inch strips, about 1/4- to 1/2-inch thick.
  • Place mayonnaise in large plastic food bag.
  • Add potatoes; shake and squeeze to coat well.
  • Arrange potatoes in a single layer on baking sheets, so that they do not touch or overlap. Sprinkle generously with Old Bay seasoning, to your taste.
  • Bake in preheated 400 degree oven for 40 minutes, turning once, until golden brown and tender. Drain on paper towels.
